Whats For Dinner Next Week 4-1-12

We have had our Easter decorations out for awhile now, because it seems like Easter is coming so early this year, the time is flying by. We are starting our preparations for Easter this week getting ready for the big Egg Hunt and other family activities that are so much fun at Easter time. Come on in the kitchen with me and  you can help me get one of these projects ready for next week end and we will talk about The Menu.

Welcome to Full Plate Thursday, I am so excited to see you today.   Spring is popping out all over and certainly our food reflects the season. Every week when I am preparing for you to come and share the day with us I think about all the wonderful food that you will be bringing and the great fellowship that we have here every Thursday. Best Cherry Pie

"Can she bake a Cherry Pie, Billy Boy, Billy Boy?"  I remember hearing my Mother singing that little tune when she would be baking this Cherry Pie. I always knew that we would have Cherry Pie that night for dessert when she started singing that little tune. This is a great Cherry Pie recipe that has been in our family since I can remember, and that's a long time, lol.



Whats For Dinner Next Week 3-25-12

I am so excited about Spring we have had enough rain that our lake is now full and it just looks beautiful. We got 5 1/2 inches of rain in 24 hours last week so that really helps. Come take a walk with me just down in The Garden Gate and we will sit on the patio and have our morning coffee and enjoy the beauty of spring and talk about The Menu for next week.

Happy Spring and Welcome To Full Plate Thursday!

We have been busy getting some last minute planting done in the gardens before the rain storms come in that we are expecting. I sure hope you brought your rain boots because you will sure need them today. Slow Cooker Green Chili Stew

When it gets really cold and rainy outside one of the favorite stew's at The Country Cottage is Green Chili Stew. It is real comfort food for us, and that is what we are making today. We like to serve it with warm homemade tortilla's and I can't wait until it's ready!


Green Chili Stew
Miz Helen's Kitchen
Ingredients
1 1/2 to 2 pounds Stew Meat
2 teaspoons olive oil
8 cups Red Potatoes medium chop with the skin on
2 cups yellow onion chopped medium
2 cups Green Chili's chopped with juice
2 cups stewed tomatoes chopped with juice
1 jalapeno pepper chopped
4 cloves garlic minced
2 teaspoons ground cumin
1/2 teaspoon oregano
1 teaspoon ground chipotle chili powder (optional)
2 to 3 cups water
Directions
Salt and pepper the stew meat on all sides. In a hot skillet heat the olive oil and brown the stew meat.
Add the browned meat to the Slow Cooker.
Add the remainder of the ingredients and mix well.
Salt and Pepper to taste.

Ruben Burger

When the calendar rolls over to March, I think of time change, St Patrick's Day, Rubens, and Basketball. Its March Madness Time, and we are having a small group of friends over to enjoy some basketball with us. We have had some beautiful weather and are able to use our grill, so I wanted to cook outdoors. I developed this burger just for the party, but we will be having it again and again, it is a great burger!

Ruben Burger Ruben Burger Miz Helen's Kitchen 1/4 pound Cooked Corned Beef chopped very fine in the food processor 1 onion, chopped 1 pound ground chuck (we use grass fed beef ) 1/4 cup parsley, chopped dash cayenne pepper Salt and Pepper to taste 2 cups Sauerkraut Sliced Swiss Cheese Thousand Island Dressing Buns of your choice In the food processor chop until fine the Corned Beef and the onion. Mix the ground chuck, Corned Beef and Onion Mix, parsley, cayenne pepper, salt and pepper then make the Ruben Burger Patties. I always make a little indent in the center to keep…

It just seems like yesterday and we were adjusting our clocks to daylight savings time and here it is again. Spring is here. My yard is filled with beautiful wild flowers, daffodils, and the trees are beginning to bloom and set on leaves. St Patrick's Day is Saturday and we will be enjoying the local St Patrick's Day Festival. I am glad you are here today you can help me finish a project for the festival and give me ideas for next weeks menu.

I want to take a moment to remember all our friends in the heartland who lost so much this past week end in the horrible tornado's. All of you are in our thoughts and prayers and we will be thinking of you as you begin to rebuild your lives. Everyone here at Full Plate Thursday join's me in wishing you a speedy recovery.

Homemade Pasta Sauce

We have been assigned Homemade Spaghetti Sauce this month in the Crazy Cooking Challenge. I have made my own sauce for years and have not had the need to look for a different recipe until now. I wanted something that would be easy and family friendly, because when we made Spaghetti it is usually for a crowd. I was just beginning my search when this recipe came to me on my Full Plate Thursday Linky Party. It is the perfect recipe that can be made a head of time and frozen, or you can add any kind of meat or just make it meatless. Christy at Raising Knights (Link) brought this recipe to my attention and we just love it and hope you will to. Christy is a wife of a Police Officer, a Mom that home schools five boys. I raised 3 boys so I know that you need a hearty recipe to get those boys though the day. Christy has a great blog with wonderful food, so I sure hope that you will stop by and say hello, and be sure and tell her Hi from Miz Helen.
