From The Garden To The Table
So lets get busy and make this Quiche

Summer Squash Quiche
Miz Helen's Kitchen
1 9 inch unbaked pie shell
1 cup Pepper Jack Cheese Shredded
1 cup Sharp Cheddar Shredded
1/2 cup Zucchini chopped
1/2 cup Yellow Summer Squash
1/2 cup onion chopped
1/4 cup Green Bell Pepper
1/4 cup Red Bell Pepper
1/2 cup tomatoes peeled
2 garlic pods minced
Sliced Tomatoes for the top
1/2 teaspoon thyme
1 teaspoon oregano
1 teaspoon basil
1 tablespoon parsley
1/4 teaspoon cayenne pepper
1 teaspoon salt
1teaspoon pepper
8 eggs beaten
2 cups evaporated milk or half and half
To prepare the pie shell, bake the pie shell for 5 minutes at 400 degrees then cool.
Mix all the Squash, onions,bell peppers, chopped tomatoes and garlic. Add all the season and mix well. Mix the eggs and milk together. Add the Squash mixture to the egg mixture. Mix the Jack Cheese and the Cheddar Cheese together. Spread the cheese into the bottom of the cooled prepared pie shell then add the egg and squash mixture. Bake the Quiche at 400 degrees for 10 minutes and reduce the heat to 350 degrees for 50 to 60 minutes or until the Quiche is set.

ReplyDeleteThis looks so very good. Did you use fresh herbs? I didn't see that as I was reading but could have passed over it. I will make this probably over the weekend. We enjoy a Quiche often in the evening for dinner pared with a small salad.

ReplyDeleteI did use fresh herbs for the Quiche, just because I have them in my herb garden. You could use dried if fresh are not available. Thanks for stopping by and have a great week end!

Thanks Helen, I do have an herb garden and knew it would make a difference in measurements if it was fresh or dried. I figured it probably was fresh. This is definitely on my weekend menu plan.
