Chicken Taco Lettuce Wraps

I just love lettuce wraps and this Chicken Taco Lettuce Wraps is one of my favorites. The use of the chicken in the recipe gives it just a little lighter calorie count. The recipe has all the seasons of a great taco just without the tortilla. This makes a great wrap and chopped up together makes a fantastic taco salad. Either way you have this recipe it will keep you coming back over and over. This is one of my favorite go to lunches. I keep some of the chicken taco mix in the freezer in individual serving bags, so it is a grab n go any time!


Miz Helen's Slow Cooker Brisket

This is one of my favorite Slow Cooker Brisket recipes. The flavors in this recipe are delicious and allows you to use the brisket in several different ways.The brisket is perfect for street tacos, or just sliced and served with sides. For this post we are serving brisket on a bun with Cole slaw and topped with the onions from the brisket pot. Serving on the side  Marinated Veggie Salad and Grilled Corn with Dill Butter , what a delicious meal!


Whats For Dinner Next Week, 4-28-19

I just got a cup of tea and settled in on the screen porch to make my meal plan for the week. It is raining, not hard but just a nice slow spring rain, it is really cozy sitting on the screen porch when it is a nice slow rain. I am looking at the garden plot that is ready to plant and we can't get a break in the rain so we can get it planted for this year, maybe soon. We will be enjoying some Tex Mex recipes this week leading up to the Cinco de Mayo weekend.  I checked on my pantry and freezer inventories earlier and I do have some fresh spring greens growing in garden tubs, now we are ready to get started.

Welcome to Full Plate Thursday and our Top Ten Week! On The last Thursday of the month we always feature our Top Ten Post from the week before and this is that week already! We are having a great week here at the cottage, enjoying a slower pace after the holiday rush. We are actually able to be outdoors and to spend some quality time on the screen porch. Come on in and have a nice cup of tea we are on the screen porch today and I can't wait to see what you will  be sharing with us today! 


Salsa Chicken Skillet

Salsa Chicken Skillet is one of those recipes that goes together in no time and your family can be enjoying the meal on a very busy day. The chicken has a very special rub that gives it lots of Tex Mex flavors. After cooking, it simmers with some salsa and cheese, to top off a great recipe. Just add some lime and cilantro with a sliced avocado and this is a plate full of goodness. I have added one of my favorite rice casserole recipes to the meal that really compliments the chicken.


Green Pea and Ham Couscous Salad

This is a great recipe to use up some left over ham and enjoy some green peas and couscous. Our Green Pea and Ham Couscous Salad is perfect for a luncheon, covered dish event or a family get together. The salad is really better if you make it ahead of time and let it sit overnight if possible or as long as you can before serving. The combination of flavor in this salad makes it very special and one that your guest will ask for over and over. We love this salad here at the cottage and through the years it has become one of those go to recipes.


Whats For Dinner Next Week, 4-21-19

Hope that all of you are having a wonderful Passover and Easter weekend with lots of good food and fellowship. When I think about making this meal plan I want to use some of the left overs from the weekend, sometimes the left overs are the best. I am looking forward to a very restful week after being so busy getting ready for the holiday's. I am headed out to the gardens to see what veggie I might be able to use this next week in the meal plan.

Welcome to Full Plate Thursday and a very busy week with Pass Over and Easter. We are very busy here at the cottage getting ready for all the festivities. We sure had some fantastic recipes and decor post last week that I hope will help you with your holiday plans. Mini Fruit Tarts

These are very special Mini Fruit Tarts that can come to any party. They will be great for a dessert buffet,a shower, a special luncheon or just a fun night for the family. A perfect one or two bites and they are so easy to make. The crisp little tart shell is filled with a very creamy filling and topped with delicious fresh fruit. They do come with a warning, just slightly additive, we usually can't stop with just one or two, they are just so good!


Sausage and Biscuits Breakfast Casserole With Pepper Gravy

There is nothing like sausage, biscuits and gravy for a very southern breakfast. This casserole has all those wonderful elements rolled into one casserole that is absolutely delicious, then we drizzle Pepper Gravy over the serving to top off the flavor. This is like sitting down to Grandma's table with everything in one nice baking dish. A breakfast casserole is always a great way to feed a large group for breakfast or brunch. We will be serving this casserole next weekend to a large group and I know they will love it. 


Whats For Dinner Next Week,Plus Easter

We are getting the cottage ready for the Easter weekend with all the special feast and events of the season. Easter Egg hunts, with the bunnies hopping all around to the Easter Dinner that we always look forward to. We usually have around 20 to 25 on Easter and this year that number is greatly diminished. It is a really busy time of the year for family that live so far away. I am including the Easter Dinner Plan with this meal plan so that we can all get our marketing done and know exactly what we will be having over the big weekend. There will be some desserts and dishes that can be made ahead of time and that will really help with the meal preparation and we can achieve that by simply making  a meal plan, which I hope you will be doing along with me.

Marinated Veggie Salad

Our Marinated Veggie Salad is a fantastic salad recipe that is limited only by your imagination. I love to keep some of this salad in the refrigerator during a busy week, Just take some from the jar, spread it on some greens, add a little feta and it is a delicious salad. The jar of marinated veggies will easily go into any picnic basket to give you a great side for the special picnic. This will also be a great bowl of salad for a covered dish, or a side dish for a family dinner. This is a great make ahead recipe that you will want to use over and over. We love this recipe and you can find it in my refrigerator most of the spring and summer for sure.


Egg Nest Cupcakes

Egg Nest Cupcakes can be a very special little treat for any Easter function, brunch, lunch or a special Easter Egg Hunt. These are very simple but delicious cupcakes with a delicious buttercream frosting. We are topping them with some toasted coconut and having fun hiding little candy Easter eggs in the coconut. The kids will have fun helping you decorate the cupcakes and they are so good! A really good thing about these cupcakes, they can be frozen until time to use, a great make ahead treat!
