Southwest Salad with Avocado Dressing

Sometime when we come in from the garden with fresh lettuce, tomatoes and other vegetables, a salad is just the thing to make for lunch or dinner. I love this salad because it is so versatile, just add more vegetables, chicken, beef or fish and the salad takes on a whole new flavor. The Avocado Dressing for the salad could easily double for a dip or a sauce for another great dish. This is a recipe to have fun with and make it different every time.

MySecret Recipe Club blog assignment this month is Jenny's Cookbook. Jenny started her blog as an opportunity to expand her recipes and photos. Jenny, her husband and two children live in Toronto and love to visit farms to pick fresh fruits and vegetables. She has some great recipes on her blog and I sure enjoyed searching for just the right recipe to share with you today. Her Southwest Salad with Avocado Dressing was adapted from a Rachael Ray recipe and I had a lot of fun with the recipe.
