Nutty Brittle

We love a good Peanut Brittle and one day we decided to use some mixed nuts in our Brittle and our Nutty Brittle was developed. This is a great option for the old fashioned Peanut Brittle that we really enjoy or you can just have the old fashioned Peanut Brittle, its a great option. Nutty Brittle Nutty Brittle Miz Helen's Kitchen Ingredients 1 1/2 cups sugar 1 cup light corn syrup 1 cup water 1 teaspoon vanilla 1 1/2 teaspoons baking soda 3 tablespoons butter 2 cups mixed nuts or peanuts Directions Butter two 15 X 12 cookie sheets and keep at room temperature Mix the baking soda and the vanilla in a tablespoon water and set aside In a very heavy sauce pan, mix sugar,corn syrup and water. Cook over medium heat stirring until the mixture reaches 240 degrees on the candy thermometer, or drop a small amount of the mixture into a cold cup of water and it should form a soft ball Stir in butter and nuts, cook stirring constantly to 300 degrees on the ...

What a week we have had here in Texas, the new Ice Capital and home of Cobble Stone Ice Streets. I am just so grateful that we did not have to be traveling and could be at home all cozy in our little cottage. We have been very blessed here at the cottage we have been warm and cozy not having to get out in this terrible weather. Pfeffernusse

Pfeffernusse (Pepper Nuts), say Christmas Cookies at our cottage. When my children were very small my friend Pat and I made these little cookies together every year, it was a fun event that we always looked forward to. When I visited Germany it was wonderful to have the real Pfeffernusse from the little bakeries and to find that my friend Pat and I had been making really good cookies all these years. Our recipe has taken on more of a regional flavor but remains true to the original cookie. As the years have passed and our children are now grown with children and grandchildren, Pat and I are still making our little cookies. Although we have both moved away from the little town where we first met, every year when we make our cookies we give each other a call and say, its cookie day, I'm making the cookies today. Pecan Cobbler

We had a bountiful pecan harvest in our area this year and the pecans are so good. We love to sit on the porch and shell pecans, eating a few along the way of course. I wanted to make a different pecan dessert with all those wonderful pecans so I developed this Pecan Cobbler. It has a rich thick cobbler topping with a thin pecan pie filling on the bottom and all those wonderful pecans on top. The dessert is very rich and is filled with the warm spice of fall.
