Full Plate Thursday 4-30-15

Full Plate Thursday Where The Greatest Cooks On The Planet Gather We are having our last party of April today, my goodness where does the time go? This is always a great time of the month because we get to take a look at how you filled your plates last week with the Top Ten page views. Cinco de Mayo is coming up so I am sharing my Chicken Tortilla Skillet with you today, hope you enjoy the skillet.Now I can't wait to see all the wonderful food you are going to put on the table today, lets get this party started!


Cinco de Mayo Breakfast to Dinner Collection

We love Cinco de Mayo Celebrations here at the cottage and every year we try to have a party sometime during the first week of May to mark that event.  Tex Mex food is a staple here at the cottage and we often serve Tex Mex for our dinner parties. I am sharing with you some of our favorites that will be at the party this year, and we sure hope that you enjoy them.


Roasted Asparagus Chowder

The asparagus in the garden has just been beautiful this year because we have had so much rain. I just can't resist gathering that fresh asparagus and bringing it into the kitchen to create a delicious dish for my family. It is a chilly misty day and I decided to make a warm comforting chowder with the fresh asparagus. This recipe is so easy to put together and is wonderful we will be having this Roasted Asparagus Chowder is a great Garden to Table Recipe! 


Whats For Dinner Next Week 4-26-15

We are making a food plan for the last week in April already, where did the time go? My husband has been so upset that Blue Bell Ice Cream has been taken off the market, this will challenge me to make more homemade Ice Cream. We are going to have a really late garden this year because we have had so much rain we can't get in the garden to plant some of our vegetables. We are very grateful for the rain and our lake is full so we will be having plenty of fish on our table. Lets get busy and plan this menu!

Where The Greatest Cooks On The Planet Gather It sure is good to see you here at Full Plate Thursday. We have been having so much fun here at the cottage, working in the garden and really just enjoying the spring weather. We are having our party on the garden patio today, thought you would enjoy looking at some of the roses that are blooming. Chicken Tortilla Skillet

This is a great Tex Mex skillet casserole that can be made in a short time and on the table for a busy and very hungry family. It can be made in the same skillet and baked in the oven, just add a salad and you have a great meal. Another great feature about this recipe is it can be frozen in a baking dish ready to go for another day, and I have baked it in small tins for a party. We love this Chicken Tortilla Skillet and sure hope you will enjoy it!


Old Fashioned Mac and Pea Salad

I love going to the garden in early spring and picking the Sweet Green Peas, they are good just straight off the vine. I was picking peas the other day and thought I need to make the Mac and Pea Salad with these fresh peas. I remember eating this salad at my Mothers and at my Aunts house when I was growing up and it is one of my favorite spring salads. This is a great salad for picnic's, covered dish dinners, and family get together's or maybe just a special evening to remember a great recipe from your childhood. Some recipes change through the years as they are passed down from generation to generation, but this one has remained the same in our family, it is good just the way it is, as my Grandmother would say, no need to change it. Whats For Dinner Next Week 4-19-15

When meal planning for the week, I like to look in the garden to see if we have vegetables that are ready to harvest. The Farmers Market can be a great resource for fresh produce. Another thing I look at is the weather, is it going to be chilly with rain, then I like to prepare something real cozy. We have rain forecast for the weekend so I am planning a great oven meal with soup the first of the week. I love planning special meals for my family and friends!

So many wonderful fresh fruits and vegetables to create delicious dishes for our friends and families. Blueberry Thyme Pie

We spent the morning in the Blueberry Patch gathering fresh Blueberries and when we got home I could not resist making this wonderful Blueberry Thyme Pie. Blueberry Thyme Pie is a very simple rustic pie but could be the star of any table with its different flavor of thyme. Your guest will be coming back for seconds for this one. We like it with or without whipped cream, it is a treat either way. Hope you have an opportunity to try this springtime favorite!


Rosemary Lemon Chicken Burger with Cranberry Sauce and Garlic Aioli

When I made a decision to make this Burger for my Secret Recipe Club reveal this month, I knew it would be good but had no idea that it would be fantastic! This Rosemary Lemon Chicken Burger with Cranberry Sauce and Garlic Aioli from Famished Fish Finicky Shark has the most wonderful flavors going on. Our family loved this burger and we will be having it again and again.


Whats For Dinner Next Week 4-12-15

The Humming Birds are back and the garden is growing, it's everything spring including the food. I am having some folks over on Sunday this week and they have asked for one of my old fashioned meals, it will be fun planning that one, plus I may have a couple of new items on The Menu this week. Southwest Quinoa Stuffed Peppers

We were so excited recently to have a visit from one of our Daughters. She is Vegetarian so I wanted to have some real special meals for her while she was visiting. Southwest Quinoa Stuffed Peppers is one of the delicious recipes that we made for her while she was visiting. We will be making these Stuffed Peppers over and over, plus they freeze really well. These stuffed peppers are full of the southwest flavor with wonderful veggies and Quinoa blended with cheese, a meal stuffed in the pepper. Southwest Quinoa Stuffed Peppers


Pineapple Bar B Que Ribs

I really enjoy a recipe that can be put in the Slow Cooker early in the day and come back to a great dish, ready to serve. These Pineapple Bar B Que Ribs are melt in your mouth, falling of the bone just plain good and so easy. Sometimes when it is raining and we can't get to the grill this is a perfect substitute for the grill. I only wish that my Slow Cooker was bigger so I could have made more. Pineapple Bar B Que Ribs


Whats For Dinner Next Week 4-6-15

We have had a very busy time here at the cottage this past week, and are really enjoying visiting with friends and family this weekend. We actually got out in the garden and did some planting on Good Friday, it is awesome to be back in the garden. For The Menu next week I am going to try to use up some of the left overs from the Easter Ham, I just love creating yummy dishes from leftovers. Where The Greatest Cooks On The Planet Gather April Is Here!! Welcome to Full Plate Thursday it is really great to see you today. It is Passover and Easter Week already, a little early this year. Our Cottage is really busy preparing for all the special events of the week and I am sure that all of you are very busy as well. Lot's of baking and cooking going on in the kitchen this week. I am sharing one of my favorite recipes that I make during this season, my Hot Cross Buns, sure hope you enjoy them.
