Only 3 days of February and then on to March and the beginning of spring. We have been real busy here at the cottage, my husband and son are finishing out a screen porch for us, I am so excited to get the porch screened, so we can enjoy the outdoors "bug free". We are also doing some spring garden projects that I will be sharing with you in a post this coming week. When we are busy like this it is even more important for us to have a meal plan to follow, it really does save time and money.

When we have a ladies luncheon at our church, there is just about always a Chicken Salad of some kind. This recipe for Baked Chicken Salad Casserole is one of my favorites to take. One of our families favorite bowl of beans is Cajun Red Beans and Rice. This is a full meal in a bowl just packed with great flavor. I have been making this recipe for many years and it was printed first in my cookbook, Miz Helen's Kitchen Table, the cookbook is out of print now so I will share the recipe with you here. One thing I really love about this recipe is the slow cooker, and the delicious flavors at the end of the day.

I actually had a request for the meal plan this week, my husband said can you please make that Italian Roast again, well of course I will. It is always so much fun to get a food request or to make someones favorite. We will be going to the city for a market run, so my meal plan will sure help me to make that list for the market. I won't have to buy meat this week I have it all in the freezer. Sure glad to see you this morning, so help yourself to a cup of coffee and lets get this meal plan finished.

One of my Christmas Gifts this year was some new donut tins.I gave mine to one of my Granddaughters sometime ago, but have really missed enjoying baked donuts.My husband must have missed them because the new tins were from him.We love these little mini donuts, they are just the perfect little treat, just a couple of bites, well of course you can have more than one donut, (I sure did)!

This Italian flavored pot roast has the best flavor of any pot roast that we have had in a very long time. I have a little secret ingredient that you would never guess would be in an Italian blend. A slow cooker pot roast is always so tender it will just fall apart when serving not to mention the smell begins to make the whole kitchen so inviting.

This is a very different Fudge with a spicy kick. I love to serve this fudge it is so creamy and really has fabulous flavor. When my husband ask for Fudge this is his favorite recipe. This is a very special recipe that my Mother would make for her bridge club, all of her friends just loved this cake. In her later years she lived with me and my husband so I would make it for her and some of her friends when they would get together. This is a very dense cake and very rich, I have updated the recipe just a bit and use a different frosting that cuts down on the time.Today I am presenting the cake on my husbands Mothers "everyday" cake plate. She called it her everyday cake plate and then had a crystal plate for more special occasions. We love and enjoy the special family recipes and heirlooms that have been passed down to us, very special memories.

It is finally here, for all the sports lovers in our family Super Bowl Weekend. We will be having a nice buffet on Sunday for the big game day. On Tuesday we will be having a great casserole that I hope you enjoy as much as we do. I have had my weekend buffet planned for sometime and have actually already done some of the cooking and have it in the freezer ready to go. That is one of the awesome reasons that I enjoy meal planning, so many times we can get it done ahead of time.
