Chicken Broccoli-Fruit Salad

I love a great vegetable and fruit salad with chicken added and our Chicken Broccoli-Fruit Salad is just that. This salad is just loaded with vegetables, fruit, and nuts, then topped with a flavorful dressing. We have enjoyed this salad recipe as a family lunch or dinner and I recently took it to a ladies luncheon where the ladies just loved it. This will be a great salad for any occasion.

Tangy Lemon Cole Slaw

Tangy Lemon Cole Slaw has become a favorite here at the cottage. Its takes no time to make this slaw and it is ready for the table. The dressing for this slaw is full of great seasons and  tangy lemon, just shake it in a jar and  it is ready to drizzle over the slaw. There are no dairy products in the slaw so it will go to a summer picnic without a problem. It is quick, easy and delicious, perfect for a busy day!

Garden Vegetable Sautéed Salad

We love to bring a basket of fresh vegetables from the garden to the kitchen and create a very special dish that our family will enjoy. This is a recipe that I recently put together with one of the garden baskets full of fresh vegetables. I have a simple sauté of the vegetables with a few seasons and then a great vinaigrette. We love a versatile side dish like this that can be served hot or cold.

Chicken Pasta Salad With Strawberries

We really enjoy seasonal foods here at the cottage and the strawberries have been beautiful this year. I wanted to put together a salad for a pot luck, this is a delicious salad that I ended up with. We have really been enjoying the recipe it was so simple to put together. I keep cooked chicken in 3 cup measures in my freezer for salad's, casseroles and other recipes. We have the pasta, chicken, fresh Strawberries, Spinach and other greens, plus an amazing Strawberry Balsamic Dressing. This is a delicious salad!

Jicama, Carrot and Apple Salad

Our Jicama, Carrot and Apple Salad is a very crunchy salad with a great combination of vegetables and a delicate lemon and honey dressing. This salad can be made well in advance of serving, as a matter of fact the longer it is able to sit the better it gets. The ice cold crunchy salad is a perfect side for any meal but especially for a grill-out. We just love this recipe for a little different salad that the crowd will always enjoy!

Layered Picnic Salad

This is a great layered salad to take to a picnic or a covered dish event. It is so easy to make and take, just layer the vegetables and toppings, cover and you are ready to head out to your event. A layered salad is always to pretty to look at in a nice round glass bowl, but really not to practical for a picnic or a backyard event. You can make this salad with as many or as few layers as you like, just have fun with it and make it yours. I love this layered picnic salad and the blend of vegetables and toppings making this recipe a real winner!

Asian Broccoli Slaw

We are  slaw lovers here at the cottage and love many variations of slaw. One of the newer variations that we enjoy is the broccoli slaw that is ready to go at the market, and who doesn't like that slaw already shredded. I am adding some awesome extras to this convenient product that puts it over the top in the flavor department. This slaw will be a lovely addition to any meal and it is really good with our  Grilled Teriyaki Chicken Sandwich .

Retro Peach Salad

This peach salad could be found on my Mothers and my Aunts table just about anytime there was a special family dinner. Some of the family would sometimes make a similar salad with pears, but we always made our recipe with peaches. I think we used peaches because my Grandparents had a peach orchard on their farm and they canned a lot of peaches during the peach harvest. Everyone always called this a salad but to me it was more like a delicious dessert that I loved back in  the day and I still do!

Green Pea and Ham Couscous Salad

This is a great recipe to use up some left over ham and enjoy some green peas and couscous. Our Green Pea and Ham Couscous Salad is perfect for a luncheon, covered dish event or a family get together. The salad is really better if you make it ahead of time and let it sit overnight if possible or as long as you can before serving. The combination of flavor in this salad makes it very special and one that your guest will ask for over and over. We love this salad here at the cottage and through the years it has become one of those go to recipes.

