Fried Rice

We have been enjoying Fried Rice for years and often times have Fried Rice as a side dish or as the entire meal. It is one of the most versatile dishes as many different vegetables can be added to the rice and eggs to make it different every time. Today we are having our favorite mix of vegetables with the rice. Fried Rice   Fried Rice Miz Helen's Kitchen Ingredients 3 cups of day old rice 4 tablespoons sesame oil 1 cup of vegetables, steamed or chopped 2 bunches green onions, chopped 3 cloves garlic, minced 1 teaspoon pepper 4 tablespoons lite sodium soy sauce  3 eggs, beaten Option: 1 tablespoon hot mustard Directions In a hot wok (or skillet) add the oil, stir in the vegetables with the chopped green onion and garlic. Stir Fry until the white of the onion is clear Push the cooked vegetables to one side and add the beaten eggs Scramble the eggs and then mix the eggs with the vegetables and add the mustard if you are using it Add th...


Rancher Beans

Pinto Beans are a staple in our home, they are one of the foods that we actually have on our menu at least once every two weeks. Pinto's will often times show up at the local pot luck dinners, and are on the menu at all the local restaurants. In my husbands childhood home, there was always a pot of pinto beans simmering on the back burner in the ranch house kitchen, ready for the ranch hands to come to the kitchen and help themselves to the beans and tortillas or cornbread. We have many different ways that we prepare the Pinto's and this recipe for Rancher Beans is one of our favorites.

Someone said the other day they would like a cup of soup everyday right now during this winter cold that we are having, I agree.  Soup just sounds so good and we have been loving our soup lately.  Last year by this time we were planting onions for the spring harvest, we are no where near planting yet this year.  I sure am glad that you are here today, come on in and lets talk about The Menu for next week. Southwest Chicken Soup

Sometimes we just love a bowl of hot spicy soup for lunch or dinner. Just add a salad or a fresh bread and you have a great meal, well with a little dessert of course. This soup is full of southwest flavor and packed with great vegetables and chicken, and sometimes better the day after. We are so excited to be starting the 2014 with all of you. Hope you had a wonderful holiday season and are looking forward to an exciting new year. We are still celebrating the holidays here at the cottage. Our Great Granddaughter, Granddaughter and Grandson In Law will be here this week, to celebrate a belated Christmas with us and we will love every moment of their time with us.
