Jam Bars

We just love a quick little dessert that we can enjoy with a cup of afternoon tea or a casual dinner.  I love this recipe because it can be changed up with different kinds of jam to blend with the season.  I made this one today with my Strawberry Jalapeno Jam to give a little sweet and spicy flavor, this is a great combination. Jam Bars Jam Bars Miz Helen's Kitchen Ingredients Crust 3/4 cup butter, softened 1/4 cup packed brown sugar 1 1/2 cups all purpose flour 1/2 teaspoon salt Filling 3/4 cup Jam  Jalapeno Jam Recipe Link Topping 1/2 cup butter, softened 1/2 cup packed brown sugar 1/2 cup all purpose flour 1/2 cups quick cooking oats Directions For The Crust In a small bowl mix the 3/4 cups butter, 1/4 cup brown sugar, 1 1/2 cups all purpose flour, and salt until the mix looks like little peas Spray a 9 inch baking dish with cooking oil and press the crust mixture into the baking dish until it is completely covered Bak...


Zucchini & Caramelized Onion Galette

We are having a great onion and Zucchini harvest from our garden this year so when I found this Zucchini and Caramelized Onion Galette, it was just perfect for our Garden to Table collection.  This Galette is very delicate and yet the flavors are very bold.  This Zucchini and Caramelized Onion Galette would make a great addition to any meal. Zucchini & Caramelized Onion Galette Zucchini & Caramelized Onion Galette Miz Helen's Kitchen Ingredients 1 medium zucchini, sliced into rounds 1 1/2 teaspoon salt 1 medium onion, thinly sliced 1 to 2 tablespoon butter pinch of sugar 2 garlic scapes, finely diced 1 clove garlic, minced 1 teaspoon olive oil 9 inch pie crust, ready to bake 1/4 cup feta cheese 1 cup Fontina cheese Egg Yolk Wash ( 1 egg yolk beaten with 1 teaspoon water) Directions Spread the zucchini out over several layers of paper towels. We are really busy here at the Cottage with our harvest and preserving that harvest.  We are trying to beat the heat and get it all done before the extreme heat sets in.  We haven't had any rain in a long time, our lake is down 4.5 ft., so we are on water restrictions but we are hoping and praying to get rain soon.  Come on out to the garden and we will just take a look at the menu for next week. Slow Cooker Baked Pinto's

We love Pinto Beans and in some households in Texas Pinto's are a staple, and our cottage is sure one of those.  Usually we make our baked beans with Navy Beans, but I thought the other day why not make some baked beans from Pinto's, they were awesome.  The flavors in these Pinto's are wonderful and this will be a great side dish for any Covered Dish Dinner, a Picnic, Bar B Que or just to enjoy a good bowl of beans. Old Fashioned Fried Chicken

I remember visiting my Grandparents farm in the summertime, my Grandmother, Mother and Aunts all  in the kitchen preparing the summer meal.  Often times that meal had Fried Chicken with lots of fresh farm vegetables on the side.  When we would bring our family to visit my Mother, my kids would always request Grandmothers Fried Chicken, it was so good.  Fried Chicken is still one of our family favorites and this is the recipe that we always use.
