Caprese Garden Bread

Caprese Garden Bread at Miz Helen's Country Cottage
At the end of our summer garden season we usually have a great harvest of herbs and other vegetables. I like to find recipes that I can use as much of that harvest as possible. My Caprese Garden Bread is just that recipe, just packed with garden goodness. This is a very easy to put together and in no time can be on your table. This is one of our favorite garden to table recipes.
How To Make Caprese Garden Bread

I start this recipe with my Oven Dried Tomatoes
The dried tomatoes are so flavorful and chopped fine to blend in with the other ingredients in the bread.

We add all the dry ingredients to the mixing bowl then
 add the fresh basil, dried tomatoes and cheese.

Stir in the liquid until blended.

Pour the batter into a bread pan and bake.

Cool on a cooling rack before turning the bread out of the pan.

Turn the bread out on the cooling rack 
to cool before slicing.

Caprese Garden Bread

Caprese Garden Bread

A great garden to table recipe, packed with flavor. Easy to put together with fresh garden vegetables, ready for the table in a short time.

Ingredients

  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups mozzarella cheese cubed
  • 1/3 cup fresh basil, chopped
  • 1/2 cup oven dried tomatoes, chopped fine
  • 2 eggs
  • 2 1/2 tablespoon olive oil
  • 1 1/2 cups buttermilk
  • Cooking Oil Spray

Instructions

  1. In a large mixing bowl, stir together the flour, baking powder, baking soda and salt, until completely blended.
  2. Add the fresh chopped basil, cubed mozzarella and oven dried tomatoes to the dry mixture.
  3. In a mixing pitcher, mix together the eggs, oil and buttermilk.
  4. Pour the liquids mixture into the dry mixture, mix until completely blended.
  5. Spray a 8 X 4 baking pan with cooking oil.
  6. Pour the batter into the baking pan.
  7. Bake at 350 degrees for 40 to 45 minutes or until the center will test clean.

  3. I made this bread last week. Not only is it amazingly easy to make, it is amazingly delicious!! My husband ate nearly half before it was even cooled off!!
