Crock Pot Tex Mex Casserole

We love Tex Mex here at the cottage and often times when someone is coming over for dinner they will ask for a Tex Mex dish. I have been making this recipe for years and wanted to make it for a special dinner for a friend, but I didn't want to be in the kitchen right up to dinner. The solution was a recipe for my new Crock Pot Casserole Cooker. I may never go back to the old recipe, everyone just loved this and I had lots of time to visit with friends.

    1. Hi Meredith,
I am so glad you liked the recipe, but I sure don't have a substitute for the beans, I would just leave them out and double the corn. Hope you enjoy the recipe and thanks for stopping by!
