Harvest Salad with Maple Dressing
Our Harvest Salad is just perfect for a very special meal or a great main dish. It includes some great roasted sweet potatoes, grapes, and the last of the cherry tomato harvest. We just mixed all of this together with some greens add some Feta Cheese and a delicious Maple Dressing. This salad is fabulous!

With Maple Dressing
Peel and dice the sweet potatoes. Place the diced sweet potatoes into a medium mixing bowl and toss them with the olive oil, salt, pepper and thyme.
Place the seasoned sweet potatoes on
a baking sheet lined with parchment paper.
Roast the potatoes at 375 degrees for 20 minutes.
Let cool and set aside.
In a large mixing bowl, assemble the lettuce, cherry tomatoes, grapes, and red onions.
In a mixing jar, pour in the olive oil, maple syrup, red wine vinegar, mustard, salt and pepper. Place the lid on the jar and shake until completely blended.
garnish with Feta Cheese.
