We really enjoy a nice relaxed brunch especially  on the weekend. We love a good quiche to serve for our breakfast, lunch or dinner. This is one of my basic go-to quiche recipes. It is so versatile that I can add different herbs and meats as the seasons change. Our Ham and Cheese Quiche is just a great recipe to have on hand. It is easy, limited ingredients, and no waiting, just bake in the oven and it is ready to serve. Hope you enjoy the recipe as much as we do!

How To Make Ham and Cheese Quiche

We are starting with a 9 inch unbaked pie crust.

In a mixing pitcher, whisk together the eggs, fresh parsley, fresh thyme, flour, Dijon mustard, salt and pepper.

Sprinkle the cooked chopped ham and shallots on the bottom
 of the uncooked pie crust.

Whisk in the half-and-half with the egg mixture.

Sprinkle the cheese mixture on top of the
 chopped ham and shallot.

Very carefully pour the half and half mixture
 over the ham and cheese.

Bake in a 375 degree oven for 40 minutes 
or until the center is set. I like to use a crust protector, 
so my crust doesn't burn until the center is set.

Let the quiche cool on a cooling rack for
 at least 30 minutes before slicing to serve.
Garnish with fresh parsley and fresh thyme for serving.

Ham and Cheese Quiche

This a great recipe to have on hand. It is easy, limited ingredients, and no waiting, bake in the oven & it is ready to serve.

Ingredients

  • 1- 9 inch unbaked pie crust.
  • 2-1/2 cups cooked ham, medium chop
  • 2 shallot's, chopped fine
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4 large eggs
  • 2 tablespoons fresh chopped parsley, plus enough for garnish
  • 1 tablespoon fresh thyme leaves, plus enough for garnish
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1-1/2 tablespoons all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 cup half-and-half

Instructions

  1. Place and fit your pie crust to a 9 inch pie pan and crimp the edges.
  2. Sprinkle the chopped ham and shallots in the bottom of the pie crust. Mix the cheddar and Monterey Jack cheese together then sprinkle it on top of the ham and shallots.
  3. In a mixing pitcher whisk together the eggs, fresh parsley, fresh thyme, salt, pepper, flour and Dijon mustard. Last whisk in the half-and-half, then very carefully pour it over the ham and cheese mixture.
  4. Place the quiche on a baking sheet and bake in a 375 degree oven for 40 minutes or until the center is set.
  5. Let cool on a cooling rack for at least 30 minutes before slicing to serve. Garnish with fresh parsley and fresh thyme for serving.

Notes

I like to use a pastry shield around my crust to keep it from burning during the cooking process.
