Green Chili Vegetable Enchiladas


Our family loves this recipe and is a great dish for a meatless meal. Our Green Chili Vegetable Enchiladas are full of Tex Mex flavor and take no time to get them on the table. I have also used the filling for these Enchiladas in a casserole and it is delicious. Once baked these Enchiladas can be frozen for up to 3 months, a great dish of Enchiladas right out of the freezer for a busy day.

Strawberry Dessert Chalupa

I wanted to create a new Tex Mex dessert for some upcoming Mexican themed parties. Of course my official taster is my husband and he says this is his new favorite and I agree, it is delicious. This is a recipe that you can prepare all the ingredients ahead of time then put it together right before you serve. These flavors are amazing with a creamy filling and a crunchy base, to serve one or a crowd.

When I make my meal plans one of the first things I check is the weather, especially in the spring when we have so many storms. We love to cook outdoors but the weather does not always cooperate with our plans. This week looks like I will have to bring my grilling indoors for just a little longer. Sometimes I notice folks walking up and down the supermarket isles saying Whats For Dinner, I hope that is not you and we can inspire you somehow to start making meal plans.

We are so excited to see you today for Full Plate Thursday! We have had freezing temperatures one day and the next may be a beautiful spring day. I am a seasonal cook so one day it is a nice soup for a cold rainy day and the next is a wonderful salad that just says spring. Texas Wild Flower Chest

Some years ago we had house guest just about every weekend during the water sport season. When you live at the lake folks just love to come see you. Although we had plenty of space for sleeping, I found we needed a special space for the weekenders to have a space for their personal items that would be out of the way. That's when I had the idea of the chest and a different drawer for each person. I started with a raw wood chest and the project had it's own life  after that. It was such a rewarding project that is still enjoyed to this day.

Old Fashioned Carrot Cake

I was walking from the garden to the house the other day with handful of fresh carrots that I had just pulled from the garden and I thought about my Aunt and her love of carrots. She loved carrots and made the most delicious Carrot Cake so I decided to make an updated version of my Aunts Carrot Cake. Our family loves this cake and it never last very long. This recipe is very rich and moist with great flavors.

Whats For Dinner Next Week 4-15-18


I am just coming in from the garden with some fresh greens and can't wait to make my meal plan for next week. We love fresh fruits and vegetables and always try to include them in our meal plan to give us a healthy balance in our diet. We have had some lovely spring weather this past week and have really enjoyed our time outdoors in the garden and sitting on the screen porch once again after our long winter. I think we will just sit right here on the porch while we make this meal plan and have a cup of tea.

Chicken and Broccoli Alfredo Casserole


I love to have a go to casserole that I can put together in no time and it taste like you have been slow cooking it all day, this is definitely one of those casseroles. I keep 3 cup bags of cooked chicken in the freezer for salads, soups and casseroles, it really does speed the prep time along. This casserole has fresh broccoli with a great Alfredo sauce giving this recipe a delicious flavor!

Asparagus & Pea Casserole


The asparagus is wonderful right now and when we add some fresh peas to the mix it is a winner every time. I love the fresh vegetable combination with the rice and the flavorful cheese sauce that makes this casserole a great side dish. I have served this casserole with a nice salad for a luncheon and it was delicious. This is a great garden to table casserole that is packed with flavor.

It is so nice to sit on the screen porch and make this meal plan for next week. It has been raining just a little and everything looks so fresh.  Our garden looks great and we are already getting some awesome fresh vegetables. We will have a busy week coming up so I will be looking at that plus the weather. Italian Ricotta Cake


I love a cake recipe that is light and can be paired with some mixed berries and that is exactly what this cake is. This is a simple recipe that is very smooth and delicious garnished with fresh fruit. I have made this cake for ladies luncheons, and family dinners, it is a great recipe that we really enjoy!

Chicken Tetrazzini

This Chicken Tetrazzini was and still is today a family favorite at the cottage. It is a great dish that is layered with flavor. It is easy to put together and freezes well for a later warm up. I asked my son the other day what he wanted me to make for him when he came to see us and he said "that Chicken Tetrazzini", and of course I made it for him, and this one is just for YOU!

Welcome April!

