Chicken Salad with Fall Salsa

We often times enjoy a lovely salad for lunch or a light dinner. I try to keep some ingredients on hand that I can make one of these salads in just a few minutes as most of the time when I have a salad like this it is a very busy day. I like to keep salad greens and chopped vegetables and fruit on hand in the refrigerator ready to go into a great salad. Another thing we keep on hand is poached chicken breast that we can slice or dice to use in a salad, casserole or soup. These things make putting a great meal on the table in a hurry a lot easier. This is one of the awesome Chicken Salads that I made recently and used one of my new Fall Salsa's to top it off. It is delicious and I sure hope you enjoy it!

Fall Salsa

We love a great salsa here at the cottage and this Fall Salsa is so versatile and delicious that I actually keep some on hand in the refrigerator and have used it in so many different ways. This salsa is a blend of fall fruit and a flavorful dressing that make it a real hit!

Whats For Dinner Next Week,10-14-18

When I started the meal plan for this week, I immediately thought of some comfort food. It was a really rough week last week with the horrible storms hitting our Gulf Coast and leaving such devastation. While in the military we had lived in that area at one time,then later having family members stationed in the area as well.Our hearts just broken when we saw so many of the places we loved gone forever. Our thoughts and prayers continue to go out to all the folks on the coast as they begin to re-build their life.

Pumpkin Sugar Cookies

When the pumpkins start showing up at the Farmers Markets I know it's time to get all the pumpkin recipes out and get to cooking. This year I decided to make a new pumpkin cookie, just a real simple soft sugar cookie that is filled with a pumpkin spice and flavor and then cover with a flavored sugar. It really doesn't get much better than this, and I already know that I can't eat just one of these cookies!

Southern Natchitoches Cajun Casserole

If you have ever been to Natchitoches, Louisiana or heard of it you know that they are famous for their delicious meat pies. Every year the community has a festival that surrounds their little meat pie that originated when the French settled in their area in 1714. The filling that goes into these little pies is simply delicious and our family loves the Natchitoches Meat Pies. We recently had a family gathering and some of the folks wanted the pies and I just did not have time to make that many little pies, so I developed the Natchitoches Cajun Casserole, everyone loved the casserole and it is sure easier and quicker to make than all those little pies. In addition I found that it freezes really well and can be made up ahead of time, lots of great recipe features!

Whats For Dinner Next Week, 10-7-18

We have had a very special week here at the cottage. Our youngest son was able to come and spend some time with us and we got to celebrate his birthday while he was here. These are special times for us as he lives across country from us. We will be planning some awesome meals for this coming week, fall has really arrived and the air is starting to be a little crisp in the mornings. It is nice to include the fall recipes and vegetables in the meal plan again.

Vintage Apple Cobbler

My Aunt Ann wrote that when my Grandmother finally gave her this recipe, it used terms like stoke up the fire in the wood stove and use the fresh milk from this morning's milking. Be sure and use the fresh apples from this years harvest and be sure and set the peelings aside for the preserves and jelly. Well certainly some of our methods have changed but the basics of this recipe are the same. I can still picture my Grandmother taking out a fresh baked cobbler from the old wood stove that sat at the back of her kitchen and the smell of that cobbler, oh my goodness I would sure love a serving of that cobbler, so lets just make it!

Whats For Dinner Next Week, 9-30-18

We are excited here at the cottage to be going into the first week of October. Our Farmers Market are beginning to look like fall  has arrived. I have enjoyed going through my fall recipes looking for our family favorites and adding new recipes that our family will enjoy. I will finalize my fall pantry inventory this week and restock the items that I use more in the fall months. I like  to keep a fully stocked pantry so that I have the ability to prepare meals and meal planning in a more efficient way. I am about to take a very flavorful apple pie out of the oven so lets get started!

