This week is all about Cinco de Mayo and the big all day celebration we have for friends and family. The cottage will be a buzz with all the preparation for the big day. I will be going to my annual spiritual retreat this weekend and am really looking forward to that time of renewal. Meal planning gives me the opportunity to have all my shopping and some meal prep completed before my travel date giving me an opportunity to be more relaxed for the trip.I just love my meal planning, it always gives me more time and money.

We were having a Mexican Food theme for one of our covered dish suppers recently and wanted to take something different. I thought why not have a Mexican Skillet Pie. I have a large collection of Iron Skillets and everyone is always excited to see the surprise that I have in the skillet. It was so much fun developing this recipe, it is so easy and delicious. This recipe is very flavorful and I am so happy to share it with you today.

We love Tex Mex flavors here at the cottage and our Grilled Chicken Fajita Roll Ups recipe is filled with that south of the border flavor. As soon as grilling season is here we head to the outdoor kitchen with a tray full of these roll ups. This recipe is very easy to put together and full of Tex Mex flavors and will serve a nice family dinner or a fun grilling party for friends.

I picked early peas from the garden yesterday so we will be having those on our meal plan this week. I just love the fresh smell of the peas when they are being picked and I always have to try a couple right there in the garden and these are delicious. I took a spring inventory of the pantry this week, just checking the items that we used during the winter months and making a list for the pantry items we will be needing for the spring and summer months. Taking periodic inventories of the pantry and freezer helps with making our meal plans every week.

Hope you all had a wonderful Pass Over and Easter season. We are enjoying such beautiful weather this week and some great left overs. When we have beef short ribs it is a real treat on our table. I have used several different recipes through the years, but the Apple Braised Beef Short Ribs recipe is definitely our favorite. These ribs are cooked slow and easy with a mix of flavorful vegetables and a kick of apple. The spice mix for this recipe is simple yet leaves these ribs something to remember and ask for again and again. We are serving the ribs on a creamy polenta and drizzled the gravy on top. This is a wonderful meal.

When we bake a Country Ham we always have some left over. Through the years we have developed several recipes for the left over ham and Creamy Ham and Pea Soup is one of our favorites. This is a very creamy soup with a very fresh flavor topped with a hint of cheese. It only takes a few minutes to put this soup together and can be on the table in no time. We just love this soup anytime, but is really good on a cold rainy day.

We really enjoy a weekend brunch and often invite friends to share a meal and just relax. This Crock Pot Brunch Frittata is a perfect dish for a weekend gathering. The recipe has a fresh combination of peas, asparagus, onions and ham, all those wonderful flavors in one dish. I just add some fresh basil from the herb garden and this dish is ready to cook and serve. If you are making this for two, just cut the left overs in individual servings, pop in a freezer bag and freeze for a quick breakfast later.

I can remember when my Mother would ask my Dad what kind of pie do you want me to bake, he would most of the time say Coconut Pie. The pie was clearly one of his favorites. When I make this pie for my family I always remember my Dad and how he loved this pie. The love for this recipe has certainly stood the test of time because we still love this pie. I enjoy making this for my husband and often times can't get it to the refrigerator before it is sliced, as was the case for this pie, you will see what I am talking about. Hope your family will enjoy this recipe as much as we do.

The weather will be awesome this weekend so we are going to be grilling out, and that will sure be a part of the meal plan this week. This time of the year I always look at the extended weather to make my meal plan, so we can cook outdoors whenever the weather is good. I am going to be using some of my frozen fruit from last year to make room for the new fruit that will be coming on soon. Meal Planning helps me keep my food products current and that means less waste because of expired products. Lets head to the kitchen and get the plan started!

Happy April, spring is really here! We have had spring storms all around us but we have been so fortunate to come through without damage to our tiny cottage. Our meal planning this week is out of the freezer, making sure to use some products up before I take my spring inventory in a week or so.Who knows I may not have to go to the market at all this week. Just think of the money and time we save when we plan our meals.

We grow potatoes in our garden every year and one of the things we like to do is dig the small potatoes in early spring. The potatoes are very small and tender with a very strong earthy flavor. The recipe that we are making today takes these young potatoes from the garden to the grill with a great mix of herbs along with the smoke from the grill give these potatoes a very special flavor.
Monday, March 27, 2017
We have had a really mild spring that has put us in the mood to grill. Our family loves to gather up around the grill and enjoy a time of fellowship while the grill master is putting the magic touch on the recipe of the day. Our Grilled Rosemary Balsamic Chicken has a great marinate and a fabulous crowd pleasing taste.
Saturday, March 25, 2017

One of the best things to enjoy about Corned Beef is the left overs. I love to make a Corned Beef Sandwich, or some would call it a Reuben Sandwich.I love the nice thick slices of beef laying on a delicious sauce and smothered with sauerkraut and Swiss cheese. We just love this sandwich and always look forward to the Corned Beef left overs.
Monday, March 20, 2017
We live so far inland that we very rarely get fresh seafood, most of it has been frozen. We can sometimes get fresh Tilapia, but it sure doesn't last long in the market. This recipe is quick, easy and has a delicious blend of herbs. This is a perfect weeknight meal or a special company meal, it would be good anytime.
Saturday, March 18, 2017
The first day of spring this week and March Madness is in full swing. We are looking forward to the weekend and watching some of the games with friends. I am very excited about our spring garden, we will be having a special spring dish very soon. I think there is enough asparagus to make my chowder this week to welcome spring. I hope that our meal plan will inspire you to make meal plans for your family which will save you time and money.

