Whats For Dinner Next Week 8-20-17

School has started here in our area, and there is always a certain energy that comes with the starting of school. The little communities are filled with back to school signs and there is talk of the first football game. When we make our meal plans we will be looking at some of the school activities that we attend along with community events that happen this time of the year. Meal planning allows us to have more time and money to enjoy other things in life. We can do our marketing and know exactly what we need for that week and not spend money unnecessarily on food that we didn't plan on, plus we don't have to go to the market everyday wondering up and down the isle trying to make a decision about what to make for dinner. Now is a great time to get organized for the upcoming year by planning your meals.

Asian Lettuce Wraps

We are 120 mile round trip to the nearest restaurant where we can get great lettuce wraps and I love lettuce wraps. The next best thing for me to take care of my desire for lettuce wraps is to make my own. There are so many inspirations on the web, and they are all very similar. My recipe is really not that different, I am just happy that we finally have a great recipe that our family loves. So now when we get that craving for those awesome lettuce wraps, I head to the kitchen and get busy.

Chocolate Caramel Poke Cake

Sometimes I just have to have a gooey chocolate something and today this Chocolate Caramel Poke Cake is just the thing. This is a real easy cake recipe and is packed full of flavor with a frosting that puts the delicious topping on this cake. This is one of those cakes that even when the last slice is gone, (and it goes fast here at the cottage) you still wish there was just one on slice. This has been very popular at the covered dish dinners that I have brought it to and our family loves this one.

Whats For Dinner Next Week 8-13-17

We have actually had some really nice rains this past week and for August that is very unusual here in our part of Texas. Some of our schools are starting this coming week so fall is right around the corner. In making my meal plan this week, we will be looking in the freezer, and the pantry to make sure that we are using the products on hand before we start making plans for the fall. Along about the middle of August we begin to make that slow transition to fall. If you are thinking about meal planning as a part of organizing your school year, this is a great time to start.

It is August and it's actually raining here, what a nice surprise. Some of the old timers say it will be an early fall, I love all the signs of nature that let us know change is coming. Grilled Corn with Dill Butter

Grilled corn is good the year round and can be grilled indoors or out, but it is especially good in the summer. There is something very special about bringing the corn from the field or garden to the grill, it is so sweet and delicious. We enjoy different seasons on our corn but one of our favorites is dill butter. Today we are grilling some corn that will be finished out with delicious dill butter and the dill comes right out of our herb garden, it doesn't get any fresher than this.

Mexican Tomato Pie

There is nothing like a nice basket of ripe tomatoes to inspire a new recipe. We sometimes use our green tomatoes to make a green tomato pie, but these ripe tomatoes have inspired me to make this Mexican Tomato Pie. I was torn between Italian or Mexican, but I remembered that I just made Italian Scalloped Tomatoes , so today we are having a Mexican dish. We love the way this recipe turned out, we will be making it again and again!

We have had a great harvest in our garden this season and we are busy canning and preserving the wonderful vegetables. I always say the best part of the canning and preserving process is opening that delicious jar of vegetables when the snow is on the ground. Making a meal plan will help me save time when my kitchen is so busy and saves time at the market knowing just exactly what I need to complete my meals for the week.  I encourage you to make a meal plan, to save you time and your family money.

What's In Season and How Do I Use It?

August in Texas is hot and sometimes dry. Often times our gardens really suffer from the heat, but there are some vegetables that continue to produce during this time. This year we have been blessed with more rain so our gardens are doing very well and the farmers markets are packed out with wonderful selections of fruits and vegetables. We are still getting some of the all time summer producers, like tomatoes, cucumbers, and melons. We do have some great vegetables that are in season for the month of August.

Italian Scalloped Tomatoes

I remember going to my aunts house in the summer and she would make her breaded tomatoes. She would go out to her garden gather beautiful tomatoes, then back to the kitchen. She would do the prep work, then squeeze those tomatoes over the crusty day old bread, pop some butter on top and bake it in the oven for a while, it was delicious. My recipe for Italian Scalloped Tomatoes has some wonderful Italian seasons but with that same old fashioned buttery flavor. This is a great recipe to take as a side dish to a covered dish event, folks really enjoy it and I hope you do.

