We love a weekend brunch and often times look for a special breakfast bake or casserole to serve for our brunch or breakfast. Our Country Sausage and Potato Breakfast Bake is just one of those special recipes that our weekend brunch group just love. This is a very simple recipe that does not take that long to set on the table. The flavors of Grandma's country kitchen rolled into one great breakfast bake!

How To Make 
Country Sausage and Potato Breakfast Bake

In a large skillet, crumble the sausage into medium pieces. Brown the sausage pieces over medium heat.
Remove the browned sausage from the skillet and place it on to a paper towel to drain.  Leave the 
sausage dripping in the skillet.

Add the hash brown potatoes to the sausage drippings. If the potatoes begin to stick just add about 2 tablespoons vegetable oil to the skillet. Just start the potatoes cooking and make sure they are hot through and through. 
They don't have to be brown, just hot.

In a large mixing bowl, stir in the browned and drained sausage and the cooked hash brown potatoes. Making sure
that the two are combined well.

In a large mixing pitcher, whisk the eggs, milk, salt, pepper, and 1 1/2 cups of the cheese.

Pour the egg and milk mixture over the sausage and potato mixture and stir until all incorporated.

Spray a 9X13 baking dish with a cooking oil spray. Pour the sausage mixture into the baking dish. Sprinkle the remainder
 of the cheese on top of the mixture.

Bake at 350 degrees for 30 minutes or test done in the center.

Let cool on a cooling rack for 10 minutes before slicing to serve. Garnish with fresh parsley.

This is a great recipe to bag and freeze for a grab and go or just a couple of servings for one or two. When we are serving a small group and have several servings left, 
just bag it up and freeze it. 
It will freeze well for 3 to 4 months. 
To re-heat
Remove the breakfast bake from the plastic bag 
onto a covered micro wave safe plate.
Just place it in the micro wave for
45 seconds to 1 minute and it is ready to go.
