Chopped Greens and Fruit Salad
We have fresh greens for salad growing in our garden and lettuce tub almost the year round. There are times in the winter when the temperatures dip so low that most of the greens will die,but some make it the year round. I have sometimes had Collard plants that were two and three years old and still producing. I love going to the garden and gathering a bunch of greens, coming in the kitchen and putting a fresh salad together. I had added some of my favorite fruit to this salad along with a nice Vinaigrette for dressing. This is a perfect salad for any season.

Chopped Greens and Fruit Salad

Ingredients
8 cups fresh greens
1 Red Delicious Apple, chopped
1/2 Granny Smith Apple, chopped
1 Red or Green Pear, chopped
1 cup Red Grapes, chopped
Juice from 1 lemon
1 cup dried cherries or cranberries
1 cup walnuts, chopped
1/2 cup Feta Cheese, crumbled
1/2 cup Gorgonzola Cheese, crumbled
Directions
Chop the fruit and place all the chopped fruit in a large mixing bowl, squeeze the juice of the lemon over the fruit and toss the fruit to coat on all sides.
Wash and dry the greens and add to the mixing bowl with the fruit.
Add the dried fruit and toss the salad.
Drizzle the Apple Vinaigrette over the salad and toss or serve the dressing on the side.
Sprinkle the cheese and the nuts on the top before serving.
The Vinaigrette
Ingredients
1/4 cup apple cider vinegar
1/2 cup olive oil
1/4 apple juice
1/4 cup honey or to taste
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
Directions
Add all the ingredients to a shaker jar and shake until mixed well.
Will keep in the refrigerator for 1 week.
Tossed and Ready To Serve

That is so cool that your greens tub produces year round. I love salads with lots of fruit and some crumbles of cheese. I would be a happy camper with this one!
