Brown Butter Custard Pie

When old friends are coming to visit us here at the cottage we will often times ask them what special recipe they would like to have. My friend Molly recently asked for her favorite, a Brown Butter Custard Pie. I was so happy to make it for her it is a very simple pie with a great custard flavor. This is a very old recipe that has been handed down to me. It is very creamy on the inside with very warm flavors. I will often times garnish it with a little fruit that is in season.

Whats For Dinner Next Week, 8-19-18

We finally got some rain and are so grateful for it. Our Granddaughter who lives in Conklin, NY got so much rain it flooded their basement and her husband had to be rescued from the roof of the barn. Thank God everyone is safe, and we thank all those that were praying with us for their safety. I am headed out to the garden, although there isn't much left of it for this year, most of it just burned up. We will have some garden vegetables that will come to the table to make great meal for the family this week. Hug your kids and Grandbabies when you can, life is full of bumps in the road.

The middle of August already, its like the 2 minute warning in the game, just a few weeks of summer before fall is here. There is almost a scramble to get in as many fresh fruits and vegetables while the season is still here. Nana's Squash Casserole


We grow different varies of squash in our garden each summer and I love making fresh casseroles of squash for a meal. I have been making this recipe for years and through those years I have changed it in different ways, but the combination of ingredients that I am sharing with you today is one of my favorites. This Squash Casserole has a very rich creamy inside and a buttery crunchy topping, it is just delicious!

This recipe is for one of those days when you need something fabulous to put on the table and not to long to do it in. Our Salsa Pork Chop Skillet is easy to put together and will be on your table in no time. The great flavor of these chops is seared in and then allowed to simmer with a flavorful salsa. This recipe can feed a large or small family, for supper or dinner which ever the event.

Whats For Dinner Next Week ,8-12-18

We are praying for rain here, when I walk across parts of my grass it is just like powder. We have completely lost parts of our garden we just didn't have enough water to keep it alive. We are heading to the grill and the slow cooker this week and looking for a lot of flavor in the meal plans. I may have to visit a Farmers Market for some of my vegetables, but we have a great market near by. I am headed out to take the inventories of garden vegetables, freezer foods so we can get started with out meal plans.

Melon Salad with Basil Dressing

We really enjoy our melon's in the summer time. There is nothing better than a Black Diamond Watermelon form central Texas or a Cantaloupe from the valley of Texas. Both of these melons are delicious all on their own but they make a great dish when mixed together. Our Basil made from the fresh Basil in our herb garden make this Melon Salad a very special side dish for any meal.

Old Fashioned Peach Bars


We love peach season and the wonderful recipes that we can create from the delicious peaches. This is a recipe that is made with fresh or frozen peaches so that you can enjoy these tasty treats the year round. We have enjoyed these bars at family gatherings, church pot luck dinners and around our table, they are a delicious treat. The flavor of these bars bring me back to my Grandmothers table when she would bring these bars in to serve at a family dinner, great food memories, I can still see that smile on her face. She loved to cook special treats for her family and friends, and so do I.

Whats For Dinner Next Week, 8-5-18

We have had the hottest temperatures with no rain to set a historical weather record. I am not outdoors today but rather sitting in my cozy office under the cooler and so grateful for cool air. When I think about making a meal plan, I just want it to be something easy and cool. My Micro Wave is a combination Confection Oven and in these hot times it really comes in handy, so I can bake without the heat in the kitchen. August is here already, my goodness! There was a time when August meant the last month before school starts now it means in a couple of weeks school starts and summer fun comes to an end. Cajun Fried Okra

We grow okra in our garden every year so this is a perfect recipe for us to enjoy. Our family has always enjoyed fried okra and is often  a side dish for a family dinner or a great appetizer.  Okra is one of the high fiber foods that is really good for you and we love it here at the cottage. This recipe is full of flavor and can be seasoned to your taste, we like it spicy. I usually make a double batch of this recipe because it is great to snack on the next day.