Our cottage has been all a buzz this past week getting ready for this Easter weekend. It is great to make meal plans for holiday times when so many friends and family will be in and out of the cottage enjoying a real time of fellowship. We will have some things in our garden that will be ready for the big day so I will be sure and include those fresh vegetables when we can. Retro Kitchen Stool


When I was a young girl in high school our kitchen step stool sat right under the telephone that hung on the wall. Like many other teens in that time I would sit for long periods of time on the kitchen step stool while talking on the phone. Many long years later, we had to relocate my Mother to a senior community and we put all of the household goods in storage. When Mother passed away and we began to go through the household goods. The kitchen step stool was one of the items that I would not part with. It was beat up and battered, but held so many memories for me.

Bar B Que Brats & Beans


When the weather permits we head for the grill, but there are times when those best laid plans get rained out, then we head for the oven with our dish. Today I am heading to the oven with my Bar B Que Brats & Beans which has been developed as a result of the rain which we really need. This recipe turned out so delicious that we will be making it over and over rain or shine. It is so easy to put together, full of great flavor and a big hit with friends and family.

The first week of spring has been great and now we are well underway. We will be planning some great meals to fit in with our busy week coming up. This is one of the ways that meal planning really pays off with giving me more time to spend on my other projects. I will be looking to the slow cooker this week to help me in and out of the kitchen a little faster. Baked Ham Steak with Spicy Glaze

We love ham here at the cottage, however we don't always have enough folks coming for the meal to cook a big ham. When we are expecting more than four at a meal, then I will bake our favorite Baked Country Ham, but for a smaller group I love to bake this delicious Ham Steak. This is a great recipe that is easy, and on the table in no time, plus it's full of flavor.

Irish Muffins


I made these muffins the other day for my husband so we could have some nice warm muffins with our morning coffee. This muffin recipe is made very similar to my Irish Soda Bread recipe and I could just imagine my Irish Grandmother taking these muffins out of her wood burning oven and sitting down to have coffee with my Grandpa. I love how food brings back so many wonderful memories for us and how we can keep passing our good memories along to our family and friends.

Beirocks (German Stuffed Bun)


Every year around March Madness Time our family and friends like to get together and make Beirocks. They are a great little bun that is filled with meat, vegetables and great flavor, perfect for a nice round of Basketball or just a great visit with family and friends. Beirocks originated in Russia known at that time as Pirogi, it made its way to Eastern Europe and the German's renamed the little bun a Beirocks. They eventually migrated to the mid western United States and became very popular in Kansas and Nebraska.   We lived for a time in Kansas and our youngest son and his family still live there. I was hooked on Beirocks the first time I ever had one and have made many recipes through the years, but this by far is the best.

The week of the Irish has arrived and it is so much fun to write the meal plan for this week. I love going back through our families Irish recipes and remembering so many wonderful meals with my Grandparents and other family, I can hear my Grandpa playing Irish tunes on the fiddle and the family laughter. The food was always simple but amazing and this is the week that we get to reflect back on that heritage and enjoy this time with our family and friends.

Herb Skillet Bread


I grew up with my Grandmother and Mother making homemade bread almost for every meal. I still love homemade bread and although I don't make it for every meal, we really enjoy it when it is fresh from the oven. The Herb Skillet Bread recipe that I am making today is a very easy recipe and has a delicious flavor almost like a sour dough. No worries about what to do with the left overs, here at the cottage there are no left overs when this bread is on the table.

Grandma's Dublin Coddle


I remember having this Dublin Coddle at my Irish Grandma's cottage many times. A Dublin Coddle is a traditional Irish comfort dish that can be found on many Irish tables on any given day in the week. The traditional recipe has Irish potatoes, sausage and bacon that is made into a stew. My Grandparents grew cabbage on their farm so my Grandma added cabbage to her Dublin Coddle, giving it a wonderful flavor. This is a great dish that brings back so many memories for me, my family always gets excited when I make this recipe.

Happy March

What a beautiful day we are having here in the country today. We ended up having over 10 inches of rain in the past few weeks so it is great to have a few dry days and see that there really is still a sun. I love all the wonderful Irish recipes of March and I have already put some of my Irish Family recipes to enjoy this month. Double Chocolate Pretzel Brownies

I am making a big pan of these Double Chocolate Pretzel Brownies for my Tuesday Night Ladies. I teach a small group Bible Study in my home on Tuesday night and I wanted to make a really special treat for the ladies as we begin to dig deep in our study. These brownies are full of awesome sweet double chocolate crumb with a salty crunchy bottom and top, a great sweet and salty treat.

