Apple Butter Cake with Maple Frosting

One of the things that my husband and I have enjoyed since we were very young is Apple Butter. We love Apple Butter as a condiment on meat and the very best is Apple Butter and Biscuits. Since we love Apple Butter so much, why not put it in a cake and we did. It is frosted with a maple flavored butter cream frosting that is a perfect topping for this awesome cake. This cake is so moist is almost cuts like a pie and is just delicious and a recipe that we will make over and over. We love this cake and I am so happy to share it with all of you today!

Apple Butter Cake with Maple Frosting

Ingredients
2-1/2 cups all purpose flour
1/2 teaspoon baking soda
1-1/2 teaspoon baking powder
2 teaspoons apple pie spice
1 teaspoon cinnamon
dash salt
1-1/4 cups sugar
1/2 cup vegetable oil
2 eggs
1 cup apple butter
1 teaspoon vanilla extract
1/2 cup buttermilk
1 cup Gala Apples, peeled and diced
Baking Spray for The Baking Pans
For The Frosting
8 (ounces) softened cream cheese
1 stick butter, softened
3/4 teaspoon maple extract
1/2 teaspoon vanilla extract
Directions
In a mixing bowl, stir together the flour, baking soda, baking powder, apple pie spice, cinnamon and salt, mix well, and set aside.
In an electric mixing bowl, pour in the sugar, vegetable oil, eggs, and apple butter, mix together until smooth.
Add alternate portions of the flour mixture and the buttermilk until it is all incorporated and blended well, mix about 2 minutes.
Stir in the diced apples.
Pour the batter into 2- 9inch baking pans that have been sprayed with a baking oil and flour spray.
Bake at 350 degrees for 25 to 30 minutes,until the center will test clean.
Completely cool before frosting.
For The Frosting
In a mixing bowl mix together the softened cream cheese and butter until completely smooth. Add the maple and vanilla extract.
Add the confectioners sugar and mix until smooth.

  4. I love this cake, Miz Helen. It looks absolutely delicious. We used to get amazing Apple Butter in Waterloo County, Ontario where I grew up and I'd know I'd love it in this cake.   7. How did I miss this last year? Boy, does it look good, and I have a crisper full of fresh, local apples. My mother used to make a delicious apple cake with a lemon sauce, but alas, I cannot find her recipe.
