Chocolate Cream Pie

To look at my slim "Honey Bunny" you would think that he never has anything sweet, but that is not true. He is one of those fortunate people that can eat and eat and never gains an ounce. He is great to cook for because he just loves food. One thing he likes is his dessert, every evening he wants a nice dessert after dinner or for a bedtime treat and sometimes both. I recently made this delicious Chocolate Cream Pie for him and he just loved it, and so did I. It's an oldie but goodie from my recipe box.

We have just had a wonderful rain that we really needed for all of our plants and vegetables for our yard and garden. There is a certain freshness that comes after the spring rain, there really is no other smell like it. I'm so happy that you were able to stop by today to have tea with me. Ranch House Casserole

I just love a casserole that I can put together with things that are in my pantry and refrigerator without having to make a special trip to the store. This is a casserole that can be served for company, go to the club or church covered dish dinner, or a nice week night family meal. I have made this casserole for years and we love it every time I make it, and I sure hope you enjoy it. Swiss Strips

This is a great recipe to take to a covered dish function, or just have waiting at the end of the day. We are so fortunate to recently have got a grass fed beef from a friend. They butchered it about 6 weeks ago and we picked up the beef this past week at the butcher and locker shop. It is great beef that we don't have to worry about what kind of food the animal has been fed. This is a favorite recipe here and I sure hope you enjoy it. Southwest Spoon Bread

Spoon Bread is a great old southern bread that is often times used as a dessert or a starch side dish. I love a spoon bread it is crisp on top with a nice soft inside. When I decided to develop this Southwest Spoon Bread I wanted it to be full of flavor but maintain that same crisp with a soft inside. I believe my goal was reached. I hope you enjoy it. It has been such a special time for us, our Grandson Jerame is on break from college and has come to spend a few days with us. Jerame is a Sr. Engineering Student at U of F "Gator Nation". Of course we are very proud of him and just love spending time with him. Like any Grandparent I will just go on and on, so we better get busy with this menu before I forget what we are here to do. Monday  Pinto Bean Soup Miz Helen's Kitchen The Pinto Bean Soup 2 cups of dried Pinto Beans 8 cups water 1 medium yellow onion chopped 3 cups stewed tomatoes and green chili's 3 cloves garlic minced 3 teaspoons chili powder 2 teaspoons salt 1 teaspoon pepper 11/2 teaspoon ground cumin 1/2 teaspoon oregano Sort and rinse the beans really well. In a heavy dutch oven bring 8 cups of water to the boil add the beans. Boil for 10 minutes, cover and turn off the heat, leaving the dutch oven on the burner. Let the beans stand for 2 hours.