Retro Grilled Hamburger Steak

When my husband and I were dating,(which was a very long time ago) we would often times have dinner at a small cafe in our hometown. Our favorite thing to order was the Hamburger Steak with potato wedges. From time to time we have a special date night and we will have a Retro Grilled Hamburger Steak and some potato wedges. It is so much fun to make this menu, then we spend the evening watching an old movie or just going back down memory lane. We have really worked on our recipe to get it as close to the original as possible, including grilling it over an open flame.

Garden Fresh Nicoise Salad

We have had a fabulous production from our garden vegetables this year. It is really nice to pick the garden early in the day then come to the kitchen to decide what to create from the wonderful garden bounty. This Garden Fresh Nicoise Salad is made with vegetables right out of the garden and the flavor of the vegetables and dressing is a delicious combination! Our family loves this salad and it is one that we make the year round, of course we enjoy it more when our vegetables come right out of the garden.

We enjoyed having our daughter from Oregon visit us last week, it is so nice to have a chance to visit with family and friends that live so far away.

We have passed another mile stone here at the cottage, I made my very first blog post 7 years ago on July 18, 2010. On August 18, 2010, just one month later  I posted Whats For Dinner Next Week, and have published our weekly meal plan every week since. When I first started publishing our family meal plan every week, I included a weekly feature recipe and the one on this post is still one of our favorites. I want to say Thank You To each one of you who have been on this journey with me and helped to make Miz Helen's Country Cottage so special to me. I look forward to interacting with you each week and made so many wonderful blogging friends here through these years. Grilled Fruit Salad

We have some wonderful orchards near our cottage and we love the fresh fruits that they offer. There are so many ways that we can enjoy fruit and one of our favorite recipes is grilled. Grilling fruit brings out the natural flavors and sweetness of the fruit. For this Grilled Fruit Salad recipe I am using the grilled fruit in this wonderful salad. I am using the lettuce from our our home grown lettuce, that we grow in our lettuce tub. The dressing for this salad is delicious and can be used with any salad.

Strawberry Breakfast Bake

We love to have a nice brunch or a really late breakfast here at the cottage, especially on weekends. If the weather is nice we like to have our brunch or breakfast out on the screen porch. We have enjoyed some beautiful strawberries from the strawberry patch this year and I thought these would sure make a great brunch dish and so they have. This was a very short week with the 4th falling on Tuesday, gave us a very long holiday weekend. Now here we are getting ready for next week already, I think the summer months always fly by. What's In Season and How Do I Use It?

July is here with its parades, fireworks and great fresh foods. Many of the foods that we have had in our basket for the past two months are still producing and can be found at many of the farmers markets. Some of the foods this month are produced here in the south, however my granddaughter that lives in New York can often times find some of them. Patty Pan Squash Casserole

One of the nice advantages about living in a small rural community is the sharing of fresh vegetables in harvest time. My friend stopped by the other day with a sack full of Patty Pan Squash fresh off the vine. We love Patty Pan Squash, they are really cute little squash that look very much like a flying saucer or a little scalloped cup holder. I knew that I had to make a dish with these awesome little squash, so I gathered up some vegetables from my own garden and this is what I came up with. This recipe is just packed with flavor and is a vegetable dish that we just loved. We will be making this one often, well until the squash run out for this year.

Grandma's Cherry Cobbler

I remember helping my Grandmother pick cherries and the wonderful taste of those fresh cherries. On the way back from the orchard we would stop by the water pump and we would wash the cherries. She would later very carefully take the seeds from the cherries. Next she would make this amazing filling for the cobbler and then some fluffy biscuits to go on top. I remember watching her stoke the fire in her wood cook stove making sure the temperature was just right for the cobbler, that she would place into the baking compartment of the wood stove. I can still smell that wonderful cobbler today and the wonderful memories that it brings.

This is about the time of the year when our garden harvest gets into full swing and we start our canning and preserving. We have had a fantastic production from our garden this year because we have had just the right amount of rain, for which we are very grateful. Retro Strawberry Ice Box Dessert

This was a very popular dessert in the late 50's and early 60's in my circle of friends. It was a favorite at the Bridge Club luncheons, Junior League meetings, back yard bar-b-ques and family dinners. Still to this day one of my friends or a family member will ask about the Strawberry Ice Box Dessert and I am just so happy to make it, because once it is on my dessert plate I can't wait to enjoy this delicious dessert.

The summer temperatures are beginning to edge up and by the first day of summer which is this week we will be looking at temp's of 100 plus. When the temps go up we look for simple meals that don't require a lot of extra prep time. We will be celebrating Fathers Day on Sunday and I am planning a very simple meal for the day that all the guys will really enjoy.