My husband loves a Pistachio dessert and this Pistachio Parfait is one of his favorites. I enjoy taking the dessert to pot luck dinners or serving it for friends and family. I recently made the dessert and had to take my photo's in a hurry, folks were standing and waiting for the dessert to be served. This is a great dessert that is so easy to make. If you make it a day in advance of the event it is even better. This Pistachio Parfait never last long here at the cottage.
Monday, March 13, 2017
Corned Beef With Vegetables is a wonderful Irish recipe that our family enjoys from our Irish heritage. I remember my Grandmother and my Mother making a similar recipe but they did not have the luxury of a slow cooker that we have today. I love the flavors of the beef and the vegetables in this recipe and the unusual blend of seasons that go into making this a winning dish.
Saturday, March 11, 2017
I like to call this the week of the Irish when we celebrate our Irish hertiage. We love having special family recipes on our meal plan and remembering some of the wonderful family celebrations that we have had to celebrate our Irish hertiage. Our weather has been so nice, the work on our new screen porch is almost finished and I can hardly wait to enjoy the new porch. I am hoping that we will get to have our meal on St. Patricks day on the new screen porch.

Spring is everywhere, come on in and join in the fun! We are having our Full Plate Thursday out by the herb garden today, it is so beautiful in the spring and the smell of the herbs is delightful. We will be celebrating St. Patricks Day next week so we are beginning to see some wonderful recipes for that celebration. I have always been a seasonal cook and enjoy the transitions of the seasons. We grow our own vegetables here at the cottage, which allows us to have either fresh, home canned or frozen vegetables available the year round. What we don't have available here, we usually find at one of our local farmers market. Some of the quesitons that I get from readers are "what is in season right now, and how can I use it?" As a way to address these questions, I will be presenting a new post every month, that will give you some of our favorite seasonal recipes for that month. Please leave us a commit and let us know if you like this idea and also if you have any other question that we can help you with.
Monday, March 6, 2017
We grow our own cabbage here at the cottage, so we have special recipes that we make at certain times of the year. One of our favorite cabbage recipes for this time of the year is our Stuffed Cabbage Stew. There are many recipes for cabbage soups but this recipe is much thicker and it also has a very special flavor. Our family always looks forward to this special stew and we serve it with my Grandmothers Irish Soda Bread.

Welcome March and I am so happy to see you here at Full Plate Thursday sharing your amazing recipes with us. Spring is in the air here and there are little signs that it will soon be in full bloom. Nothing is better than a fresh salad from the garden or maybe a special Lettuce Tub. We had salad last week from our special Lettuce Tub that sits outside the kitchen door. We repurposed a antique French Bath Tub that serves as our Lettuce Tub. I am very excited to see all the wonderful Spring Recipes that you are sharing today!

Kitchen Herb Garden and Vine Fence are two of the project's that we have on our spring garden bucket list. We like to get most of our special garden project's finished in the spring, so we can enjoy them as the garden season moves along. This year we had two projects on our bucket list for completion. The first project is a Kitchen Herb Garden just outside my kitchen door and the other a smaller project for climbing vines that is located in one of the larger garden area's. This post gives complete instructions for building both of these projects.

One of our families favorite bowl of beans is Cajun Red Beans and Rice. This is a full meal in a bowl just packed with great flavor. I have been making this recipe for many years and it was printed first in my cookbook, Miz Helen's Kitchen Table, the cookbook is out of print now so I will share the recipe with you here. One thing I really love about this recipe is the slow cooker, and the delicious flavors at the end of the day.

I actually had a request for the meal plan this week, my husband said can you please make that Italian Roast again, well of course I will. It is always so much fun to get a food request or to make someones favorite. We will be going to the city for a market run, so my meal plan will sure help me to make that list for the market. I won't have to buy meat this week I have it all in the freezer. Sure glad to see you this morning, so help yourself to a cup of coffee and lets get this meal plan finished.

One of my Christmas Gifts this year was some new donut tins.I gave mine to one of my Granddaughters sometime ago, but have really missed enjoying baked donuts. My husband must have missed them because the new tins were from him.We love these little mini donuts, they are just the perfect little treat, just a couple of bites, well of course you can have more than one donut, (I sure did)!

This Italian flavored pot roast has the best flavor of any pot roast that we have had in a very long time. I have a little secret ingredient that you would never guess would be in an Italian blend. A slow cooker pot roast is always so tender it will just fall apart when serving not to mention the smell begins to make the whole kitchen so inviting.

This is a very different Fudge with a spicy kick. I love to serve this fudge it is so creamy and really has fabulous flavor. When my husband ask for Fudge this is his favorite recipe. This recipe is so easy to put together and it is ready to serve in a short time. This fudge is great for dessert or a special treat!

This is a very special recipe that my Mother would make for her bridge club, all of her friends just loved this cake. In her later years she lived with me and my husband so I would make it for her and some of her friends when they would get together. This is a very dense cake and very rich, I have updated the recipe just a bit and use a different frosting that cuts down on the time.Today I am presenting the cake on my husbands Mothers "everyday" cake plate. She called it her everyday cake plate and then had a crystal plate for more special occasions. We love and enjoy the special family recipes and heirlooms that have been passed down to us, very special memories.

It is finally here, for all the sports lovers in our family Super Bowl Weekend. We will be having a nice buffet on Sunday for the big game day. On Tuesday we will be having a great casserole that I hope you enjoy as much as we do. I have had my weekend buffet planned for sometime and have actually already done some of the cooking and have it in the freezer ready to go. That is one of the awesome reasons that I enjoy meal planning, so many times we can get it done ahead of time.
