Retro Southern Squash Casserole
I am so excited to see the summer squash showing up at our Farmers Markets and Supper Markets. That means that we will be harvesting our summer squash in the near future. Our Retro Southern Casserole has been showing up on our table for over 2 generations and it keeps on showing up. It is so easy to make with fresh squash and just a few other ingredients. Baked to perfection in my Retro baking dish. We never have left overs, it is really that good!

and cover with water. Place the lid on the pot and cook on medium until the squash are just tender.
salt, pepper and sugar until completely smooth.
Drain the water off of the squash and onions, the pour the mayonnaise sauce over the ingredients. Stir in the cheese and mix.
Butter the baking dish and pour the squash
into your baking dish.
on top of the squash mixture.
Place the lid on your baking dish and bake for 15 minutes, remove the lid and cook for 15 to 20 minutes
to allow the cornflakes to brown.
Remove from the oven and
cover with the lid until ready to serve.
