Nana's Macaroni Soup

My Granddaughter called the other day and asked if I would send her the family Macaroni Soup recipe, which I did of course. I hadn't made that soup in a very long time and it sounded so good, and brought back some great memories. I used to make it often for the kids it was really one of their favorites and it was real easy to sneak some vegetables in their meal plan for the day. We really enjoy the soup and so glad she reminded me of one of our favorites.

Nothing Like A Hot Bowl Of Delicious Soup

Nana's Macaroni Soup at Miz Helen's Country Cottage

Nana's Macaroni Soup
Miz Helen's Kitchen
Ingredient
1 pound lean ground beef
3 cloves garlic, minced
1 yellow onion, chopped
1 (14 oz) can stewed tomatoes
1-1/2 cup frozen peas
1-1/2 cup frozen corn
1 (6 oz) can tomato paste
1 cup ketchup
2 teaspoons Worcestershire Sauce
2 tablespoons parsley
6 cups beef broth
Salt and Pepper to taste
1-1/2 cups elbow macaroni, cooked
Directions
In a large skillet, brown the beef and drain well. Return the drained beef to the skillet and add the garlic and onions, cook until the onions are clear.
Salt and pepper the mix to taste.
In a large stock pot, add the beef, garlic and onion mixture.
Add the stewed tomatoes, peas, corn, and beef broth, stir well.
Add the tomato paste, ketchup and Worcestershire Sauce, stir well.
Add the parsley, then salt and pepper to taste.
Add the cooked macaroni and stir well.
Cook on medium heat until 10 minutes, reduce to low and cook for 20 minutes.
Simmer until ready to serve.
Garnish with fresh parsley before serving.
Enjoy!
Recipe Tips:
Soup can be made without the beef or chicken or turkey could be substituted.
Any vegetable could be added or left out.
This is a very versatile soup base, just make it your own.

  2. I can't wait to make this, I love all your recipes. You should be on The Food Network. But I wonder about putting the cooked macaroni in the mix and cooking it 30 more minutes? Doesn't that make it soggy?

    1. Hi Noras Granddaughter,
      You are really just cooking it on medium heat for 10 minutes and on very low heat for 20 minutes, just a little more than simmer just to give the ingredients time to marry the flavors. I am sure you could cut the cooking time down it you like, it wouldn't hurt a thing. Thanks so much for your kind comments I really appreciate you stopping by.
