The white flesh peach cobbler is a very special cobbler because of the white flesh peach. This peach compared to  the more popular yellow flesh peach is sweeter with less acidity. I am using a very old family recipe that gives this white flesh cobbler a very delicate flavor.

The white flesh peach can easily be mistaken for a nectarine with its deep red, slick skin.

Inside the peach has a white to rose tone. It is much sweeter and less acidic than the yellow peach. It will tend to be much more delicate to handle.

After peeling the skin from the peaches, we will slice them and place them with all of their juice, 
 in a medium size stew pan.

Add the spices to the sliced peaches.

Cook the peaches on medium low heat just until tender. Add the thicken, stir, then remove from the heat.

Now we prepare the batter for the cobbler. Mix the flour, baking powder and salt together.

Mix the milk into the flour mixture. 
Mix until completely smooth.

Pour the melted butter into a 9X13 baking dish.

Drizzle the flour and milk mixture over the melted butter.

Spoon the cooked fruit over the batter and butter.
 Do Not Mix the batter with the fruit.

Bake in a 350 degree oven to 35 to 40 minutes, just until turning golden brown.

White Flesh Peach Cobbler

White Flesh Peach Cobbler

 This recipe is just as good today as it was when my grandmother gathered the peaches from her orchard and made the same cobbler.

Ingredients

  • 7 medium size white flesh peaches, skinned, seeded, sliced, about 5 cups of sliced peaches with about 2 cups of juice.
  • 1 1/2 cups sugar divided
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup butter melted
  • Optional: Garnish with Ice Cream

Instructions

  1. Place the sliced peaches into a stew pan. Add 1/2 cup sugar, then sprinkle the cinnamon and nutmeg on top of the peaches and stir. Cook the peaches on med low heat until the peaches are tender, about 5 to 8 minutes. Mix the corn starch with the water then add it to the peaches and stir. Remove the peaches from the heat. The peaches will thicken from the corn starch.
  2. In a mixing pitcher, place the flour, 1 cup of the sugar, baking powder and salt, then whisk together well. Add the milk and whisk until smooth.
  3. Add the melted butter to the bottom of a 9X13 baking dish. Drizzle the batter over the melted butter. Spoon the cooked fruit and juice over the top of the batter. Do Not mix the fruit and the batter, just lay it on top.
  4. Bake at 350 degrees for 35 to 40 minutes just until turning slightly brown.
  5. Serve warm, garnish with ice cream.

Serve the warm cobbler with ice cream. That ice cream will melt all around the warm cobbler. It is delicious!
