Retro Vegetable Chowder
Our Retro Vegetable Chowder takes me back to my young homemaker days. This is an easy chowder to put together with some simple garden vegetable's covered with a great white sauce and garnished with a sprinkle of cheese. This recipe brings back some memories of my kids, all bundled up from the cold, coming home from school and sitting them down to this warm bowl of chowder. Today they are feeding their kids this same recipe. Its a favorite with our family!

How To Make
Retro Vegetable Chowder
Add the broccoli florets to the mixing bowl.
Add the garden fresh pearl onions to the mixing bowl.
I have upgraded my shredder since those Retro days.
Add the shredded carrots to the mixing bowl.
Mix the vegetables together and
add the salt, pepper and thyme mixing well.
Add the olive oil to the stew pot and heat to medium high. Pour the mixed vegetables into the stew pot and
sauté the vegetables until they begin to
sear just a bit on the bottom of the vegetable.
Pour the chicken broth into the stew pot
with the vegetables and stir well.
Bring the mixture to a boil. Reduce the heat to medium or medium low and place the lid on the stew pot.
Cook for 20 minutes stirring occasionally.
In a separate sauce pan, melt the butter, then whisk in the flour until the butter is absorbed. Whisk in the milk and continue to whisk un the sauce is completely smooth. Pour the sauce into the stew pot and gently fold it into the chowder. Continue to stir for a few minutes until the vegetables are covered well. Place the lid on the stew pot and the heat on simmer or warm .
Just before serving salt and pepper the chowder to taste.
