Whats For Dinner Next Week 10-22-17

I have been so busy enjoying this weather and our little house guest that I almost forgot to take my pantry inventory to prepare my meal plan for the week. I always take my pantry and refrigerator inventory before making my meal plan, then I am using what I have on hand and won't be buying unnecessary products. We have been  having so much fun at the cottage this week, we are dog sitting for our Granddogs Claire and Chole, little weenie  dogs. Max loves having company and we love to watch the interaction of the 3 musketeers. Lets get started on this meal plan before these little darlings lead me away again.

Cheesy Olive Beer Bread

There is nothing like walking in the door and smelling homemade bread baking in the oven. I really enjoy baking bread and my family loves it. We have no problem with left overs when it comes to a great loaf of bread. Our Cheesy Olive Beer Bread is a quick bread that doesn't take all day but rather just a few minutes to mix and put into the oven. This recipe is a blend of a olive and cheese board all rolled into a wonderful bread. Just one slice of this bread won't be enough!

I am sitting out on the screen porch today, just reflecting on the bounty of the harvest that we have had this year and looking forward to making my meal plan for next week. I have a couple of request from family for some of their favorites so of course we will work that into the meal plan. It has been very busy here at the cottage, getting fall cleaning and fall decorating completed. I have had my slow cooker out lately, it just gives me more time to spend outside of the kitchen when the days are so beautiful. Caramel Apple Poke Cake

I was going through my recipes the other day and saw this cake recipe that I haven't made in a long time. It is filled with warm spices and so moist it is almost like a pudding cake. This is a very easy recipe to put together and is great to have on hand when your friends are stopping over for cake and coffee after the game. I use fresh apples in this recipe giving it a very rich consistency with the spice cake, caramel and little bites of apple, yes it is delicious!

Slow Cooker Steak Soup

We used to go to a restaurant called the Iron Tender and my favorite thing on the menu was their Steak Soup. After we moved away from that city we really missed their awesome Steak Soup, so I developed my own recipe for Steak Soup which is very close to the one we loved so much. This soup just simmer's all day in the slow cooker giving all the flavors a chance to come together to make this amazing soup. Hope you enjoy this recipe as much as we do!

Whats For Dinner Next Week 10-8-17

Our meal plan for this week looks so good, I just love the fall recipes. I hope that you are planning your meals and enjoying the rewards of more time and money from planning ahead.  It is a beautiful fall day here in the country. There are many signs of nature that tell us the season is changing. We have had a very active colony of humming birds this season and now they have all left but two. I posted a video of them at the feeder on my Face Book, some commented they had never seen that many at one feeder.We watch every morning to see if those last two will be here just one more day. We do love our hummers.

Mini Tex Mex Quiche

Sometimes it gets really busy here at the cottage and we really don't have time to have a sit down breakfast. These little Mini Tex Mex Quiche's are just perfect for a grab and go on a busy day. This recipe is easy to put together and it makes enough to put them in the freezer. We love the Tex Mex flavor of these mini's. October Food and Recipe Basket

What's In Season and How Can I Use It?

That is the question that we address in our Food and Recipe Basket. Fall garden production is hardy here because we still have temperatures that allow production to continue. Although we still have some of our summer production available, some of the all time favorite fall products are ready to harvest in the month of October. Some of these crops have been growing for several months. We planted some our winter crops earlier this month. I am excited for the fall fruits and vegetables with their wonderful warm and cozy flavors.

Whats For Dinner Next Week 10-1-17

October is a wonderful fall month with lots of fun festivals and delicious food. I will be moving forward with my meal plans taking my meals more toward warm and cozy foods that say fall. I love driving by the farmers markets this time of the year with all the fall colors of apples, winter squashes and pumpkins. I am a seasonal cook and I think that comes from the fact that all of my family came from rural america where they ate what they raised on their farms. Now is a really great time to start planning your meals as it will sure give you more time and money.

Apple Fluff Salad

I love this Apple Fluff Salad, it has some of my favorite flavors all mixed together. The apple gives a little crunch that makes a great contrast with the soft salad. I have often thought that a fluff salad is really a dessert, but we will eat it as dessert or a nice side for a meal. Many Thanks to my neighbor, the apples that I am using today were given to me by my neighbor. The apples came from their awesome apple trees.

Sausage, Veggie, Rice Pot

When I was making this recipe the other day, I was remembering that back in the 50's and 60's we would have called this a "One Dish Dinner", and today we call it a One Pot Meal. We just added a great Green Tossed Salad with some Garlic Bread and it was awesome.  This recipe has wonderful southern flavors and goes together really fast so you can get it on the table for a hungry family.  I think it was even better the next day, it is really one of those recipes that you will want to make over and over.

