Fruit and Kale Salad With Lemon Vinaigrette

I love walking out to my winter or summer garden and gathering some fresh kale for a nice salad. In this recipe I added some apples, pears and red onions, then topped it with a delicious lemon vinaigrette and last we sprinkled it with toasted almonds. I really enjoy a flavorful salad with all these very fresh ingredients. This is a great garden to table recipe!

Potato Gnocchi Salad

Potato Gnocchi Salad recipe is a different take on a potato salad, and it is delicious! I love gnocchi, but I haven't made it in years and when I was shopping I noticed that I could get it in a box. Of course I had to try it, and I am so glad I did. What a great product that I am sure I will use again and again. Let me say right here I am NOT PAID for the promotion of this product, I just like it and am happy to pass it on to my friends. I developed this recipe especially for my new found product and it will be going to a lot of picnic's and covered dish dinners very soon!

Greek Salad Boat

Our Greek Salad Boat is a fresh light combination of vegetables and served in a crusty bread boat. I love the Greek flavors in the combination of herbs and vegetables with a fantastic dressing, and then there is the bread. Oh yes that crusty bread to this bread lover is a perfect partner for this salad. This is a great way to serve a salad that becomes a meal and one of my favorites. The salad is great to serve as an appetizer, side dish or as the entree. This is a great garden to table dish that is great any time of the year!

Monday Cob Salad

Sometimes after a really busy weekend I will open the refrigerator on Monday Morning and see all the "Little Bit's" of the weekend past. Today I have some left over grilled rib eye steak, a great grilled chicken breast, some roasted corn and chilies, along with some other wonderful flavor, this makes a great cob salad. The "Little Bit's" are used up and I have a day off in the kitchen, who doesn't like that.

Tomato Basil & Cucumber Salad

Tomatoes, cucumbers and basil all these wonderful flavors are one of my favorites. I came in from the garden today with all the ingredients for this delicious salad. This salad has a very special vinaigrette over the mix to put it over the top.  Our family has made this recipe for years and it has gone on the table for family and been carried to potluck dinners for everyone to enjoy. I don't recall ever bringing a bite of it back home from a function. It is a fresh flavorful salad and although we make it from our garden vegetables in the summer the ingredients can be found in your super market the year round.

Tex Mex Pasta Salad

I love a salad that can be the star of lunch or dinner and that is exactly what this recipe is. It has a wonderful base of pasta and chicken filled with Tex Mex flavors. This is a great salad to take to a Pot Luck lunch or dinner and it is a winner at the family dinner every time!  I used chicken that I keep on hand in the freezer, I grill or poach the chicken, cut it up, package it in 3 cup bags, then freeze it. I can always put together a great chicken dish from the little freezer bags.

Mini Heirloom Tomato & Rice Salad

We grow our own heirloom tomatoes in the summer garden, and fortunately our local market carries them the year round. This is a salad mix that works so well with fish and chicken dishes. It is a very versatile recipe that I sometimes use the base of the tomato mix as a Bruschetta topper. This mix has the best flavor and can even be served as a stand alone tomato salad. I love this recipe and hope you enjoy it!

El Rancho Corn Salad

I love traveling to my friends ranch in far west Texas. It is a long drive from the cottage to the ranch, but every mile worth it when you finally arrive. The ranch is just beautiful and the tables are always full of the most delicious food. Their recipes are a mix of Tex-Mex and Southwest flavors, which of course is one of our favorites. My friends ranch is the inspiration for El Rancho Corn Salad and is full of a great blend of spices and flavors that will leave you wanting more.

Green Bean Salad

Do you have favorite salad's that just work with certain meal plans and are  one of your recipe classic's? I have a section in my recipe file for The Best and this is one of the recipes that I have there. Sometimes we would  want a different salad to go with a special meal, especially if we are grilling out. This is a vegetable packed salad with a very different and delicate balance of herbs. Of course we always have those other wonderful salads, but this one is awesome and we don't have to worry about the dairy. It's a great make ahead salad to take to the local picnic and I am so happy to share it with you today.
