Italian Chicken Piccata Meatballs

Chicken Piccata is one of my favorites. Our Italian Chicken Piccata Meatballs wrap all that Piccata flavor into one amazing meatball with a creamy sauce on top. Just serve it with some wide egg noodles and what a delicious meal.

Chicken Noodle Casserole

I was asked last week to bring a casserole to a family in our comminity who were just having a really hard time in life right now. As I was making this Chicken Noodle Casserole for them I was thinking about so many of you who may be having a really hard time in life right now and could just use a special touch or a little extra love. This is one of those casseroles that will bring a lot of comfort with homemade style noodles, nice size bites of chicken breast and some amazing vegetables to assemble a great dish filled with flavor. If you lived close to me this one would be for you!

Chicken Parmesan Patty With Spaghetti

Chicken Parmesan Patty With Spaghetti is a great family recipe that is so full of great Italian flavors. We really enjoy these Chicken Parmesan Patties, with a salad and vegetable, or even on a sandwich, but our favorite way to serve them is with spaghetti. This is a very easy recipe to prepare and in no time it is on the table ready to serve the family.

Chicken and Broccoli Alfredo Casserole

I love to have a go to casserole that I can put together in no time and it taste like you have been slow cooking it all day, this is definitely one of those casseroles. I keep 3 cup bags of cooked chicken in the freezer for salads, soups and casseroles, it really does speed the prep time along. This casserole has fresh broccoli with a great Alfredo sauce giving this recipe a delicious flavor!

Chicken Tetrazzini

This Chicken Tetrazzini was and still is today a family favorite at the cottage. It is a great dish that is layered with flavor. It is easy to put together and freezes well for a later warm up. I asked my son the other day what he wanted me to make for him when he came to see us and he said "that Chicken Tetrazzini", and of course I made it for him, and this one is just for YOU!

Old Fashioned Chicken and Rice Casserole

I can remember having this casserole at family dinners when I was in High School (long many years ago). As a young homemaker I recall writing the recipe down from one of my Aunt's recipe cards. The instructions were not very specific and left a lot of room to be creative. Though the years all of our family cooks have changed the recipe somewhat, but this is the favorite one here at the cottage. Sometimes when we are having a family dinner, someone will say, oh make the Chicken and Rice, everyone knows what it is, just pure comfort.

Crock Pot Chicken Veggie and Rice Casserole

When I was a young homemaker we would call a dish like this a one pot meal, and really that's just what it is. Our Crock Pot's and Slow Cooker's make it possible to have these wonderful one pot meals without having the oven going all day. I made this recipe from a recipe that my mother made and called a One Pot Chicken Dinner. This is a delicious recipe and a real comfort dish, with chicken, vegetables, rice and a thick topping of sauce and cheese.

Chicken Asparagus Pasta Bake

Garden To Table Fresh Asparagus We have had the most beautiful Asparagus from our garden this year and I have had fun making special recipes for the fresh Asparagus. We were having some family come in for the weekend and I thought this might be a great dish to make ahead and that my guest would really enjoy. Just a simple dish with a special blend of flavors, that was a big hit here with our guest.
