Retro Onion Soup Chicken and Rice Casserole

  I remember making and eating this Onion Soup Chicken and Rice Casserole back in the late 1950's. I was going through some of my older recipes that are budget friendly and this is the one that caught my eye. I could almost taste this casserole, it is delicious as well as comforting. It really goes together and is on the table in no time. It is a great casserole for the family or a great covered dish for a dinner party.


Sausage, Veggie, Rice Pot

When I was making this recipe the other day, I was remembering that back in the 50's and 60's we would have called this a "One Dish Dinner", and today we call it a One Pot Meal. We just added a great Green Tossed Salad with some Garlic Bread and it was awesome.  This recipe has wonderful southern flavors and goes together really fast so you can get it on the table for a hungry family.  I think it was even better the next day, it is really one of those recipes that you will want to make over and over.


Fried Rice

We have been enjoying Fried Rice for years and often times have Fried Rice as a side dish or as the entire meal. It is one of the most versatile dishes as many different vegetables can be added to the rice and eggs to make it different every time. Today we are having our favorite mix of vegetables with the rice. Fried Rice   Fried Rice Miz Helen's Kitchen Ingredients 3 cups of day old rice 4 tablespoons sesame oil 1 cup of vegetables, steamed or chopped 2 bunches green onions, chopped 3 cloves garlic, minced 1 teaspoon pepper 4 tablespoons lite sodium soy sauce  3 eggs, beaten Option: 1 tablespoon hot mustard Directions In a hot wok (or skillet) add the oil, stir in the vegetables with the chopped green onion and garlic. Cranberry Rice Dressing

I am happy that you were able to stop by today to pick up your recipe for the Cranberry Rice Dressing. I served this dish with Cornish Game Hens and it was a great combination. When I was developing this recipe I wanted a more economical product than wild rice as it is very expensive here in my area.
