Raspberry Sheet Cake

Our local Farmers Market h as the most beautiful Raspberries right now and I could not resist making a special dessert just for these beautiful berries.  Not only does it give some beautiful color and flavor it offers a little glimmer of hope that spring is just around the corner.  I already have a very special dinner planned for "Honey Bunny", but we can always use an extra dessert, and who knows  maybe you will drop by and surprise us, I sure hope so! Raspberry Cream Cheese Frosting

We love Raspberries and this frosting will dress up any pastry, from cakes, cupcakes to cookies.  It is just a great frosting.  If you are using it with chocolate cake, a white or chocolate cupcake, it makes the dessert very special.  One of my favorites is on top of the Raspberry Sheet Cake, all those wonderful Raspberries, it is delicious. Slow Cooker Mexican Pot Roast Tacos

This is a great recipe for a busy day, just put it in the Slow Cooker and its all ready at the end of the day. Mexican Pot Roast can be served as part of a nice meal or can be served as Tacos or Burritos for a great buffet.  We just love this recipe and it is on our menu often, I am so excited to share it with you today. Some of you are really having a snow storm this weekend, I hope all of you are staying warm and cozy with lots of yummy food.  We  are busy here at the cottage getting ready for our spring planting with little starter plants in every window, it looks like a green house in here with the hope that spring is just around the corner. Salmon With Bacon and Balsamic Vinaigrette

We just love Salmon and when we go to Oregon to visit our daughters we always eat as much Salmon as we can. We are inland so fresh Salmon is a real treat for us.  This is a different flavor for Salmon but one that we just love.  Part of this recipe is from our friend Bill, I never ate his Salmon, but his wife Chelli tells me how wonderful it is all the time.  So of course putting my own spin on it, this is our new Salmon recipe. We have had a great week here at the cottage.