The Tuna Casserole


If you were invited to my Grandmothers on a Friday for "supper" there would be no question that she would be serving "The Tuna Casserole". Often times when my kids were in school and they would invite friends on a Friday, they would ask "What's For Dinner" and I would usually say "The Tuna Casserole". My daughter called on a Friday last week and said can I come for dinner, are you making "The Tuna Casserole"? And so it goes, anytime our family talks about this recipe it is called The Tuna Casserole, so here it is gang, I finally wrote it down, enjoy!

Garden Planning and Planting


A great garden harvest starts very early in January and that plan should be into action by February. I start planning my garden's  early in January when we can only dream about spring and warm weather. When the plan is set, it goes on paper in my Garden Journal.  I am always excited about making the garden plan and then planting the little seeds that will produce such wonderful vegetables.

Pressure Cooker Southern Split Pea and Ham Soup


I always save some of the Baked Country Ham for this soup. The flavor of this soup when cooked in the pressure cooker is fantastic. Making the Split Pea Soup in the pressure cooker makes a very smooth soup. The peas dissolve into a puree, without putting it into a blender and no soaking the peas the night before. This is a Southern Split Pea and Ham Soup that has been passed down in our family and adapted to the pressure cooker.

Whats For Dinner Next Week 2-18-18


I like to keep a current inventory of my cold bins, pantry and freezer, it really helps when planning my weekly meals and making the marketing list.   I went out to the barn earlier this morning to check out my root vegetable inventory, we keep our fall harvest vegetables in cold bins through the winter. I can tell that spring will soon be here because I am starting to run out of some items. I sure am glad that you stopped to have tea with me while we work on this meal plan, its always fun to be in the kitchen with a friend.

Mini Heirloom Tomato & Rice Salad


We grow our own heirloom tomatoes in the summer garden, and fortunately our local market carries them the year round. This is a salad mix that works so well with fish and chicken dishes. It is a very versatile recipe that I sometimes use the base of the tomato mix as a Bruschetta topper. This mix has the best flavor and can even be served as a stand alone tomato salad. I love this recipe and hope you enjoy it!

Lemon Caper Salmon


We live a long way from a stream where wild Salmon are running and wild Salmon are the catch of the day. Most of the Salmon we have is frozen and occasionally we will have fresh Salmon, but it is very expensive. The Salmon that I am using for this recipe today was frozen wild Salmon. I love this recipe with a great marinade of lemons and caper's that goes on top of the fillets to make this flavorful fish. This is a very simple, healthy recipe and for us a very special meal.

Whats For Dinner Next Week 2-11-18

Making meal plans for holidays are always fun and this week we are planning for Valentine Day. If the day falls on a week night, then I ask my husband what he would like and then I try to make it special. If the day falls on the weekend, then I know that we will be going out to dinner. As I look out over the pasture this morning it is solid white and really beautiful, with the heavy frost covering everything, it is very cold here, so I am thinking of food that warms the tummy and the soul. Oh my lets get this meal plan started, I could chat all morning.

Peanut Butter Cookies with White Chocolate Drizzle

When I was making my baking bucket list for this month, these Peanut Butter Cookies with White Chocolate Drizzle was at the top of the list. I love a classic Peanut Butter cookie and keep some in the freezer so that we always have an extra dozen. This recipe is a classic cookie with a special white chocolate drizzle that really makes it delicious. Either plain or with the drizzle, these are great cookies!

Pressure Cooker Sauerbraten

When we had family living in Germany we were able to visit several times for extended time frames. One of the many foods I really enjoyed was Sauerbraten, which is a roast that has been marinated for 3 or 4 days in wine and vinegar. This recipe takes less than 2 hours from beginning to going on the table and the flavor is just as good. Cooking it in the pressure cooker is truly one of the best recipes that I have tried for Sauerbraten. The pressure cooker allows all those spices to be locked into the beef and it is so tender it falls apart.

Happy February


The love month has arrived and it is the big game weekend for all of our football fans. None of our teams made it to the big bowl this year, but we enjoy the fellowship and all the great food that we will have on our meal plan. We have actually had a couple of warm days so we have been able to get out in the garden and plant the onions. I love it when we can get back in the garden to do a little planting. Red Velvet Surprise

Our Red Velvet Surprise is a great dessert to serve for any occasion. This is a really pretty dessert and taste every bit as good as it looks. I made the recipe today for a very special friend who was celebrating a birthday. I am glad that my photo's were made because there wasn't one single slice left. This dessert is made with layers of flavor that will offer a surprise as you take your first bite.
