Crab and Pasta Casserole

This is a delicious crab and pasta casserole with fresh vegetables and a cheesy sauce. If you need a great fish casserole to take to a covered dish dinner, then this one will sure be a hit. I have taken this to many covered dish suppers during lent and other times of the year. Our family loves this casserole and it freezes really well. 


Whats For Dinner Next Week, 2-27-22

Hello everyone, it has definitely been winter here in our area, I am so glad that I had some meals plans for cold weather. I was talking with a young homemaker who had not checked the weather before doing her food marketing, it is hard to grill out hamburgers with a half inch of ice sitting on the grill. Just made me grateful that we do this every week and I sincerely hope that it inspires you to become a planner or maybe you can use some of the recipes that I give you each week. We will be celebrating Madri Gras this week and looks like we will be coming into our rainy season next week which will be great for the garden and it makes me think of slow cooker weather, how about you?

Fruit and Kale Salad With Lemon Vinaigrette

  I love walking out to my winter or summer garden and gathering some fresh kale for a nice salad. In this recipe I added some apples, pears and red onions, then topped it with a delicious lemon vinaigrette and last we sprinkled it with toasted almonds. I really enjoy a flavorful salad with all these very fresh ingredients. This is a great garden to table recipe!


Cajun Collards and Sausage Gumbo

Cajun Collards and Sausage Gumbo is a perfect recipe for our winter garden collards. We have a very good harvest of collards, they really love this cold weather. This recipe is a combination of fresh garden vegetable's, some sausage and Cajun seasonings to give it that kick. Then we add a good roux and broth giving us a great base for these awesome fresh from the garden collard greens. We are serving this very flavorful combination over rice, this is so delicious it will have you coming back for seconds.


Whats For Dinner Next Week, 2-20-22

We had great food for the super bowl, I can't say to much about the teams, our team was at home, again! Valentine Day was a fun celebration here at the cottage, I just love making special dinner for my sweetheart. It has been a busy week here at the cottage, we have been getting some of the garden ready to plant potatoes. We have a couple of storms coming in, so I am headed to my recipe book to find some great recipes for cold rainy days. We will be looking forward to some great Cajun food as Mardi Gras is just around the corner. I harvested quiet a few collard greens from the garden today and made the best Cajun Gumbo, watch for the recipe next week. I think we are already beginning to celebrate here at the cottage.

Welcome to Full Plate Thursday! Hope you had a great Valentine Day and that your team won in the Super Bowl. Our team was at home, again, for this bowl game. We had winner's right here at last weeks party and they are featured at our party today, hope you enjoy all of these great features. Bow Tie Broccoli - Fruit and Walnut Salad

  Our Bow Tie Broccoli- Fruit and Walnut Salad recipe is a delicious all around salad that is good for any occasion any time of the year. I have taken this salad to many covered dish luncheons and dinners through the years, it is a great go to pasta salad. The recipe is very simple with a very flavorful dressing, that makes this a winning salad every time.


Retro Mexican Meatloaf

Our Retro Mexican Meatloaf is a perfect recipe to serve here at the cottage for all of our Mexican food lovers. I have been making this meatloaf recipe since my kids were in high school, I have changed it up a couple of times depending on the ingredients that are on hand at the time. It is great recipe to serve for a Mexican dinner with some salsa and tortilla's. It is one of our budget friendly, oldies but goodies!


Whats For Dinner Next Week, 2-13-22

This week-end is a busy time here at the cottage, with the supper bowl on Sunday and Monday is Valentine's Day. This doesn't happen very often when we get to plan two great food days back to back. Some folks will be celebrating a romantic dinner for Valentine's on Saturday, but we will be having our special dinner on Monday evening. I have been planning that special dinner for some time. I am having my monthly study group for a luncheon on Saturday. It is at times like this when I am so grateful that I am a meal planner, I would never be able to get through all these events without a plan. Are you planning a big weekend and what are some of your plans that would inspire us today?

  We have some really big events coming up. On Sunday, for all you Super Bowl lovers and on Monday, a great day to make a special dinner for your sweetheart! I just love special foods for all the special days in our life. We have Meatless Monday, Taco Tuesday, Family Supper Sunday, not to mention all the special holiday and event days. Red Velvet Cake With Raspberry Filling & Butter Cream Frosting

My Red Velvet Cake With Raspberry Filling & Butter Cream Frosting, is a very special cake for a very special occasion. It can be for a romantic dinner for two or more, maybe it could be for a special anniversary, or maybe it is just because I love you and want to make you a very special cake. This cake is so moist with a Raspberry filling and some delicious Raspberry Butter Cream Frosting, plus I have garnished it with fresh Raspberries. My husband just loved this cake when I served it to him for a very romantic dinner for two.


Winter Garden Soup

Right before our recent ice storm, I gathered some greens from our winter garden. I decided that the perfect thing to make with my small harvest would be some wonderful Winter Garden Soup, which is one of my favorite soups. I had gathered some kale, and cabbage from the garden, then I added some onions, potatoes and some of the canned stewed tomatoes that I had canned last summer. Of course I added some seasons that we love in our soup. It was a delicious soup and we were able to really enjoy the harvest of our winter garden. 


Whats For Dinner Next Week, 2-6-22

I am trying to finish my meal plan early this week so I can schedule the post before our ice storm comes. We are expecting about 1/2 inch of ice followed by snow, and have been advised we will most likely loose our electric service for a little while. Hopefully it won't be anything like what it was like last year when we went a week without power. We have our survival foods all ready to go,  Stock Your Pantry, Stay Calm, Be Ready: Emergencies  . In making the meal plan for the week, I know that we will have to keep it flexible, sometimes that is just the way it happens. We were able to get our 400 onions planted before all this ice set in. The spring garden will be here before long!

Welcome February and Full Plate Thursday! I love February, the love month with romantic food and special dinners. I am already making a plan for that special dinner for my sweetheart. We have been busy here at the cottage, we just got 400 onions planted just before the ice storm that is coming today. Some hot cocoa sounds like a great idea today, so come on in the cottage and lets have enjoy sharing each others awesome food and fun! Red Velvet Pancakes with Sweet Cheese Glaze

I love to make my Red Velvet Pancakes, pour a little Sweet Cheese Glaze over them and add a little fruit to garnish. I usually make these delectable pancakes for very special occasions, because they are really that special. The pancakes are light and fluffy and the glaze is a great addition to any fruit. These pancakes can be made ahead of time and frozen up to 2 months, making them even more appealing. We love these pancakes for brunch, but I have served them for dessert and they were a big hit.
