Mexican Potato Casserole

Sometimes I look for a different side dish that will complement the meal. We have this awesome side dish that will be a great addition to any meal. The Mexican Potato Casserole is easy to put together and can be served for a family dinner or a covered dish event. This casserole has a great Mexican flavor and the next day it is even better, that is if you ever have any left overs.