Marinated Veggie Salad

Our Marinated Veggie Salad is a fantastic salad recipe that is limited only by your imagination. I love to keep some of this salad in the refrigerator during a busy week, Just take some from the jar, spread it on some greens, add a little feta and it is a delicious salad. The jar of marinated veggies will easily go into any picnic basket to give you a great side for the special picnic. This will also be a great bowl of salad for a covered dish, or a side dish for a family dinner. This is a great make ahead recipe that you will want to use over and over. We love this recipe and you can find it in my refrigerator most of the spring and summer for sure.

Instant Pot Waldorf Chicken Salad

When I get a call to bring something over to someones home for a luncheon, or an impromptu gathering of friends, I don't always have a lot of time to put something together. When I got a call asking me to bring my Chicken Salad, I said sure and then thought this is a job for my Instant Pot. The Waldorf Chicken Salad turned out delicious and everyone at the luncheon just loved it. It took no time to prepare the chicken and it was so much better than the Grocery Store Rotisserie Chicken. The mix of the Waldorf Salad and chicken is a great combination and made a fantastic salad!

Classic Waldorf Salad

Classic Waldorf Salad I often times receive requests for classic, vintage and old fashioned recipes. I have found that families are pretty much the same all over the world, the Grandma, a favorite Aunt, a Mom or Mother In Law made a favorite family recipe and never wrote it down, we have sure had that situation in our family. One of the most requested recipes that I am asked for is "that old fashioned fruit salad recipe that someone in that family made, and would you happen to have one that might be that recipe. I mentor a group of young homemakers and recently this is one of the recipes that they were asking for. Part of the purpose of Miz Helen's Kitchen is to preserve the integrity of our recipes that have been handed down though all of our families, as we help our younger generations become the kind of cooks they aspire to be.

Melon Salad with Basil Dressing

We really enjoy our melon's in the summer time. There is nothing better than a Black Diamond Watermelon form central Texas or a Cantaloupe from the valley of Texas. Both of these melons are delicious all on their own but they make a great dish when mixed together. Our Basil made from the fresh Basil in our herb garden make this Melon Salad a very special side dish for any meal.

Cheesy Jalapeno Bacon Cornbread Salad

This is a salad that becomes a meal, it is delicious! We are using a very special cornbread as the base of the salad and adding garden fresh vegetables to make this a very tasty and filling salad.  This is a great make ahead salad that can be made the day before and ready to go to the party or set on your dinner table. This salad is perfect for a family lunch or dinner and has been a big hit at potluck dinners.

This is a great fresh salad that takes no time to make and taste like you have been working on it all day. The Italian flavors in this salad with the mix of vegetable and Italian seasons makes it a favorite salad of the season.

Asparagus and Berries Flatbread Salad

This Flatbread Salad is one of my favorite salad's to have for lunch. I love the combination of vegetables, salad greens and fruit, then topped with a little cheese. All of this goodness is heaped on a cheese covered flatbread, then drizzled with a wonderful vinaigrette. Relax at your favorite table and enjoy!

Asparagus & Pea Salad

When the vegetables are plentiful in the garden and at the Farmers Markets it is time to make some wonderful fresh salads. One of my favorite garden to table salads is this delicious Asparagus & Pea salad. This salad is a great side for any meal or would be a fantastic salad for a luncheon. This is a very special salad with a  flavorful Lemon Dressing.

Winter Greens Salad With Orange Vinaigrette

When we begin to transition into the deep cold of winter, nothing is better than a great Winter Greens Salad with some lovely winter fruits and a great vinaigrette. The salad mix that I am using today is really one of my favorites, and although it is a winter mix it is delicious the year round. We still have winter greens in our garden so it is nice to take a brisk walk to the garden and come  back with some wonderful fresh greens for a salad. There are so many options to this salad but today I am using a combination of wonderful winter fruits with the greens.

Wilted Greens Salad with Hot Bacon Vinaigrette

When I was a young girl, my Grandmother would take me out to the garden to pick Mustard Greens. We would pick greens in the fall and winter months when it was very chilly or cold outside. Today when I go out to my own garden I remember my Grandmother when she would make the Wilted Greens Salad. I remember washing the greens with her in the cold well water. I would pump the water and my Grandmother would wash the greens. This was one of my favorite salads when I was growing up and I love getting to make this salad for my own Granddaughters.
