The Chicken Is Stuffed With
Onions, Celery, Carrots and Apple
Honey Baked Chicken

4 to 5 pound chicken
1 carrot, chopped
1/2 onion, chopped
1 stalk celery, chopped
1/2 apple, chopped
4 tablespoons olive oil
1 cup apple juice
3/4 cup honey
1 teaspoon poultry season
1 teaspoon salt
1 teaspoon pepper
Wash the chicken inside and out, then dry the entire chicken on the outside.
Place the chopped carrot, onion, celery, and apple inside the cavity of the chicken.
Rub the entire outside of the chicken with the olive oil.
Place the chicken into a heavy dutch oven.
Mix the apple juice and honey together and pour it very slowly over the chicken.
Mix the poultry season, salt and pepper together, then sprinkle over the chicken.
Cover the chicken and bake in a pre-heated 425 degree oven for 1-1/2 hours.
Remove the chicken from the oven and let the chicken set for at least 10 minutes before carving.
