Instant Pot Tex-Mex Chili

When my family wants a great pot of chili and my day is to busy to let it simmer all day, I head for the Instant Pot. I converted this recipe for the Instant Pot and it is every bit as good as the one that simmers all day. This is a Tex-Mex Chili that has all the wonderful Tex-Mex seasons made the Texas way. No we don't put beans in authentic Texas chili, however this is Tex-Mex so yes we did use the beans. We will be serving this for a family dinner, game day gatherings, and it is great for a friendly chili cook off!

Veggie Tostada's

I think that being a vegetarian would be so easy for me in the summer, because there are so many wonderful fresh vegetables that I love. This Veggie Tostada recipe is filled with fresh from the garden vegetables with just a little Mexican spice that just put's this one over the top. We have topped it off with a fantastic Mango Salsa that is always a winner. You don't want to miss this combination!

Strawberry Dessert Chalupa

I wanted to create a new Tex Mex dessert for some upcoming Mexican themed parties. Of course my official taster is my husband and he says this is his new favorite and I agree, it is delicious. This is a recipe that you can prepare all the ingredients ahead of time then put it together right before you serve. These flavors are amazing with a creamy filling and a crunchy base, to serve one or a crowd.

Tex Mex Hash

Our family favorite Tex Mex Hash is such an easy recipe and goes together in just minutes. This is one of those dishes that you can put together for your family or a group, it is pure Tex Mex comfort. There are busy times when we need a recipe that is filled with flavor and goes together fast. Then, there are also times when our family gathers around the table and we are so grateful to be together and to enjoy a simple dish of comfort in the fellowship of family.

Mexican Skillet Pie

We were having a Mexican Food theme for one of our covered dish suppers recently and wanted to take something different. I thought why not have a Mexican Skillet Pie. I have a large collection of Iron Skillets and everyone is always excited to see the surprise that I have in the skillet. It was so much fun developing this recipe, it is so easy and delicious. This recipe is very flavorful and I am so happy to share it with you today.

Grilled Chicken Fajita Roll Ups

We love Tex Mex flavors here at the cottage and our Grilled Chicken Fajita Roll Ups recipe is filled with that south of the border flavor. As soon as grilling season is here we head to the outdoor kitchen with a tray full of these roll ups. This recipe is very easy to put together and full of Tex Mex flavors and will serve a nice family dinner or a fun grilling party for friends.

Baked Turkey Tacos

I just love the new baked tacos shells that we find at the super market, they have come a long way from the taco shell that we had to fry then hang upside down on a rack. Another plus to these tacos, you can make a few or enough for a crowd. Just load them on a baking sheet pour in the filling and they are ready to bake. I am using left over Turkey today to make this awesome recipe. No matter how well we plan there is always a little left over turkey or chicken and what better way to make a left over come to life than a great Tex Mex Taco.

Sloppy Texan

We all love a Sloppy Joe, but here at the cottage our favorite is a Sloppy Texan. This is one of those awesome easy and quick recipes that feeds the family on a very busy day. I just about always double this recipe, so I can have some left for the freezer. It is great to have the filling just waiting in the freezer for one or two folks. This Sloppy Texan has all the flavors of Texas with just a little heat.

Green Chili Chop Steak

It's Green Chili season here and many of the open air markets are roasting Green Chilies. The smell of the chilies roasting is amazing and the flavor of the chili is one of my favorites. Today we are preparing our Green Chili Chop Steak that is made with our roasted green chilies and topped off with a great Green Chili Sauce. We will be serving our steak with a great Refried Bean Hash making this a very special plate of food.

Chile Relleno Bake

We love Chile Relleno's, but they are usually fried. This Chile Relleno Bake give's all the flavor of a great Relleno, without the frying pan. I have added some more vegetables to the filling to give a great combination for this bake. I have used this recipe for breakfast, lunch and dinner and is a proven winner with our family. One of the features of this recipe is that it can be frozen for up to 3 months, we freeze the whole dish or individual servings. This is a great dish to bring a Mexican Fiesta into your home anytime.

Crock Pot Tex Mex Casserole

We love Tex Mex here at the cottage and often times when someone is coming over for dinner they will ask for a Tex Mex dish. I have been making this recipe for years and wanted to make it for a special dinner for a friend, but I didn't want to be in the kitchen right up to dinner. The solution was a recipe for my new Crock Pot Casserole Cooker. I may never go back to the old recipe, everyone just loved this and I had lots of time to visit with friends.

Nacho Supreme Casserole

This is one of those casserole's that can be the star at a covered dish dinner or a great buffet dish for game day. It has been on the table many times for some of our family gatherings and it is absolutely one of the favorites. One of the great things about this casserole is that it doesn't take very long to make it, and it freezes well. I like to make two at a time and freeze one, pop it in the oven at a later date then just add the garnish, its ready to go. We just love this casserole and sure hope you enjoy it!

Texas Peach Salsa

We are so fortunate to live a short driving distance to some of the best peaches in Texas. We get so excited when the peaches are ready, the season is not that long so we have to enjoy every day of the season. One of the dishes that we love is our Texas Peach Salsa, a salsa that can be used as a dip, as a side dish for any meal or as a garnish for a very special grilled meat or vegetable. Our Granddaughter Stephanie has been here for Grandma's Summer Camp and this salsa was one of our project dishes that she was able to help us with. We love this salsa and sure hope you enjoy it!

Chicken Tortilla Skillet

This is a great Tex Mex skillet casserole that can be made in a short time and on the table for a busy and very hungry family. It can be made in the same skillet and baked in the oven, just add a salad and you have a great meal. Another great feature about this recipe is it can be frozen in a baking dish ready to go for another day, and I have baked it in small tins for a party. We love this Chicken Tortilla Skillet and sure hope you will enjoy it!

Chicken Taco Stew

Tex Mex and Southwest flavors are a staple here at the cottage and this Chicken Taco Stew diffidently  has a blend of these flavors.  This is a great stew that is easy to make and can be on the table in a short time, or left to simmer it just gets better.  I keep packages of chopped chicken in the freezer just for a recipe like this.  I package the freezer bags with 3 cups of chopped chicken which most, soups, stews, and casseroles call for.  It is also excellent for topping a salad.  We love this stew and hope you will enjoy it. Spanish Rice Casserole

My Mother made the best Spanish Rice and growing up it was one of my favorites. When I went out on my own and married I began to make my Mothers Spanish Rice and I just kept adding to it, so today it has become Spanish Rice Casserole. I still love this casserole it is so full of flavor and it freezes for up to 3 months. This casserole is still one of my favorites and sure hope that you enjoy it.

Slow Cooker Green Chili Stew

When it gets really cold and rainy outside one of the favorite stew's at The Country Cottage is Green Chili Stew. It is real comfort food for us, and that is what we are making today. We like to serve it with warm homemade tortilla's and I can't wait until it's ready! Recipe   This Smells So Good Enjoy! I sure am glad that you stopped by to have a bowl of Green Chili Stew with us today, hope you enjoyed it. I always look forward to your visits and come back soon!
