Ham & Cheese Garden Strata

Our Ham & Cheese Garden Strata is a great recipe for a brunch. We have a weekend brunch just about every weekend that we are in town and often we have guest that join us. This is one of the delicious recipes that I like to prepare for our brunch here at the cottage. The recipe has little bits of ham, cheese and some fresh garden vegetable's with a base of crusty bread, eggs and milk. The flavor of this strata is awesome, it can be made the night before and baked the next morning, a great dish for entertaining.

Mini Garden Frittatas

Mini Garden Frittatas are perfect for those mornings when we are trying to get to work on time, get the kids to school on time or just a grab and go for a fun day trip. I have even served these for a ladies morning brunch, it is just a versatile recipe that I love to have on hand. The Frittatas freeze well for up to 3 months, just place the frozen Frittata in the micro wave for 30 seconds and they are ready to go. This recipe is packed with a combination of garden vegetables that make a very flavorful bite of goodness. This is one of those recipes that will serve one or twenty and is good every time!

Sheet Pan Roasted Veggie Frittata

I love roasted vegetables, roasting the vegetables brings out such great flavors. This Frittata is a simple blend of roasted vegetables with herbs and ham. We are making it on a sheet pan that keeps it real simple and informal. We have found this to be so convenient for feeding a brunch crowd and a wonderful way to cook for the freezer. We have recently used this recipe to feed a very large crowd for brunch and the folks really loved it. At the cottage we make the recipe and enjoy it for brunch then take the rest and freeze it in serving sizes for the freezer. It is a great grab n go for a busy life style and who doesn't have a day like that from time to time. The combination of vegetables and herbs makes this a delicious brunch dish that I hope you enjoy as much as we have.

Ham and Sweet Pepper Crustless Quiche

I love a great quiche and sometimes can do without the crust. This is a great crustless quiche that is easy to prepare with a delicious flavor. I had a luncheon for a committee meeting the other day and made this quiche. I served it with a simple bowl of homemade tomato soup, lunch was a hit and the ladies loved the quiche. I actually used some of my leftover ham bags from the freezer, with some great sweet peppers, onions and some great seasons, then topped it with some rosemary oranges, it was delicious!

Asparagus Brunch Casserole

We love having brunch on a Saturday morning on a weekend when we can just relax and enjoy our home and being together. It is really great when the asparagus is coming up and being picked every day. That's when I really enjoy using the fresh asparagus in my brunch casserole. This is a very versatile recipe and the ingredients can be changed to fit the season. This is a great dish for a cover dish pot luck brunch and I have served it many times for a ladies brunch.

Garden Waffle with Italian Cheese Sauce

We love Waffle's and will often times have them for lunch or in the evening for a very informal supper. I wanted to create a waffle that could incorporate some of our wonderful garden vegetables.  This is a delicate blend of garden vegetables with a balsamic sauce with some fresh garden herbs.  While the crisp waffle is still hot we drizzle a delicious Italian Cheese Sauce on top.  This is a fabulous waffle that can be served on any occasion, my husband has already asked for it to be put on the menu again very soon.  I am very excited to present this new recipe to you today and sure hope you enjoy it!
