Whats For Dinner Next Week: Three Bean Bake

Where did the summer go, I can't believe that we are going into the first week in September. Labor Day week end is always one of the big week ends and really symbolizes the end of summer around the lake.  Everyone feels the pressure to hurry and get in all the water sport activities for the last holiday of the season.  After Labor Day things get really quiet.  The local pool closes, and there is always a poll of all the guest, don't take the pool key with you or we will have to pay an extra $50.00 next year for a new one. All the local civic organizations get into full swing, football games on Friday night, and we can't wear white until after Easter... well maybe some of us cheat on that a bit.  We are entertaining on Sunday for the holiday and we are really looking forward to our friends sharing the time with us. We are so blessed to have so many wonderful people in our life.
This week our grocery store has a great special on trimmed beef brisket I like to get a trimmed brisket because it has less fat.

Grilled Chicken with Roasted Peach Salsa

Southwest Chile Burger
Black Bean and Corn Salad
 Lemon Tapioca Pudding

From Sunday's Menu
Three Bean Bake
Miz Helen's Kitchen
1 15 ounce can Black Beans drain 1/2 the liquid
1 15 ounce can Pinto Beans drain 1/2 the liquid
1 15 ounce can Ranch Beans drain 1/2 the liquid
1/2 medium yellow onion medium chop
1/3 cup Ketchup
1/3 cup Sweet & Spicy Mustard
1/3 cup Brown Sugar or Brown Sugar Substitute
Dash Tabasco
Option:
2 slices of crisp bacon on top

Mix all the ingredients together except the option of the Bacon.
Place into a baking dish
Bake at 350 degrees for 30 minutes
For the Bacon Option:
Place the Bacon on top of the dish after baking when ready to serve

Our Country has celebrated Labor Day since the first celebration held in New York City in 1882. However you may celebrate this Labor Day , just take a moment to remember all the men and women through the years that have worked and sacrificed to make our country great and just maybe you are one of them and if you are...I say Thank You!

  3. I made the three bean bake for my family over the holiday weekend....they LOVED it! The combination of flavors was so good - I served it with brown rice and grilled chicken on Sunday and as a side with brisket on Labor Day. Of course, I used more than a "dash" of Tabasco which is perfect for us Lousiana-folk :-).
