Top Ten Recipes 2013

I loved taking a look at the recipes that all of you really loved the most this year. It's always a lot of fun to look back over the year with a friend to remember all the good times we had together. I really enjoy being in the kitchen and creating a new flavor or a new dish that will go on the table. I want to thank you so much for your continued support for my blog and your visits here at the cottage, you'al bring so much joy to my life!

Nana's Hoppin John

I mentioned to my Granddaughter the other day that I would be making Hoppin John for New Years and she ask for a little history and the recipe, well that meant I had to write it down. Since I am writing it down of course I will share it with all of you.

This recipe has been passed down to me through the generations of my family and I feel sure that every cook has put his or her special touch to the recipe.Hoppin John came from the Low Country and spread throughout the south becoming a traditional New Years food for many. It is thought that the peas would bring prosperity and that if you counted the number of peas in a serving it would predict the amount of prosperity you will have for the coming year, so be sure and take out a large serving.  If you eat the left over peas the next day the peas are referred to as "Skippin Jenny".

Nana's Hoppin John
Miz Helen's Kitchen
4 cups of soaked Black Eyed Peas
2 slices of bacon, chopped
1 Ham Hock
1 green Bell Pepper, chopped
1 red Bell Pepper, chopped
4 stalks of celery, chopped
1 yellow onion, chopped
2 cloves garlic, chopped
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon salt
1 teaspoon pepper
Dash of Cayenne to taste
5 cups Chicken or Vegetable Broth
Wash, sort, and soak the black eyed peas
I use the quick soak method for this recipe (see package directions)
In a heavy stock pot, saute the bacon,bell peppers, celery and onion, until the onion is clear.
Add the black eyed peas, ham hock,all the seasons and the broth stir and mix well.
Cook on medium heat for 30 to 45 minutes until the peas are tender.
Keep a close watch on the liquid, if it gets to low add a little water.
Be sure not to cook to long or the peas will be mushy.

Background Story On Full Plate Thursday
When we were young and just starting out in life sometimes we did not have a lot of money. Most of our friends were having to stretch the dollars at the end of the month just like us. My girlfriends and I decided that we would pool our food for some of the evening meals right before payday... the last week of the month. I have some of the fondest memories from those days. We would all bring our food together and we had some great food and great fellowship. We would get the food on the table and everything ready, someone would bless the food and then the hostess would say "come fill your plate".

Spicy Cranberry Coffee Cake

We always have a lot of friends and family that stop by the cottage to say hello during the holidays, and I like to have a nice coffee cake to serve with a cup of coffee or hot chocolate. This coffee cake has a spicy cranberry flavor and is just delicious. It freezes well so that means we can have another one on hand when the last slice is gone. I love a nice slice of this coffee cake, a cup of coffee and time with a friend.

Spicy Cranberry Coffee Cake
Miz Helen's Kitchen
Serves 10
3/4 cup unsalted butter, room temperature
1 1/2 cups sugar
3 eggs
1 1/2 cups buttermilk
3 cups all purpose flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 cups whole cranberry sauce
2 teaspoons cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground nutmeg
3/4 cup confectioners sugar
1 tablespoon milk
1 cup walnuts, roughly chopped
In a small bowl mix the cranberry sauce cinnamon, cloves and nutmeg, mix well and set aside
In a medium bowl mix the flour, baking powder, baking soda and salt and set aside
In a mixing bowl with an electric mixer, beat the butter and sugar until creamy, add the eggs one at a time, mixing well, add the buttermilk and mix well.
Add the flour mixture a little at a time until blended well
In a 9X13 buttered and floured baking dish add 1/2 of the batter, then drop 1/2 of the cranberry mixture on top in little droplets, then swirl the cranberry mix into the batter.
Top with the remaining batter and then dollop with the remaining cranberry mixture.
Top with the walnuts
Bake at 350 degrees for 50 minutes or until the cake is golden brown and a pick come out of the center clean.
Mix the confectioners sugar and milk, then drizzle over the top of the cake
This cake is delicious warm or at room temperature
Can freeze up to 3 months