Tomato Basil & Cucumber Salad


Tomatoes, cucumbers and basil all these wonderful flavors are one of my favorites. I came in from the garden today with all the ingredients for this delicious salad. This salad has a very special vinaigrette over the mix to put it over the top.  Our family has made this recipe for years and it has gone on the table for family and been carried to potluck dinners for everyone to enjoy. I don't recall ever bringing a bite of it back home from a function. It is a fresh flavorful salad and although we make it from our garden vegetables in the summer the ingredients can be found in your super market the year round.

Whats For Dinner Next Week 7-29-18

We spent a few days last week visiting with family in South Texas. It was really great to get away for a few days and visit with some family that we don't get to see very often. On Sunday I got to enjoy my birthday with lots of family which was so special for me. So now we are back home and I can't believe that this will be the last few days of July.  Making a meal time for this time of the year is so easy with so much fresh produce available. We brought back some amazing peaches with us so I will sure be finding a spot for them on my meal plan.

I stood on a stool when I was a small girl and watched my Mother load jars into a large kettle that set on a small 4 burner stove. I remember how beautiful the jars looked in the sunlight as they cooled on the counter. Canning and Preserving food has been a big part of my life growing up and it continues to be today. Canning and Preserving food is almost a lost art in our society today, which makes it important to me to be able to pass these recipes along to friends and family.

Slow Cooker BBQ Pineapple Sausage


If it is a slow cooker day this recipe is a real winner here at the cottage. The smoked sausage in combination with the pineapple,other vegetables and sauce is cooked slowly, blending the flavors to a delicious finish. This recipe is quick and easy to put together and is ready in only 4 to 6 hours. When you walk in the door the smell of this recipe will bring you into the kitchen in search of the awesome dish that is coming, well that's what my husband did. When he walked in the door he came into the kitchen saying, what is that it smells so good, when do we eat?

Garden Squash Gratin

We have the most beautiful garden squash that are just perfect for this awesome recipe. I love going to the garden and coming to the kitchen with fresh vegetables to make a very special recipe for my friends and family. This is a great squash dish that have just the right balance of seasons to give it a very delicate flavor. The squash is creamy freshness with a crunchy top. This is a great dish to have for a family supper or a cover dish get together.

Cheesy Jalapeno Bacon Cornbread Salad


This is a salad that becomes a meal, it is delicious! We are using a very special cornbread as the base of the salad and adding garden fresh vegetables to make this a very tasty and filling salad.  This is a great make ahead salad that can be made the day before and ready to go to the party or set on your dinner table. This salad is perfect for a family lunch or dinner and has been a big hit at potluck dinners.

The cottage is a buzz this week, we have had some rain and the garden needs attention. We are trying to get our harvest in before the summer heat takes its toll on the delicate plants. Cheesy Jalapeno Bacon Cornbread


Cornbread is a staple here at the cottage so we like to change it up and spice it up just have fun with the flavors. The cheese and jalapeno in this recipe is a great combination then add the crisp bacon and that sends it over the top. Since I developed this recipe it has become one of our favorites. If you are a cornbread lover this recipe will be a must try for you and your family.

Grilled Spicy Pork Chops


These Grilled Spicy Pork Chops have the best flavor of any grilled pork chop that I have ever had. Now I have had a lot of pork chops in my day, but really these are fantastic! Its the rub that makes them so flavorful, they look burned on the outside but they are not, it is the rub, inside they are so tender and juicy and that flavor is deep into the chop. We are paring them with some grilled peaches today to make this a very special plate of goodness!

Whats For Dinner Next Week, 7-8-18

Our 4th of July Celebration was awesome, and now it is really quiet after all the fireworks stopped and the visitors have returned to their homes in the city. We are under a burn ban in our county and it is hot here. We are going to keep our meal plans cool and simple, trying to just take it easy this week. I will be doing a little canning this week to try and preserve some of the harvest of our summer garden.

