Spicy Baked Cabbage
The last few weeks the Farmers Market has had the most beautiful fresh cabbages. I just could not resist coming home with some of those cabbages, we love cabbage, boiled, baked, or in a cole slaw. This is a spicy recipe that makes a great side dish for any meal. We love this dish and I am happy to share it with you today.
This Cabbage Dish Has Layers Of Flavor

Spicy Baked Cabbage

Ingredients
1 head of cabbage
1 tablespoon salt
1 teaspoon pepper
1/4 teaspoon cayenne
1 cup apple juice
2 tablespoons butter
For The Sauce
2 tablespoons butter
2 tablespoons flour
16 ounces cubed American cheese(Velveeta)
1 cup Monterey Jack Cheese
1/2 cup pickled jalapenos, chopped
1-1/2 cups milk
Directions
Clean the cabbage and cut in wedges leaving the core in tact.
Very carefully place the wedges in a medium size and cover with water.
Add the salt, pepper, cayenne and butter. Bring the cabbage to a boil, reduce to medium heat and cook until tender leaving the wedges in tact.
Carefully remove the wedges to a lightly oiled 9X9 baking dish.
Pour the apple juice in the baking dish and cover it.
Bake at 350 degrees for 15 minutes. Remove from the oven and uncover the baking dish.
Pour the sauce over the cabbage and sprinkle with Paprika.
Return to the oven un-covered at 350 degrees for 15 minutes.
Serve any remaining cheese sauce on the side.
For The Sauce
Directions
In a medium saucepan place melt the butter and stir in the flour making a rue.
Add the milk and stir until the mixture is completely mixed.
Stir in the cheese and stir constantly until the cheese is melted.
Stir in the jalapenos.
