Whats For Dinner Next Week, 4-30-23

Hello everyone, hope you are having a great weekend. I try to check the weather before selecting the  recipes that I will be using on the meal plan for that week. Last week we got almost 5 inches of rain, that means I won't be getting into the garden, it is way to muddy. It will be off to the Farmers Market this week for any fresh produce that I need for the meal plans.  We will be celebrating Cinco de Mayo on Friday, I always look forward to the food that we enjoy for that fun event!

Tex-Mex Chicken Fajita Casserole

Tex-Mex Chicken Fajita Casserole recipe is one of those recipes that is so versatile. This casserole can be served on hot flour or corn Tortillas, or as a dip with corn Tortillas. Another popular way we have served it is on top of a bed of Spanish rice. It is a very simple recipe to make with just a few simple ingredients. This is a recipe that can serve a family meal or a crowd for game day!

Whats For Dinner Next Week, 4-16-23

Hello everyone, it is such a beautiful spring day and I am out on the screen porch enjoying every minute of it. Our new puppy Cody is here with me and of course he thinks this is play time, and does not realize that we need to make meal plans for the family. We harvested the remainder of the  winter garden yesterday and had some cabbages and collards that were really nice. We also got a lot of planting done in the garden and it is almost finished planting for this summer garden. We are starting to enjoy some great spring fruits and vegetables at our local farmers market and of course I have to bring some home for us to try.

Old Fashioned Blueberry Crisp

An Old Fashioned Blueberry Crisp is so easy to put together and the flavor is always spot on. I remember my Grandmother coming to her kitchen with a little pale of blueberries that she just picked from her orchard. That night there would be a beautiful crisp coming out of the oven, and I could hardly wait to have a serving of the crisp. This is a very simple recipe that can be served for  any occasion. This is one of our favorite fruit desserts.

Slow Cooker Creamy Italian Chicken

Some days are so busy that it is really nice to just load up the slow cooker in the morning and go on with the day. Today that is what I am doing, this Creamy Italian Chicken will cook slowly all day and will make a great dinner sauce for my pasta. This is a very simple recipe that takes just a few ingredients and in the pot for slow cooking. I love having  a go to recipe like this, just for days like today!