Nana's Mac N Cheese

I was helping one of my Granddaughters with some recipes the other day and she wanted my Mac N Cheese recipe. After she asked me for it I realized that I did not have it on my blog yet, so I got busy and am posting it today. I can't remember how many years ago I started making this recipe, but through the years I have changed it from time to time as new ingredients come on the market, but the basics of the recipe have remained the same. We still love our Mac N Cheese and this is definitely one of our family favorites.

Spicy Pumpkin Cake

It's officially fall and when the pumpkins start showing up in the Farmers Markets along side the country roads, it is time to get out the pumpkin recipes. The Pumpkin Cake recipe that I am using today was my Aunts recipe that I have made a little easier, and gave it a fantastic frosting.  Aunt Ann you will never recognize your recipe, but I will never forget where the inspiration came from and the wonderful role model that you were for me, thank you!

I have been recently mentoring a working Mom on meal plans for her family, when she found meals were unplanned, and the dinner hour being moved later and later. Meal planning will enable her to know exactly what will be served every night and what time it can be on the table. Welcome To Full Plate Thursday!

I know it is supposed to be fall but our temperatures lately are more like summer. I had a garden helper with me in the garden this week to help clean out some none producing plants and it felt like August had never left. All of those temperatures don't keep us from starting to really enjoy our fall foods. I see more and more pumpkin and apple recipes appearing and mercy I love them all! Southern Potato & Sausage Gravy With Buttermilk Biscuits

I have watched my Mother, Grandmother and other family members make this dish for breakfast, lunch or supper, and for me, I will eat it anytime, it is just that good. It is served on a fluffy hot biscuit or a crisp slice of toasted bread and no matter when you have it, this recipe is pure comfort, southern style!

Sloppy Joe Sliders

Sliders are the greatest little sandwiches, that are just enough and not to much. They are great to serve for a big game day crowd, a book club evening, or maybe a friends and family game night. We recently had a gathering with some friends and these little Sloppy Joe Sliders were a great hit. Lots of folks have their very own family recipe for Sloppy Joe's and they are all very similar, but this is our recipe that through the years we have come to love.

We had the greatest visit with our family last week while we had a week long celebration for my husbands birthday. So right now the cottage is pretty quiet and gives us a chance to reflect on how special our family visits are and how we treasure the memories. Some of those memories for us are always the food, old and new recipes to form those lifetime memories, just one more reason I am a meal planner, enabling us to have some of the old time favorites and the explore the new recipes.

Slow Cooker Cream of Squash Soup

This is a very special garden to table recipe with the fullness of the harvest. We are taking a couple of varieties of squash, colored peppers, and some other flavors added to make this a delicious garden soup. When I come in from the garden with a basket full of vegetables it is always so much fun to see what we can create and today it was cream of squash soup and to save time, it went in the slow cooker. We have loved this recipe and will be making it over and over!

Salisbury Steak and Gravy

Some number of years ago my husband and I went to a little Mom and Pop restaurant that had the best food. One of our favorites was their Salisbury Steak, which we frequently ordered. Long after they had closed their restaurant we still talked about the delicious Salisbury Steak that we would get there. I began a quest to try and make a Salisbury Steak that would be very close to the one we enjoyed so much and I finally got there. This is a great recipe that is so full of flavor and a gravy that sends it over the top. Now we can enjoy the steak along with all the wonderful memories we have from those days in our life.

We have had some rain this week and it is so nice, we really needed some rain. Slow Cooker Green Chili Taco Filling

I love my Slow Cooker and the freedom it gives me to fill it full of goodness and walk away while it works its magic. This Taco Filling is a great recipe to make for a Taco Buffet, for the big game day, for a family supper or for the freezer. I have a bag of this filling in my freezer all the time for those times when we need a little extra help for a busy day. This recipe is filled with a great Tex Mex flavor and is a hearty filling for any Taco, topping for a Burrito, Tostada or added to a Queso, it is a winner every time!

