Pumpkin Spice Swirl French Toast Bake recipe was developed in the bread section at the super market. We love raisin bread and it was on my shopping list. I noticed a new display of Pumpkin Spice Swirl, it was thick cut and a limited edition, I was drooling already. As I moved along with my shopping I thought that the Pumpkin Coffee Creamer would be perfect to mix the eggs with for a great French Toast, and so it was. I put the recipe together with some fresh blueberries and it was a big hit at brunch the next day. I did manage to put some of the special bread in the freezer to have on hand for holiday brunches.

Next dip each slice of the Pumpkin Spice Swirl Bread
 in the egg mix.

Place the dipped bread into a buttered 9 X 13 baking dish.

Sprinkle a few of the fresh blueberries on the
 first layer of dipped bread.

Place another layer of the egg dipped bread and sprinkle a few fresh blueberries on top. Very slowly pour the remainder of the egg mixture over the top of the bread. Place plastic wrap over the baking dish and refrigerator for 3 hours or overnight before baking.

Pumpkin Spice Swirl French Toast Bake

A pumpkin spice swirl made into a delicious French toast bake. The recipe has a rich cream mixed with eggs and spices to make it very special!

Ingredients

  • 1 tablespoon butter
  • 8 large eggs
  • 4 cups Pumpkin Pie Spice Liquid Coffee Creamer
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • dash salt
  • 12 slices (Pepperidge Farm) Pumpkin Spice Swirl Bread, thick slice, limited edition
  • 1 cup fresh blueberries
  • confectioners sugar for garnish

Instructions

  1. Butter a 9 X 13 baking dish, using all the 1 tablespoon butter.
  2. In a mixing pitcher, mix the eggs, creamer, sugar, cinnamon, nutmeg and salt. Whip together until creamy.
  3. Dip 6 slices of the bread into the egg mix and lay it carefully into the buttered baking dish.
  4. Sprinkle the top of the bread with a few fresh blueberries.
  5. Dip the last 6 slices of the bread into the egg mix and carefully lay them on top of the first layer of bread and berries.
  6. Very slowly pour the remainder of the egg mixture over the top of the dipped bread.
  7. Sprinkle the top of the bread with a few fresh blueberries.
  8. Cover the baking dish with plastic wrap and refrigerator for 3 hours or overnight.
  9. Remove the plastic wrap and bake at 325 degrees for 60 minutes.
  10. Remove to a cooling rack and cool for 10 minutes.
  11. Garnish with a dusting confectioners' sugar.

Garnish Option:

Serve with maple syrup or whipped cream.
