Sour Dill Pickles

  We have had a great canning season this year. Our cucumbers came on early so it allowed us to make pickles before the heat of the summer set in. This pickle recipe is a combination of a sour and dill pickle, and have been developed through my years of canning. We are a pickle loving family so we love the different flavors that can come from a simple jar of pickles.


Canned Basil, Onion & Garlic Stewed Tomatoes

Our Canned Basil, Onion & Garlic Stewed Tomatoes are a great addition to our canning pantry. For several years I have noticed that the canned stewed tomatoes in the super market's have added pepper, both sweet and hot, onions, and garlic. I made a decision to make my own and it is delicious. I am so glad that I gave this a try, because I will making many more pints of this mix. It is a great base for Italian sauces, pair it with a soup or slow cooker recipe. I made pasta and just used the tomatoes right out of the jar. From Garden to Canner!


Preserving Sweet Basil Pesto

We have had a wonderful Basil harvest this year and I just couldn't let all that fabulous basil go to waste. We always dry some of our basil to use in recipes, and usually have pesto on hand. This year I decided to freeze some of my sweet basil pesto. This is a delicious recipe that I have used for years to make my pesto and I use the pesto in many of my Italian recipes. This recipe is so easy to make and uses just a few ingredients. I place it in 1/2 cup containers, which is perfect for most recipes. This can be used for up to 6 months after freezing.


Summer Garden Harvest With Recipes

It has truly been an outstanding summer garden harvest this year. We had early and late rain's along with cooler temperatures that we had never had in recorded weather history for our area so we really didn't know what to expect in the final outcome of the harvest. We have had what the farmers would call a bumper crop. In order to keep up with the harvest we have kept the canner's going full steam ahead. I am excited to share with you the summer garden harvest time.


Pickled Peppers

We love to preserve the bounty of our summer garden. These pickled peppers are a very special treat that will be used to accent a sandwich, and top many a grilled steak, chop or chicken. These little Pickled Peppers are a great addition to any plate. This recipe is so easy to make and before to much time you will have a beautiful jar of pickled peppers that you can enjoy. These beautiful jars of peppers will be a great gift to give to friends and family.


Cranberry Jelly

We can and preserve much of the harvest from our garden every year and we love to share those products with our friends and family. Through the years we have shared an abundant garden harvest and it gives us much joy to do so. Every year we like to make a very special canned good to share at Christmas with friends and family. This year we have made this beautiful Cranberry Jelly. What could be better at Christmas than a nice jar of Cranberry Jelly. This Jelly is delicious and can be paired with meats, poultry, and great with vegetables. We have been enjoying it with our sour dough bread and toasted bagels. It is a great jelly and providing we have some left by Christmas, we will be sharing a jar or two.


Preserving and Canning Pickles, Relish and Salsa

I stood on a stool when I was a small girl and watched my Mother load jars into a large kettle that set on a small 4 burner stove. I remember how beautiful the jars looked in the sunlight as they cooled on the counter. Canning and Preserving food has been a big part of my life growing up and it continues to be today. Canning and Preserving food is almost a lost art in our society today, which makes it important to me to be able to pass these recipes along to friends and family. Spicy Blackberry Jam

We have wonderful Blackberry bushes that have brought an abundant harvest this year. We love our blackberries and often times have cobblers, pies, crisp, along with berries and cream. Some of the berries never make it out of the garden, we enjoy them right there. One of our favorite recipes for the berries is our Spicy Blackberry Jam, my Grandmother used this recipe every year for her berries.This year some folks will find one of these special little jars of jam in their Christmas Box. Sure hope you enjoy this old fashioned recipe for the berries.


Tutorial-Canning Season

I am so glad you come by today, I can use some help with this canning project. Canning is always more fun if you have a friend. I remember my Grandmother, my Mother and her sisters and sometimes her friends would get together and can their fresh products. I have my Grandmother's canning book, and I was looking at it the other day. It is a Kerr Canning Book, on the front cover it tells all about a Victory Garden and how to preserve the fruits and vegetables from the Victory Garden. It also talks about how every little bit that we conserve will help the outcome of the war effort. Then I thought how far we haven't come...We are engaged in two wars, and our economy is as bad in some areas as it was during that World War II time frame. More and More people are looking to home gardens to help conserve their resources. I have found in talking to people that some of those home skills like canning is almost a lost art. So come in and we will get started.