Fall is officially here and we are beginning to really enjoy some of the fall days. It is hard to believe that with all the rain that we have had we are currently under a burn ban so no fires in the fire pit just now. That means no S'mores after the game on Friday night. I really enjoy planning a fall menu and looking for a way to enjoy those warm cozy spices of the season.

Parmesan Crusted Potatoes With Sour Cream Sauce

One of our favorite sides for a grilled steak is a great baked potato piled high with sour cream, cheese and chopped green onions. I decided to create a whole new potato side and this one is delicious. The potatoes are covered in a cheesy crust that has just the right seasons. They are crusty on the outside and soft and full of flavor on the inside. Then we are topping it with a kicked up Sour Cream Sauce. We love this new potato side and will be serving it many times in the future.

Maple Pork Loin Roast With Apples and Vegetables

I like to have a very special one pot meal that we can enjoy as a family and when we have guest. This recipe for Maple Pork Loin Roast has a fabulous flavor and the apples and vegetables just complete the maple flavor. I made a gravy from the cooking liquid that is almost like a creamy dessert, just delicious. We loved the recipe and I sure hope that you and your family will enjoy it!

Whats For Dinner Next Week 9-17-17

We are having a beautiful week here at the cottage. I have been collecting dried Zinnia's for next years flowers, we love our Zinnia's. I am working on my screen porch today, watching the birds, little squirrels and making my meal plan for the next week. I recently did the pantry and freezer inventory for fall, so I know what I have on hand. We also just recently went on our monthly shopping trip for basic staple replacement. All this preparation makes it much easier to make my meal plans and the meal plans save me time and money. We are getting into the busy fall season when our meal plans really pay off in saving time.

Apple Doodle Cupcakes With Caramel Frosting

We love Snickerdoodles here at the cottage, it is one of the more popular cookies with our family. I have been working on this cupcake recipe and have developed it around our love for the Snickerdoodle cookies. The cupcakes have the wonderful flavor of a Snickerdoodle with little bites of apple, then topped with a rich caramel frosting. These cupcakes will be a favorite here!

I had a very interesting experience getting these special cupcakes to this point. You will have to read the little story about the "Cupcake Journey".

Whats For Dinner Next Week 9-10-17

As I am writing this post, we are being told that one of the largest hurricane's in our history is about to hit Florida. There are horrible fires in California, Oregon, Washington, Montana and Earthquakes in Mexico.

So many folks in need of our thoughts and prayers.

We are having a great week here at the cottage, it has been cooler and we love being outdoors and enjoying the beginning of the nice fall temperatures to come. I have spent some time this week taking inventory of my pantry, freezer and cold bins in order to make are stocking list for the fall months. Old Fashioned Chicken and Rice Casserole

I can remember having this casserole at family dinners when I was in High School (long many years ago). As a young homemaker I recall writing the recipe down from one of my Aunt's recipe cards. The instructions were not very specific and left a lot of room to be creative. Though the years all of our family cooks have changed the recipe somewhat, but this is the favorite one here at the cottage. Sometimes when we are having a family dinner, someone will say, oh make the Chicken and Rice, everyone knows what it is, just pure comfort.

September Food and Recipe Basket

September in our part of Texas is very much like the last part of summer. Our gardens are coming to an end and the farmers markets are running out of certain products. Our Herb Gardens are fully matured and we begin to gather the herbs that are to be dried. Our kitchen is in full canning and preserving mode, making sure that our pantry is full of the wonderful harvest of the season. We look to our harvest and canning to get us through the winter months with canned vegetables that are a staple here at the cottage.

What a week we had here in Texas. Many thanks to all of you for your continued thoughts and prayers as we begin recovery in our great state. In times of great need we often times turn to our faith and food for comfort. As I write this post so many folks on our Gulf Coast have lost everything they have in Hurricane Harvey and others have lost it all in the flood waters in and around the Houston area. Our thoughts and prayers go out to our fellow Texans struggling with this horrible tragedy today and for a very long journey to recovery in the future.

Tomato Basil Jam

We have had an abundant tomato harvest this year. We had really good rains and the temperatures never got that hot for long periods this year and thus we had a flavorful tomato with good production. When canning season begins, I start look for different recipes to use in preserving the flavors of summer. One of the new recipes that I used this year is Tomato Basil Jam and it is delicious. I have tested this one on family and friends and it has a big stamp of approval.

Whats For Dinner Next Week 8-27-17

As I begin to write this post we are preparing for Hurricane Harvey which is coming to our gulf coast in less than 24 hours. We are far enough inland that we will only be getting lots of rain and maybe some high winds or tornado's. Right now the weather service says that it will be a category 4 hurricane, with a possible 35 inches of rain. Keeping the weather in mind, I will be making some  meal plans this week that will be very comforting during the storm. I always take the weather into consideration when planning meals, I sure don't want to plan a cookout if it will be pouring down rain. If you are along the coast this weekend, may God be with you, and stay safe.