Salsa Verde Breakfast Casserole

My granddaughter is coming for a visit very soon and she love's Tex- Mex, but she lives up North so doesn't get real Tex Mex very often. I wanted to make a real special Tex Mex breakfast casserole for her and this recipe turned out to be a delicious casserole that we all just loved. This casserole has layers of sausage, eggs, vegetables and great Tex Mex flavor. One thing that I have loved about this recipe is that it freezes so well. If we have left over's I just freeze it in individual freezer bags and breakfast is ready for a grab n go. This is a great recipe that I hope you enjoy!

Happy September!

Meal planning is important this week, because of the Labor Day weekend and celebrations. It will be the last big weekend at the lake so it will  be very busy here at the cottage. Fresh fruits and vegetables are still available in our gardens and local farmers market, so we have a few more weeks of enjoyment. We will be planning some old favorites for the week as well as some new ones. It will be a fun week!

Zucchini Toffee Cake

Zucchini is plentiful in the garden right now, we have been having some great squash this season. I love to develop recipes that use fresh fruit and vegetables from the garden to the table. This recipe is packed with flavor from fresh zucchini, banana's and kicked up with some chocolate and toffee. A very moist and delicious cake that can be served for any occasion. I sent it to work with my husband the other day and he said it was gone in less than 5 minutes, so be sure and get your piece first!

Veggie Tostada's

I think that being a vegetarian would be so easy for me in the summer, because there are so many wonderful fresh vegetables that I love. This Veggie Tostada recipe is filled with fresh from the garden vegetables with just a little Mexican spice that just put's this one over the top. We have topped it off with a fantastic Mango Salsa that is always a winner. You don't want to miss this combination!

Whats For Dinner Next Week 8-26-18

Where did it go, the summer that is, here we are at the last week of summer. I find that summer is shorter every year, because I love the things of summer and never want them to end, except the extreme heat in August of course. I am going to enjoy planning the meal plan for this busy week coming up here at the cottage. We will be having a couple of day trips this week so my meal plan will have to take all that into consideration, sure am glad I can make the plan that helps the week run smooth.

Mango Salsa

Mango Salsa is delicious served as an appetizer with some chips or as a topper for meat, fish, poultry or just about any kind of Mexican food. The Mango's have been beautiful at my local Farmers Market and I just couldn't resist bringing some home to make our favorite recipe for Mango Salsa. This is the same recipe that I printed in my cookbook in early 2010, so if  you have one of those cookbooks the recipe is in the book. Brown Butter Custard Pie

When old friends are coming to visit us here at the cottage we will often times ask them what special recipe they would like to have. My friend Molly recently asked for her favorite, a Brown Butter Custard Pie. I was so happy to make it for her it is a very simple pie with a great custard flavor. This is a very old recipe that has been handed down to me. It is very creamy on the inside with very warm flavors. I will often times garnish it with a little fruit that is in season.

Whats For Dinner Next Week, 8-19-18

We finally got some rain and are so grateful for it. Our Granddaughter who lives in Conklin, NY got so much rain it flooded their basement and her husband had to be rescued from the roof of the barn. Thank God everyone is safe, and we thank all those that were praying with us for their safety. I am headed out to the garden, although there isn't much left of it for this year, most of it just burned up. We will have some garden vegetables that will come to the table to make great meal for the family this week. Hug your kids and Grandbabies when you can, life is full of bumps in the road.

The middle of August already, its like the 2 minute warning in the game, just a few weeks of summer before fall is here. Nana's Squash Casserole


We grow different varies of squash in our garden each summer and I love making fresh casseroles of squash for a meal. I have been making this recipe for years and through those years I have changed it in different ways, but the combination of ingredients that I am sharing with you today is one of my favorites. This Squash Casserole has a very rich creamy inside and a buttery crunchy topping, it is just delicious!

This recipe is for one of those days when you need something fabulous to put on the table and not to long to do it in. Our Salsa Pork Chop Skillet is easy to put together and will be on your table in no time. The great flavor of these chops is seared in and then allowed to simmer with a flavorful salsa. This recipe can feed a large or small family, for supper or dinner which ever the event.

