Mandarin-Broccoli Bow Tie Salad

The dressing for this Mandarin-Broccoli Bow Tie Salad recipe makes this salad very special. The combination of the Mandarin Orange and fresh broccoli is one of my favorites for this kind of salad and has a little kick from the delicious dressing. I like to use the bow tie pasta to dress this salad up a bit, but it is just as good with macaroni. It is one of those salads that you can add, chicken or ham maybe a little crisp bacon, it is endless  and limited only to your imagination.


Creamy Cilantro Lime Chicken

Our recipe for Creamy Cilantro Lime Chicken is so easy to put together and it is full of Tex Mex flavors. The cilantro lime sauce makes this chicken very special and it is so tender it could be cut with a fork. A great paring with some nice corn on the cob with a little cilantro butter. This is a great recipe to make for a family meal or a very special get together for friends, yes it is one of those recipes that your husband will say, hey honey could you make that chicken with the really good cilantro lime sauce?


Whats For Dinner Next Week,4-26-20

It seems like just yesterday I was making a meal plan for the week and yet another week has flown by. It is a warm sunny day and we are able to be outside to work in the garden a bit and enjoy sitting on the screen porch, sipping sweet tea and enjoy some time to reflect on a great meal time for the week. We haven't had to go out to the super market very often in our present time-out, thank goodness we keep a really good inventory on hand and have lots of canned goods from our garden, so grateful for our garden. We are still getting a lot of rain and colder weather for this time of the year, which may be a good thing as it makes it easier to stay warm and cozy indoors. Spring Garden Planting-2020

We have several plants in our spring garden that are doing very well. We were able to get most things planted in between the spring rains and we have had lots of rain. At this time we need some warm weather to dry out the ground so we can plant more vegetables. We have a great new raised herb garden that we are already enjoying, you will have to follow along with the progress. We are taking a second look at our garden plan for the year, as it looks like at this time there very well could be some vegetable storage's in the summer harvest season, we may need to increase our production.


Sloppy Joe Casserole

If you love a great Sloppy Joe Sandwich then you are going to love this Sloppy Joe Casserole. This recipe is perfect to feed a crowd or a nice family meal with a little bit of left over that can freeze for  up to 3 months. This has Sloppy Joe flavors at its best, and the recipe is easy to put together, a dish that the adults and the kids will love !

I may have to go back to winter time meal planning, we are having a cold front move through our area right now. We are staying busy here at the cottage, just taking care of some projects now that my husband is on leave for a while, we are really having a lot of fun together. We have been grateful for the various technical ways we have to communicate with friends and family during this time out that we are all having. As I start our meal plan this week, I am stopping for a moment to be so grateful that we have our garden and the ablity to grow our own vegetables which gives us more variety in our meal plans.

I don't know what happened to the beautiful spring weather we were having but it is winter time again. Instant Pot Apricot Chicken

My husband would eat this Apricot Chicken once a week if he could, he just loves this recipe. It is a great recipe that is ready to go on the table in a very short time and it is worth waiting on every minute, it really is that good. A great blend of seasons and into an instant pot for the quick but tender turn around, then it has this amazing sauce. If you serve this with some rice and fresh asparagus from the garden it is a fantastic spring meal!

We are preparing for a beautiful Easter weekend, but it will be very different than usual. No big family gathering, meal plans will be just the two of us as we are not allowed to socialize right now in hope's to bring us a better health outcome at the end of this health crisis. I am planning some very traditional recipes that will be delicious and comforting.

It is so good to see you today at Full Plate Thursday! The sun is shinning today, it is a great day to sit out by the garden and see whats new in the herb and vegetable garden, we even have a couple of roses on the bushes. We sure had some great post at the party last week that are featured on this post today, and hope that you will be able to stop by and say hello to these very talented bloggers.


Lemon Pudding Bundt Cake

This is not just an ordinary bundt cake, this is a very special recipe that will give you a big surprise with the first bite. This Lemon Pudding Bundt Cake has a very moist cake plus two, yes two pudding's, that make it so special. I love the lemon flavor for sweet or savory and this cake sure fills that favorite flavor in a bundt cake. Not only is the cake fabulous, then we top it with a great lemon glaze. We have enjoyed this cake for many special occasions, a causual dinner or even a picnic.


Sausage-Potato Brunch Casserole

We love a great breakfast or brunch casserole to serve a crowd here at the cottage. Our Sausage-Potato Brunch Casserole is one of the recipes that we really enjoy serving our family and friends. I have often times taken this casserole to a covered dish brunch function and everyone always love it. This recipe is filled with a very special flavor with a little kick with lots of potatoes, veggies, cheese and eggs, it is a delicious combination. If we don't have a crowd, I divide the casserole in indiviual servings and freeze them, these indiviual servings are a great grab and go.

If April showers bring May flowers, we will be having a bumper crop of beatiful flowers in May. I am sitting out on the screen porch to work on the meal plan this week and everything is starting to look so green and fresh. Everything always smells so fresh after a rain. We are having a little bit of a different life right now, my husband is in a high risk group and has taken leave from his job and will be here at home with me for a little while, until he feels like it will  be safer for him to return to work. We have stocked up the pantry, cold bins, and freezer plus our fresh garden vegetables that will be coming on as we move along. Our Swiss Chard is ready in the garden, so I am making an amazing recipe that I can use the fresh Swiss Chard. We may be staying home but we sure are going to eat good and I am excited to share that with all of you!

We are living in different times just now, but we are trying here to help all of us continue to have the same quality food on all of our tables as we always have and encourage you to stay as healthy as you can be.