Blackberry Swirl Frozen Pie


We are having a fantastic blackberry harvest this year and the berries are exceptionally sweet this year. We do love our blackberries and always look forward to the harvest and the opportunity to develop some special treat with the berries. This year our special blackberry treat is this awesome Blackberry Swirl Frozen Pie. It has a delicious lemon base with our special blackberry jam swirled into the pie to make this an exceptional pie. You can pull this make ahead pie from the freezer for your unexpected guest. This is a wonderful dessert that I hope you enjoy as much as we have this is a great garden to table keeper!

Cheesy Onion Burger

My husband and I really enjoy grilling burgers and developing different recipes that are full of flavor. One of our favorite burger recipes that we have developed is our Cheesy Onion Burger. This burger is easy to put together we just add our garden onion, lettuce and tomato with some cheese, plus a great surprise in the center. This is a burger that our friends and family always come back for seconds.

Mandarin Surprise Dessert

My husband loves Mandarin Oranges and consider's them a treat. He will put them on top of his nightly bowl of Blue Bell, they appear on his dinner plate and a side for breakfast. I wanted to make a special little dessert for him to surprise him with his favorite Mandarin Oranges. This is a very simple dessert that will be a great treat for a special husband or great individual desserts for a group of friends.

Grilling season is a fun time to be outdoors with family and friends enjoying some awesome food from the grill. Our Grilled Hawaiian Chicken has a great flavor that is enhanced by a fantastic glaze that can be used on many different grilled meats. We have been enjoying some great rain today and it has really cooled things down a bit giving me a chance to sit on the screen porch and spend time with you. Mixed Berry Cobbler


Our family love's cobblers, I remember when I was a young girl, we were never without a fruit cobbler at our family dinners. If it was summer, we would have fresh fruit cobblers and in the fall and winter it would be home canned fruit from last years harvest, but the cobbler was always delicious no matter what season it was.  We have fresh fruit right here in our garden and what we don't have our neighbors share with us, all the fresh fruit makes for great cobblers here at the cottage. Mixed Berry Cobbler is an old fashioned recipe with a combination of fruits that we have currently in harvest. The fresh flavors of this cobbler is amazing! Today with our farmers markets it is possible to find fresh berries almost year round, making it possible to make this cobbler recipe any time of the year!

Picadillo Sliders

If we are having a informal gathering for a group of friends or just a quick family supper, these little Picadillo Sliders are the best. I have combined this flavorful Latin American and Cuban dish to make these delicious sliders. This is a great recipe that takes very little time and can  be served right away either as a slider or on a larger bun. We have even used this awesome sauce as a pasta sauce and it is delicious. This is one of those recipes that can really work for you, a great go to meal.

Its Fathers Day Weekend and the guys get to pick the menu, that may be scary could be we end up with 3 starches or an all carb meal or maybe with my husband it would be just pie and Blue Bell. We will have to wait and see what they end up with, (help)! I have started to do a little canning as we are having a big tomato harvest this year. Peach Hand Pies


I spent a lot of time with my Grandparents on their farm when I was a young person, and one of the wonderful memories I have is going to the peach orchard with my family and picking peaches. My Grandmother would make many different recipes from the peaches but one of my favorites was her hand pies, or her Fried Peach Pie. This recipe is very close to my Grandmothers recipe, but my pies are not fried, they are baked. They could easily be fried but we enjoy them baked and the spice mix for this pie will have you asking for seconds!

Whats For Dinner Next Week 6-10-18


We are having a little morning shower and that means we don't have to water the garden today. I was in the garden earlier to check what will be available for my meal plan, it started raining so I have retreated to the screen porch to write my meal plans for the week. I will be including some great fruits and vegetables on the plan this week. Looks like we will need to include a nice indoor meal for a rainy day. Meal planning sure makes my life easier and helps to keep our family organized.
