Neiman Marcus Chicken Casserole (Copy-Cat)
The Neiman Marcus Chicken Casserole is still as popular today as it was when it was served in the old Neiman's café. It has a crunchy top with a creamy and flavorful inside. It is light yet makes a great covered dish for any event. It is one of my favorite pot-luck recipes.
When I was a very young girl in high school, I would visit my Aunt in Dallas. It was an overnight train ride and so much fun. She always made my visit so special and one of the highlights of the visit was always our trip to Neiman Marcus. We often time's had lunch at the café, and I have ate the real casserole there many times with my Aunt. Each time I make this recipe, I am reminded of my Aunt and the wonderful gifts of life experience that she gave me, she was a very special woman.
How To Make
Neiman Marcus Chicken Casserole
(Copy-Cat)
Place a sleeve, or about 32 crackers of crushed Ritz Crackers into a medium mixing bowl. Drizzle the melted butter over the crushed crackers. Toss the crackers and butter together until the butter is fully absorbed with the crackers. Set aside.
In a mixing bowl, whisk the cream of chicken soup and the sour cream together until blended and smooth.
Place the chopped chicken
into a large mixing bowl.
Place the shredded cheese, and chopped green onions on top of the chopped chicken.Stir in the soup mixture along with the slivered almonds. Mix until all the ingredients
are mixed well.
Spray a 9X13 baking dish with a baking oil spray. Spoon the casserole into the
prepared baking dish.
Sprinkle the top of the casserole with the buttered crackers. Bake at 350 degrees for 30 minutes or until the top is golden and bubbling.
