Cranberry Nut Bites

Every year the Saturday  evening right after Thanksgiving our little community has a tree lighting.The lights on our Community Tree are turned on, then we all go inside for hot chocolate, little treats and Christmas Carols. Everyone brings little treats which is almost the best part. I brought my Cranberry Nut Bites and I am sharing the recipe with you.  Cranberry Nut Bites   Lets Make These Awesome Little Treats! Mix Bake Cranberry Nut Bites Miz Helen's Kitchen 2 cups all purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon salt 1 teaspoon ginger 2 teaspoon cinnamon 1/2 teaspoon ground nutmeg 1/4 teaspoon cloves 1 cup granulated sugar 1 cup brown sugar 2 sticks unsalted butter melted and cooled 4 eggs beaten 2 cups pumpkin puree 1 cup dried cranberries 1 cup pecans toasted and chopped Mix the first10 dry ingredients. We love the little East Texas community of Edom. It is off of State Highway 175 winding back into the woods of East Texas about a 2 hour drive out of Dallas, perfect for a Day Trip. Now you would never believe that nestled back in these woods you would find the Official Chef of the Great State of Texas...but that is where he is and that is our mission for today. Meet Chef Jackson York Official Chef of Texas 2010 Chef York is the Chef at the well known Edom Bakery and Grill in Edom, Texas. We have been stopping by the Bakery and Grill for years to have their wonderful baked goods, lunches and dinners. Today we asked the friendly hostess if we could meet Chef York and she said she would see if he could come out to speak with us. We had a great visit with Chef York, he is very personable and has the greatest smile.
