Cajun Cabbage

We can't seem to get enough cabbage this time of the year. We have had some wonderful cabbage from our garden, so we have opportunities to use the cabbage in many different dishes . Cabbage dishes come from just about every cuisine, Polish, German, Irish and American. In seeking to develop a new cabbage recipe, it just became Cajun Cabbage along the way. My husband and friends just loved it and said they will be asking for this one again real soon, I am exited to share it with you today. Baked Creamed Cabbage and Potatoes

We have some beautiful collard's and cabbage in the garden, and I love bringing one of those pretty cabbage heads into my kitchen and creating a fresh dish. I decided to make an old family favorite for you today and it is pure Irish comfort food. I remember eating this dish at my Irish Grandma's house and my Mother made it often for my Dad, he just loved this dish. Are you getting your green ready? Monday is St. Patrick's Day and we are celebrating here at The Cottage. We have traditional food that we always make on St. Patrick's Day and have fond remembrances of our Irish family members. We have been real busy here in the garden getting all the spring beds cleaned and ready for planting. One of the new fun things that we are working on is our little green house, you will be hearing more about that as we go along. We better get busy on this meal planning for next week before we head out to the market. Food of The World: Ireland

I am very excited to be visiting Ireland this month as we explore Food of The World. Irish cuisine is influenced by the food that is grown and the animals that are raised on its farms. During the middle ages an individual's social standing was often times gauged by the number of cattle a person owned. The Irish potato dates back to the 16th century. Potatoes were combined with stews, kale, cabbage and other meats and vegetables to make hearty meals for the farmers. Blackberries are another plentiful crop grown in Ireland. In late August the berries are being picked from the hedge rows of beautiful blackberry bushes all over Ireland. My Irish Grandma made this Irish Blackberry Crumble Cake that I am sharing with you today. Irish Blackberry Crumble Cake

When I was a child and we would visit my Irish Grandparents we could always plan on a great meal and entertainment after the meal. My Grandpa played a fiddle, a couple of my Aunts played guitar and my Dad played piano and the rest of us sang, all the old Irish tunes that had been passed down through the generations. One of the activities that all the Grandchildren enjoyed in the summer was picking blackberries.There were hedge rows of blackberries that were heavy with the most beautiful berries. We would pick the berries and my Grandmother would make this cake and tell us stories about how the very same blackberry bushes could be found in Ireland. She would tell us about picking blackberries on her parents farm in late august and the row after row of beautiful blackberries. Now when my Grandchildren come to my garden and we pick the blackberries together I tell them the story of Ireland and the beautiful blackberries, then we take the berries in and prepare the Irish Blackberry Crumble...

We are so excited here at The Cottage, we have our first blooms of Spring! We had so much fun last week with our friends and some awesome Madri Gras celebrations.
