Ham and Pasta Casserole

My friend Laurie  recently came out from the City to visit and work on a project with me. It was raining and  chilly that day  so we decided to make lunch at The Cottage rather than drive to the Village Cafe. Sometimes it is really nice to have some good "soul food" and that is just what we made, some good "soul food". This is a recipe that I have made many times and when I started to make it Laurie ask if it was in my Cookbook Miz Helen's Kitchen Table or on the blog and I said no it's in my head, so she got a pen and paper and started writing the recipe down, and because she wrote it down I can share it with you today; Thanks Laurie! We  have had a wonderful week here at The Cottage with family and friends preparing for Easter. Lemon Coconut Cake

We are preparing for Easter Week here at the cottage. We will be expecting family to come in for the week so I am doing some early baking, and a surprise for some of the little ones and the big ones as well. I just love the Lemon and Coconut combination so this is my Lemon Coconut Cake for this year. Lemon Coconut Cake Lemon Coconut Cake Miz Helen's Kitchen 1 2/3 cups sugar 2 1/2 cups Cake Flour 1/2 cup Butter 2/1/2 teaspoons baking powder 1 cup cold water 4 egg whites 2 teaspoons  Lemon Juice 1 cup coconut In a mixing bowl with a mixer Cream butter gradually adding sugar.  Cream until fluffy.   Sift together the flour and baking powder.   Add the flour alternately with the water.   Add the egg whites and beat vigorously. Add the lemon juice.  Add the color tint of your choice until the desired color is achieved and mix well Pour into two 8 inch oiled and floured cake pans. Bake at 325 degrees for 30 m...


Green Peas and Potatoes with Lemon Mint Sauce

There is really nothing better than going to the garden and gathering some Green Peas and New Potatoes. The Peas are so fresh and crisp, I can eat them right off the vine.  After a trip to the garden the other day I wanted to create a vegetable dish for these wonderful fresh vegetables. We have had our Easter decorations out for awhile now, because it seems like Easter is coming so early this year, the time is flying by. We are starting our preparations for Easter this week getting ready for the big Egg Hunt and other family activities that are so much fun at Easter time. Best Cherry Pie

"Can she bake a Cherry Pie, Billy Boy, Billy Boy?"  I remember hearing my Mother singing that little tune when she would be baking this Cherry Pie. I always knew that we would have Cherry Pie that night for dessert when she started singing that little tune. This is a great Cherry Pie recipe that has been in our family since I can remember, and that's a long time, lol.

I am so excited about Spring we have had enough rain that our lake is now full and it just looks beautiful. We got 5 1/2 inches of rain in 24 hours last week so that really helps. Come take a walk with me just down in The Garden Gate and we will sit on the patio and have our morning coffee and enjoy the beauty of spring and talk about The Menu for next week. Slow Cooker Green Chili Stew

When it gets really cold and rainy outside one of the favorite stew's at The Country Cottage is Green Chili Stew. It is real comfort food for us, and that is what we are making today.
