Ham and Asparagus Roll Up With Apricot Sauce A Great Appetizer The asparagus in the garden this time of the year is just beautiful, fresh and crisp. Sometimes I just have to eat a spear of asparagus as soon as it is cut in the garden. I am expecting a crowd here at The Cottage this week end so I wanted to create a nice appetizer with my fresh asparagus. This recipe is very simple and flavorful, you could make it for 2 or 20 and it would be great!

I like to serve a nice breakfast bake when we have guest here at the cottage, it can be made ahead and this gives me more time with our guest. Blueberry Sausage Breakfast Bake is a very flavorful dish with a nice creamy inside and the burst of fresh blueberries in every bite. Whats For Dinner Next Week 3-29-15

Meal plans are very important for holidays and special events so that we know exactly what we will be making and how much time we have for the marketing and food preparations. This is one of those weeks and we will be including Easter Sunday with this weeks plan, just adding an extra day. This is our last plan for March and first for April, spring is really here! We have a big Menu to make this week so lets get to it!

Where The Greatest Cooks On The Planet Gather Hello everyone and Happy Spring! I have been enjoying the fresh simplicity of Spring Greens in Salads and getting back to lots of veggies on the plate. I am definitely a seasonal cook and I know that many of you are as well. I noticed at the party last week, that although we are still experiencing cold weather in most of the country, the spring dishes are starting to show up on our tables. I am sharing Mustard Greens and Corn Skillet with a Bacon Vinaigrette with all of you today and sure hope you enjoy it. Seared Scallops In Garlic Pepper Sauce

Any kind of seafood is a real treat for us here at the cottage. We are about 3 to 4 hours from the coast so we don't get a lot of fresh seafood. We usually have our local fish that we catch from the lake or that a good neighbor has caught and given us and that is usually, Catfish, Crappie, Bass or in season Craw Fish. They were having a sale on Scallops at the local market last week so I bought these Scallops to surprise my husband, he just loves Scallops. I seared them in a real special Garlic Pepper Sauce and he wanted more, well next time maybe these were $1.85 each on sale, they were real special! Baked Veggie Sandwich

A good Veggie Sandwich is one of my favorite's and I love this sandwich. This is one of those sandwiches that is just packed with flavor.  The combination of the roasted peppers, Baby Bella Mushrooms, topped with a great mix of Italian cheeses and you have a great sandwich. This is a great sandwich to offer vegetarian friends and family members,our vegetarian daughter loves this sandwich. Baked Veggie Sandwich


Whats For Dinner Next Week 3-22-15

Spring has arrived and we are so excited! We have been having really good spring rains for the first time in years and our lake is full, which is going to make a lot of people happy. We will be having some house guest this week for spring break so I took special request for meals, we are going to have so much fun with this meal plan. Everyone got to vote on their favorite for Sunday, it was between Chicken Spaghetti and Chili Dogs, just wait and see what it was.

Where The Greatest Cooks On The Planet Gather I am so excited to see you today!  We are celebrating here at The Cottage, our lake is full for the first time in about 4 years and our Pear Trees are blooming,Spring is here! I love cooking Spring dishes, so fresh and light. Pistachio Jar Dessert

My husband is a Pistachio lover, nuts, pies, cakes, muffins, puddings, anything Pistachio.  Today I am surprising him with this Pistachio Jar Dessert, I know he will love it!  This is a very easy dessert to make and of course I had to taste it, oh my it is delicious, real creamy with a nutty crunch and the flavor of a cracker give it a great contrast, topping it off with a big twirl of whipped cream and a garnish of nuts. Mustard Greens and Corn Skillet

When I was a young girl I remember going to the garden with my Grandmother and gathering Mustard Greens, and it was always very cold. I remember thinking how do things grow when it is so cold, I still wonder that sometimes. Like my Grandmother we have some awesome Mustard Greens in our winter garden and today we are using some of those fresh greens to make this delicious combination of greens and corn with a very special bacon vinaigrette. We just love this fresh dish, it is great served as a side dish or top it with a protein and have a main dish. Mustard Greens and Corn Skillet

The Irish Eyes Are Shinning here this week, we love the week of St. Patrick's Day here at the cottage. We always have fun remembering our Irish heritage and all the wonderful family food and stories that have been passed down through the years.We have family visiting this week so we will have a fun week of celebration!

Full Plate Thursday Where The Greatest Cooks On The Planet Gather    It's all things Irish here at The Cottage this coming week, celebrating our Irish heritage with family and friends.  One of our Daughters from Oregon will be visiting this week and we are having so much fun! I can't wait for her to meet all of you and enjoy your fantastic food with me.  In keeping with the season I am sharing my Grandmas Irish Stew with you today and sure hope you enjoy it! Irish Family Recipe Roundup

We always celebrate our Irish heritage on St. Patrick's Day with lots of good food and fond memories of my Irish Grandparents. Remembering the stories that have been passed down through the years that are now passed on to the younger ones. A very proud heritage that is woven into the very fabric of our life. When we sit down to celebrate this year we will be remembering all the wonderful family that walked before us and made our journey so much smoother, along with the amazing recipes that make us think they are all right here with us.


Praline French Toast

We love a great brunch recipe that we can enjoy on the weekend when we are having a lazy Saturday morning. Praline French Toast can be made the night before and baked the next morning to have a very special treat right out of the oven. The toast has a very crispy crust covered in praline and pecans, it's like pie for breakfast. We will be making this recipe over and over. Praline French Toast

We have been in what seems to be an endless winter. The Spring time change starts this weekend but we are still waiting on spring. We are looking forward to some Spring Breakers very soon so we will be planning some nice meals that allow us to spend more time with our guest. Ruben Potato Salad

Ruben Potato Salad I have been going through some of my older family recipes and saw this favorite. This potato salad is just filled with flavor and is a great side dish for a family meal or take to a covered dish event. I have made this potato salad for years and although it is a great winter time salad it is good all year round. It is delicious served hot or cold and is one of those dishes that the longer it sets the better it gets. We just love this potato salad and sure hope that you will too.


Meatballs In Red Cabbage Sauce

This awesome cabbage was just waiting to be picked from the garden this morning. I love taking a walk in the garden and coming back into the kitchen to create a brand new recipe. This recipe is a take off from a stuffed cabbage roll in a fantastic sauce. This dish has the best flavor and we served it over rice but it would be great with mashed potatoes. I just love having the cabbage dishes this month it always reminds me of my Irish heritage. I think that my Irish Grandmother would have loved this dish, we sure did and hope you will too.
