Pickle Pot Time

We are going to the cucumber patch today and get some cucumbers to start a Pickle Pot. I like to start a new pickle pot every year. I cannot imagine not having a Pickle Pot in my refrigerator in the summertime. Everyone who comes here in the summer always heads for The Pickle Pot.  This was my Pickle Pot last year when I introduced The Pickle Pot to all of you.   The Pickle Pot Today we are preparing a Pickle Pot for several people and a new one for me, so lets get started. The hardest part of the Pickle Pot is waiting for them to be ready. Pickle Pot Yogurt Dressing

I am so glad that you came today. If you are a Pickle Pot fan and recently made a Pickle Pot you will love this recipe for Pickle Pot Dressing.   The dressing was developed by Amy Green of Simply Sugar and Gluten Free and me on our last cooking adventure together.         Amy Green and Miz Helen at The Country Cottage Pickle Pot Yogurt Dressing Amy Green and Helen Adams 1/4 cup pickles from The Pickle Pot 1/2 cup pickle pot juice 3/4 cup extra virgin olive oil 3/4 cup non fat plain yogurt 1/8 teaspoon dill weed 1 teaspoon agave nectar light Salt to taste Whirl pickles and pickle juice in a blender  With the blender running stream in the extra virgin olive oil Transfer to a bowl and stir in yogurt Stir in dill and agave Salt to taste Enjoy! The Pickle Pot

    In the beginning of the cucumber harvest we start the Pickle Pot .   I remember when I was a little girl going to my Mother's refrigerator and taking a bowl of pickles from  The Pickle Pot.    I don't ever remember a summer when I didn't have a Pickle Pot in my refrigerator.We always have a bowl of pickles from the Pickle Pot for our lunch or dinner. There are pickles for relish, burger's, salads, and the vinegar is heavenly used as a salad dressing. Pickle Pot A large glass container is best, but plastic is ok. Fill the container half full with sliced cucumbers The slices can be different sizes that is what makes the Pickle Pot fun . Fill 1/4 of the container with white onion slices. Salt the cucumbers and onions very well and mix together. Add 2 to 4 tablespoons of pickle spice to taste. Pour White Vinegar over the cucumber and onion mixture just until barely covered.
