Whats For Dinner Next Week 6-1-14

I always love the first week of June, we have the whole summer ahead with so many things to enjoy. We will be enjoying lots of wonderful food from the garden and the grill and sharing with family and friends. We are very excited here at the cottage we are expecting our Granddaughter Lauren and Great Granddaughter Ella June to come for a summer visit. We have some really fun things planned for their visit that we will be sharing with you as we go along. Lauren and I will be doing some cooking in the kitchen and we even have a project for little Ella. I need to get busy planning this menu. We are so proud of the young people in our family and in our community that will come forward to begin their time of leadership in our country. Baked Sandwich

I was having a very informal luncheon for some of my oldest friends recently and a couple of them ask if I would make my Baked Sandwich. I thought that was a great idea, and then I decided to share it with all of you. The Baked Sandwich is often times requested from family and friends as one of their favorites. It is a great dish to make for a small gathering, it can be made the day before and cooked right before the guest arrive, it is a hot dish to serve that you don't have to be in the kitchen with, but rather can be spending time with your guest. One of the nice features to this sandwich is that you can freeze it up to 3 months, just reheat it and it's as good as freshly made. I will often times freeze it in individual portions, for those times when just one or two people need a quick lunch. Quiet Time

When you are traveling to our cottage the first thing you will notice when you come to our road is our flag that fly's everyday at the edge of our property. The privilege to fly that flag and to be free to speak to you today has been given to us by the sacrifices of so many men, women and their families through the years. We are stopping today for a Quiet Time to remember all those who have given the ultimate sacrifice for our freedom. For more years than I want to count, I have been a Military and Firefighter Mom of Three Sons, one Daughter, Two Daughters-In Law, Two Sons -In Law, and Two Grandsons In Law, who have proudly served their country. We personally know the sacrifices that families make on a daily basis to ensure our continued freedom. We are so grateful that we have not had to give that ultimate sacrifice, but we are so proud to be able to hang 3 Blue Stars in our window that represent the 3 active duty family members that are presently serving our country.

We have been very busy here at the cottage, we are getting ready for opening weekend of the official season here at the lake. We will be having a Quiet Time on Memorial Day to remember those who have given the ultimate sacrifice for our freedom. Then we will be celebrating the opening of the season for the lake. I love planning the food for this weekend, lots of food that we don't have that often but it is oh so good! Memorial Day for us not only marks a time of remembrance for all those who have given the ultimate sacrifice for our freedom, it is also the official opening day for the lake and the fun activities we have all summer.