Fresh Garden Salsa

Every year when we are making our garden plan we make sure that we are planting all the ingredients for our homemade salsa. Salsa is a staple here at the cottage, it is on the table just about every meal. There is always a jar of salsa in the refrigerator and you will find several jars in the canning pantry. The recipe that I am sharing with you today is our Fresh Garden Salsa that we have perfected through the years and is one of our favorites. All of these products are available from a farmers market or a super market the year round, but they are the best from your very own garden.

Slow Cooker Raspberry Chipotle Beef Sliders

This slider recipe is a favorite around the cottage. It is a great recipe to have the year round when folks are going to be in and out, heading out to the fishing pier, the pool or gathering up for the big game night. It is so easy, but really delivers a big flavor that will have your family and friends coming back for seconds. I top the sliders with one of our favorite Coleslaw recipes. The slider recipe freezes well for up to 3 months, just make it up and have it on hand.

I am so glad to see the sun, we have had rain now for the past two weeks and the allergies in our area have been going crazy. I for one will be so happy to see this season of allergies past on by. Garden Tour June 2017

I am so excited to invite you to join me on a little tour of the June garden. I would love to share with you the progress of the two projects that we started in the spring. One of the projects was a runner for the garden vegetables and the other a raised bed for my Kitchen Herb Garden. It is always fun to follow the progress of the projects that are started. We have some great vegetables that are already for harvest and some that will be very shortly. We love the garden and the process of the seasons and especially bringing those wonderful vegetables into the kitchen.

June Food and Recipe Basket

What's In Season and How Do I Use It?

Our early summer orchards and gardens are in production and the wonderful food basket's are full of delicious products. This month we have some great foods in season that go from garden to table in the very best of fresh food. We get to spend a lot of time in the garden but if we are not growing the fresh fruit or vegetable that is in season, then we are off to the nearest farmers market. Some farmers markets are open year round now, but most are open by the end of March. I love to carry all these fresh foods into my kitchen to create wonderful recipes for my family and friends.

Old Fashioned Chicken Spread

Chicken Spread in our family is a real classic. I remember when my Mother attaching the hand grinder to the end of the cabinet and grinding up the left over chicken to make a delicious chicken spread. I still have that old grinder of hers but I sure am glad that I don't have to use it today, I have a much easier way of making it today along with a few of the ingredients that are different. Our family still enjoys this recipe as much today as they all did in the day of the food grinder.

Nana's Tuna Salad

When I was a young girl I remember going to my Mothers pantry and there would always be a can of Tuna and a can of Salmon. She said that was her emergency food in a can, and so it was. More than once I would see her go for those cans when unexpected company would stop by or when she needed to make a nice meal in a hurry. One of the recipes that I loved and still do to this day is the Tuna Salad. Although I have changed the recipe through the years to meet our families taste it is still the basic recipe that was passed on to me. So when you go to my pantry today there will always be a can of Tuna and Salmon and this is one of the recipes that I use. Sometimes we enjoy the Tuna Salad on a Lettuce leaf and then there is nothing better than a delicious Tuna Salad Sandwich.

We are in the middle of the Memorial Day Weekend here at the cottage with lots of activities around our lake area. It is always a big weekend for the beginning of the boating and swimming season with lots of friends and family coming out to begin the summer. Cauliflower is such a versatile vegetable, that we really have enjoyed in so many recipes. This is a very simple recipe to prepare and takes very little time, it is a great recipe to fix when you need a last minute appetizer. If you are expecting a crowd you might want to double the recipe because it will go really fast. If you should have left overs just serve it in a wonderful salad the next day, it is a real winner.

Summertime Sweets Recipe Collection

In the summertime the living is easy and we do love our sweets. There is really nothing better than sitting on the back porch enjoying a nice glass of iced tea and a lovely summertime sweet for an afternoon treat or an evening dessert. Whats For Dinner Next Week 5-21-17

One of my boys will be coming home this week for a visit so you can guess from the menu what he has requested and of course I will be delighted to make that special meal for him. I love it when family and friends request their favorite meal or a dish that they saw on the blog. I am happy to be a meal planner so I can spend more quality time visiting with family and friends and not running to the store at the last minute to get the meal together. Don't you just love making special meals for family and friends?
