Italian Summer Soup

  Our garden is busting with beautiful vegetables and delicious ideas for garden to table recipes. Our Italian Summer Soup is delicious, it is a blend of summer squash, zucchini, and other summer herbs and vegetables. We are having some rainy weather as the storms roll in off the coast. The temperatures drop and this soup is a real winner. It can be frozen ahead of the  storm and then reheated to perfection.


Retro Carrot Apple Soup

Retro Carrot Apple Soup is so delicious and a spring treat. When the spring carrots are being harvested from the garden and the carrots are tender it is a perfect time to make this recipe. Carrot Soup originated in Crecy, France a town near Paris, which explains why I love it so much it's French. The Apple which many folks add to the soup really comes to me from my Grandmother. She would always add the tart apples to the soup and it was delicious. This is a very simple soup and does not take that long to make, but it is certainly worth any wait at all. There is nothing better on a chilly Spring day than a hot bowl of Retro Carrot Apple Soup.


Grandma's Irish Potato Soup

My Irish Grandma made a very simple potato soup and this recipe is just like the one she made. It is a very simple recipe to follow and the combination of fresh garden vegetables, butter and farm fresh milk, gives us a very comforting soup. Our family loves this simple soup and I often think of my Grandmother in her Irish cottage kitchen as she prepared her potato soup for the family. This is truly one of the soups that will stick to your ribs and keep you warm and cozy. 


Winter Garden Soup

Right before our recent ice storm, I gathered some greens from our winter garden. I decided that the perfect thing to make with my small harvest would be some wonderful Winter Garden Soup, which is one of my favorite soups. I had gathered some kale, and cabbage from the garden, then I added some onions, potatoes and some of the canned stewed tomatoes that I had canned last summer. Of course I added some seasons that we love in our soup. It was a delicious soup and we were able to really enjoy the harvest of our winter garden. 


Minestrone Soup

  It is time for a great bowl of soup, and this recipe will give us a great bowl of vegetable soup every time. Minestrone means "Big Soup", a very thick vegetable soup and this recipe sure lives up to that meaning of "Big Soup". 


Garden Vegetable Soup

We love our garden vegetables and there is nothing better than to go out to the garden gather a bunch of vegetables and bring them back to the kitchen to create a delicious soup. This is one of those recipes that we have used over and over in our kitchen and on a chilly rainy day there is nothing better than a bowl of this fresh vegetable soup. The combination of fresh vegetables and herbs can't be beat for a great flavor and it is a perfect garden to table bowl of goodness!


Tomato Basil Soup Plus Dumplings

We love tomato soup and this recipe has a bonus of dumplings. The flavors in this soup and dumplings will have you talking about this soup until you can get seconds. A nice blend of vegetables and add some fresh basil from the herb garden then it is a hit here at the cottage. I made this special recipe for a ladies committee luncheon meeting and the ladies gave us rave reviews. My husband always ask for double dumplings, they are so delicious, I can sure understand why!


Slow Cooker Cream of Squash Soup

This is a very special garden to table recipe with the fullness of the harvest. We are taking a couple of varieties of squash, colored peppers, and some other flavors added to make this a delicious garden soup. When I come in from the garden with a basket full of vegetables it is always so much fun to see what we can create and today it was cream of squash soup and to save time, it went in the slow cooker. We have loved this recipe and will be making it over and over!
