In a small food processor, mix the lime juice crunchy peanut butter, soy sauce, honey, rice vinegar, and chili garlic sauce. Mix until the dressing is smooth, then set aside.

In a very large mixing bowl, add the thinly sliced Napa cabbage.

Add the grated carrots to the cabbage.

Add the red and yellow bell pepper strips to the cabbage mix.

Thai Chicken Salad with Peanut Dressing

A delicious salad with great Thai flavors. Perfect salad for the family or a pot-luck.

Ingredients

For The Salad
  • 1 medium Napa Cabbage, sliced thin
  • 2 medium carrots, grated
  • 1/2 red bell pepper, sliced thin
  • 1/2 yellow bell pepper, sliced thin
  • 1 (15.5 ounce) can Mandarin oranges, drained
  • 3 cups cooked chicken breast, shredded
  • 4 green onions, sliced thin
  • 1/4 cup toasted slivered almonds
  • 1/2 cup fresh Cilantro plus enough for Garnish.
For The Peanut Dressing
  • 1 lime, juiced
  • 4 tablespoons crunchy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon chili garlic sauce

Instructions

The Peanut Dressing
  1. In a food processor, combine all the ingredients and mix until smooth. Then set aside.
The Salad
