Apple Cider Chicken

I have had this recipe on my note cards for sometime and I continued to add to and take away from the notes. Finally it was ready to try and it certainly did not disappoint, I only wish it could have been ready sooner. A trip to the farmers market for fresh apples and vegetables, pick up some chicken breast, now we are ready to go! The blend of these flavors are wonderful and I can't wait to share it with you.

Slice The Apples

Add The Sliced Onions To The Baking Dish

Apple Cider Chicken

Ingredients
4 boneless,skinless chicken breast, cut in half
2 tablespoons olive oil
2 tablespoons butter
1 teaspoon salt
1 teaspoon pepper
1 teaspoon thyme
2 onions, sliced
4 cups apples, cut in wedges
2 cups apple cider or apple juice
3 sprigs fresh rosemary
1 tablespoon cornstarch
1/4 cup water
Directions
Mix the salt, pepper, and thyme.
Slice the onions, and apples, set aside.
Sprinkle the season mix over the chicken on all sides.
Heat the olive oil and butter in a hot skillet. Brown the seasoned chicken and set aside.
Place the sliced onions on the bottom of a lightly oiled 9X13 baking dish.
Place the seasoned browned chicken breast on top of the onions.
Place the apple wedges on top of the chicken and add the rosemary sprigs.
Pour the 2 cups of apple cider or apple juice on top of the apples, chicken and onions.
Cover the dish and bake at 350 degrees for 30 minutes.
Mix the water and cornstarch, set aside.
Remove the chicken, apples and onions from the dish to a serving dish.
Pour the remainder of the sauce into a sauce pan.
Bring the sauce to a boil add the corn starch mixture stirring. Immediately remove from the heat and stir the sauce until thicken.
I am serving on steamed cabbage leaves. Drizzle the sauce over the chicken before serving.