We are praying for rain here, when I walk across parts of my grass it is just like powder. We have completely lost parts of our garden we just didn't have enough water to keep it alive. We are heading to the grill and the slow cooker this week and looking for a lot of flavor in the meal plans. I may have to visit a Farmers Market for some of my vegetables, but we have a great market near by. I am headed out to take the inventories of garden vegetables, freezer foods so we can get started with out meal plans.

Melon Salad with Basil Dressing

We really enjoy our melon's in the summer time. There is nothing better than a Black Diamond Watermelon form central Texas or a Cantaloupe from the valley of Texas. Both of these melons are delicious all on their own but they make a great dish when mixed together. Our Basil made from the fresh Basil in our herb garden make this Melon Salad a very special side dish for any meal.

Old Fashioned Peach Bars


We love peach season and the wonderful recipes that we can create from the delicious peaches. This is a recipe that is made with fresh or frozen peaches so that you can enjoy these tasty treats the year round. We have enjoyed these bars at family gatherings, church pot luck dinners and around our table, they are a delicious treat. The flavor of these bars bring me back to my Grandmothers table when she would bring these bars in to serve at a family dinner, great food memories, I can still see that smile on her face. She loved to cook special treats for her family and friends, and so do I.

Whats For Dinner Next Week, 8-5-18

We have had the hottest temperatures with no rain to set a historical weather record. I am not outdoors today but rather sitting in my cozy office under the cooler and so grateful for cool air. When I think about making a meal plan, I just want it to be something easy and cool. My Micro Wave is a combination Confection Oven and in these hot times it really comes in handy, so I can bake without the heat in the kitchen. August is here already, my goodness! There was a time when August meant the last month before school starts now it means in a couple of weeks school starts and summer fun comes to an end. Cajun Fried Okra

We grow okra in our garden every year so this is a perfect recipe for us to enjoy. Our family has always enjoyed fried okra and is often  a side dish for a family dinner or a great appetizer.  Okra is one of the high fiber foods that is really good for you and we love it here at the cottage. This recipe is full of flavor and can be seasoned to your taste, we like it spicy. I usually make a double batch of this recipe because it is great to snack on the next day.

Tomato Basil & Cucumber Salad


Tomatoes, cucumbers and basil all these wonderful flavors are one of my favorites. I came in from the garden today with all the ingredients for this delicious salad. This salad has a very special vinaigrette over the mix to put it over the top.  Our family has made this recipe for years and it has gone on the table for family and been carried to potluck dinners for everyone to enjoy. I don't recall ever bringing a bite of it back home from a function. It is a fresh flavorful salad and although we make it from our garden vegetables in the summer the ingredients can be found in your super market the year round.

Whats For Dinner Next Week 7-29-18

We spent a few days last week visiting with family in South Texas. It was really great to get away for a few days and visit with some family that we don't get to see very often. On Sunday I got to enjoy my birthday with lots of family which was so special for me. So now we are back home and I can't believe that this will be the last few days of July.  Making a meal time for this time of the year is so easy with so much fresh produce available. We brought back some amazing peaches with us so I will sure be finding a spot for them on my meal plan.

Glad to see you today and it is really good to be home. We took off for a few days and headed south to visit with some family and celebrate my birthday, we had a fantastic visit. Preserving and Canning Pickles, Relish and Salsa

I stood on a stool when I was a small girl and watched my Mother load jars into a large kettle that set on a small 4 burner stove. I remember how beautiful the jars looked in the sunlight as they cooled on the counter. Canning and Preserving food has been a big part of my life growing up and it continues to be today. Canning and Preserving food is almost a lost art in our society today, which makes it important to me to be able to pass these recipes along to friends and family.

We are blessed with a bountiful garden that makes it possible for us to preserve and share the harvest.