Slow Cooker Meatloaf

We love meatloaf but don't always have the time to prepare the recipe right at dinner time. This recipe allows us to have that awesome meatloaf on a very busy day and when you walk in the door you can smell the wonderful flavors of the meatloaf that await you. Just take it out of the slow cooker, place it on the platter with a little garnish and it is ready to serve.This is a great recipe that has the old fashioned flavor of being baked in the oven.

Whats For Dinner Next Week 8-20-17

School has started here in our area, and there is always a certain energy that comes with the starting of school. The little communities are filled with back to school signs and there is talk of the first football game. When we make our meal plans we will be looking at some of the school activities that we attend along with community events that happen this time of the year. Meal planning allows us to have more time and money to enjoy other things in life. We can do our marketing and know exactly what we need for that week and not spend money unnecessarily on food that we didn't plan on, plus we don't have to go to the market everyday wondering up and down the isle trying to make a decision about what to make for dinner. Now is a great time to get organized for the upcoming year by planning your meals.

Asian Lettuce Wraps

We are 120 mile round trip to the nearest restaurant where we can get great lettuce wraps and I love lettuce wraps. The next best thing for me to take care of my desire for lettuce wraps is to make my own. There are so many inspirations on the web, and they are all very similar. My recipe is really not that different, I am just happy that we finally have a great recipe that our family loves. So now when we get that craving for those awesome lettuce wraps, I head to the kitchen and get busy.

Chocolate Caramel Poke Cake

Sometimes I just have to have a gooey chocolate something and today this Chocolate Caramel Poke Cake is just the thing. This is a real easy cake recipe and is packed full of flavor with a frosting that puts the delicious topping on this cake. This is one of those cakes that even when the last slice is gone, (and it goes fast here at the cottage) you still wish there was just one on slice. This has been very popular at the covered dish dinners that I have brought it to and our family loves this one.

We have actually had some really nice rains this past week and for August that is very unusual here in our part of Texas. Some of our schools are starting this coming week so fall is right around the corner. In making my meal plan this week, we will be looking in the freezer, and the pantry to make sure that we are using the products on hand before we start making plans for the fall. Along about the middle of August we begin to make that slow transition to fall. If you are thinking about meal planning as a part of organizing your school year, this is a great time to start.

Grilled Corn with Dill Butter

Grilled corn is good the year round and can be grilled indoors or out, but it is especially good in the summer. There is something very special about bringing the corn from the field or garden to the grill, it is so sweet and delicious. We enjoy different seasons on our corn but one of our favorites is dill butter. Today we are grilling some corn that will be finished out with delicious dill butter and the dill comes right out of our herb garden, it doesn't get any fresher than this.

Mexican Tomato Pie

There is nothing like a nice basket of ripe tomatoes to inspire a new recipe. We sometimes use our green tomatoes to make a green tomato pie, but these ripe tomatoes have inspired me to make this Mexican Tomato Pie. I was torn between Italian or Mexican, but I remembered that I just made Italian Scalloped Tomatoes , so today we are having a Mexican dish. We love the way this recipe turned out, we will be making it again and again!

We have had a great harvest in our garden this season and we are busy canning and preserving the wonderful vegetables. I always say the best part of the canning and preserving process is opening that delicious jar of vegetables when the snow is on the ground. What's In Season and How Do I Use It?

August in Texas is hot and sometimes dry. Often times our gardens really suffer from the heat, but there are some vegetables that continue to produce during this time. This year we have been blessed with more rain so our gardens are doing very well and the farmers markets are packed out with wonderful selections of fruits and vegetables. We are still getting some of the all time summer producers, like tomatoes, cucumbers, and melons. We do have some great vegetables that are in season for the month of August.

Italian Scalloped Tomatoes

I remember going to my aunts house in the summer and she would make her breaded tomatoes. She would go out to her garden gather beautiful tomatoes, then back to the kitchen. She would do the prep work, then squeeze those tomatoes over the crusty day old bread, pop some butter on top and bake it in the oven for a while, it was delicious. My recipe for Italian Scalloped Tomatoes has some wonderful Italian seasons but with that same old fashioned buttery flavor. This is a great recipe to take as a side dish to a covered dish event, folks really enjoy it and I hope you do.

Whats For Dinner Next Week 7-30-17

Only two days left in July and then it is on to August. Here in Texas August means lots of hot days, sitting on the porch sipping ice cold sweet tea and fanning. When making the meal plan this week I am trying to keep the kitchen as cool as possible and just enjoy the lazy days of summer.
